I found this book 25 years ago in a library. It was out of print then, so I photo-copied the entire book. I have been using it since, and every recipe is wonderful. I am glad the book is once again in print, so I can buy a copy. (Actually, I will buy several. This will make a great gift for someone.) Enjoy.
Rating: 2/5 - plagiarized and dumbed down The recipes are mostly plagiarized and cleverly edited by this author (unfortunately this happens frequently with cookbook authors). Rating: 5/5 - My favorite Greek cookbook I have cooked from Ms. Yianilos' book for thirty years, and continue to use it as a trusted friend for cooking for buffets, and small dinner parties, as well as for family dinners. The recipes are inventive, complex, and tasty. They do make more than the author suggests: if she says something serves four, it probably serves eight. But I would never give up my copy for anything!

Greek Cooking: Getting the Feel of Phyllo Dough
Adapted From: Cooking Around the World All-in-One For Dummies Almost anyone who has eaten Greek food is familiar with that wonderful Greek specialty spanakopita, or spinach pie, or the most renowned of Greek sweets, baklava (see the recipe later in this article). While one dish is savory and the other sweet, both are recognizable from their baked-up, golden, crispy appearance, a telltale sign that they're made from phyllo (or filo) dough. Phyllo (which means leaf in Greek) dough is finely rolled and stretched sheets of wheat dough. Paper-thin and almost translucent, the sheets are approximately 12 x 20 inches and are stacked, rolled, wrapped, and then frozen. Phyllo dough is readily available at most supermarkets and at Greek and Middle Eastern specialty food stores. Because the dough is already rolled and cut, phyllo is easy to work with when handled properly. Be aware, however, that the sheets of dough are so thin that they dry out quickly and can tear, leading to less than satisfactory results. With the small plate craze showing no sign of abating, it looks like meze will follow its cousin tapas into the national zeitgeist.
WHAT IS GREEK MEZE?
The word "meze" describes a form of socializing as much as a group of dishes. Drinking without eating is looked down upon in Greece. People gather in ouzeries in the early evening not just for drinks, but also for mezethes to tide them over until dinner at 10 or 11pm. Athens's hip bars are crowded until late at night, and the meze served there can be anything from a simple snack to a drawn-out social meal.

Anthotyro - There's a lot more to Greek cheese than feta, including this soft, mild variety that's similar to ricotta. Other popular Greek cheeses include Graviera, made from sheep's or cow's milk, depending on region; Kasseri, a mild cheese that's great for melting in creamy sauces and savory pies; Kefalotiri, a hard, sharp table or grating cheese that's floured and pan-fried to make saganaki; and Manooria, a mild sheep's milk variety similar to ricotta salata. When choosing feta, Greek cooking expert Diane Kochilas says "Go for Greek" if you want the flavor of authentic sheep's milk feta, rather than cow's milk varieties, which can be overly crumbly and salty. Kochilas recommends Mount Vikos cheeses, which are available in the Epicurious Shop.
Olives and olive oil
Ouzo - The classic meze drink, anise-flavored ouzo is one of many Mediterranean spirits (grappa being another) distilled from wine residuals, including pits, seeds, and skins. Like its cousins Ricard and Pernod, ouzo is flavored with anise, and served with water on the side, which turns the drink cloudy-white when added. Other meze potables include tsipouro (also known as Raki), similar to ouzo, and retsina, a strong-tasting white wine flavored with pine resin. Though considered an acquired taste by many, retsina is worth a try, particularly now that new, more sophisticated versions have begun to appear. According to Kochilas, retsina is one of the few wines that can stand up to garlicky mezethes.

In a colossal undertaking to publish the complete works of the ancient Greek philologists, Kaktos Publications recently completed the Athenian Deipnosofistes* edition. It is composed of 15 elegantly bound and easy to use volumes which, besides having the ancient Greek text, also has excellent translations of the text and valuable comments about the text. The Deipnosofistes, besides being a priceless treasure house of mental scenes of antiquity, is perhaps the oldest and most prominent written document depicting what the relevant issues were at that time in history. A Vegetable for All Seasons For years now the tomato has been very "famous" and its lovers enjoy it in many different ways. In the Mediterranean markets the tomato is now found year round. As would be expected, the growing of tomatoes in hothouses, mainly found in Northern Europe, means a loss in taste and aroma. Lastly, the "tomate en grappe" which is grown in Sicily is causing quite a stir. This is not a new variety of tomato, but has to do with the process used to cultivate the tomato. How We can Grow Tomatoes at Home It is very easy to grow tomatoes in our gardens or, if we want, on our balconies! The tomato seed should be planted from April on. Before planting the seeds they should be left to soak over night in water to soften. It is even easier to buy tomato plants and plant them in large flowerpots. The Cerise's, small yellow and orange tomato plants, are recommended. No matter what variety is bought, the first tomatoes to sprout will be a cause of much enthusiasm. If someone is interested in a rarer type of tomato, the varieties can be found in the English catalogue "Thompson and Morgan" who sell green tomatoes, tomate en grappe and giant tomatoes that weigh between 500gr and 1 kilo each! In the "Vilmorin" catalogue one will find the beefsteak tomato which is ideal for stuffing.
