Whole grain foods are healthy food choices
By Mary Schroeder, University of Minnesota Extension Service Nutrition experts advise you to eat at least three servings of whole grains a day. But what are whole grains, why are they good for me, and what can I do to eat more whole grains? Common types of whole grains include brown rice, oatmeal, popcorn, whole wheat and wild rice. Some of the less common types include buckwheat, millet, quinoa, whole grain corn or corn meal, and whole rye. Whole grain foods contain all three parts of the grain: the bran, the endosperm and the germ. The outer bran layer is full of fiber, B vitamins, 50 to 80 percent of the grain's minerals, and other phytochemcials. Phytochemicals are compounds in plants that may protect us from disease. The large endosperm portion is full of complex carbohydrates, protein and smaller amounts of B vitamins. The third part is the germ, which is full of B vitamins, vitamin E, trace minerals, healthful unsaturated fats and phytochemicals. If all three parts of the grain are present in a food, the food is considered a whole grain. If parts of the grain have been removed, the food is considered a refined grain. Whole grains have more nutritional value than refined grains. For example, 100 grams of whole wheat flour contain about 12 grams of fiber and 405 milligrams of potassium, compared to all-purpose white flour that contains about three grams of fiber and 107 milligrams of potassium.

OMAHA, Neb. - Looks like white bread. Tastes like it, too. But is it? It took scientists eight long years and millions of dollars to sneak whole grains into that spongy, yeasty icon of U.S. health-unconscious consumerism. Now that they've done it, food manufacturers have begun releasing a bevy of products they hope will get people to eat whole grains. The thinking was to get more health into the bread and other products people like. But in the process, they've created some confusion, even as the U.S. Food and Drug Administration is still trying to define whole grain products. ConAgra Foods Inc., one of the nation's largest food makers, spent at least eight years and several million dollars developing Ultragrain White Whole Wheat. The grain was bred for its properties and is not genetically modified, said Garth Neuffer, a spokesman for the Omaha, Neb.-based company. The company won't disclose its sales expectations for Ultragrain products. One year since its unveiling, Ultragrain is turning up in cookies, pasta, crackers and other products. These products come as the USDA's new food pyramid recommends people make whole grains at least half of their daily grain consumption.

    One year since its unveiling, Ultragrain is turning up in cookies, pasta, crackers and other products. Touting these products as whole grain is a marketing gimmick that could confuse well-meaning parents, said Dr. Fred Pescatore, a Manhattan internist who specializes in nutrition. Consumers know they want whole grains in their diets, said Larry Shiman, vice president of Opinion Dynamics Corp., a market research firm. Some 51 percent of those surveyed said eating whole grains is a high priority, he said. And consumers are more likely to embrace a whole-grain trend more than they did the meat-based Atkins Diet, Shiman said. He added the company behind the diet, Atkins Nutritionals, recently filed for bankruptcy.

    How grain dryers work
    Grain dryers operate under the same principle as a clothes dryer. Wet wheat in dryers is cooled as the moisture from the wheat evaporates into the air around it. As the wheat dries, the cooling effect decreases. As the moisture content approaches 14 percent, which is the desirable moisture level, the wheat becomes almost as hot as the air in the dryer. This is when damage is most likely to occur.
    Grain dryers at terminal elevators
    Drying is best when wheat moves constantly through a dryer against a current of hot air. Each kernel receives the same treatment and the wheat dries uniformly. These are the conditions in the large dryers at terminal elevators. In these dryers, wheat may be safely dried with air temperatures as high as 80 (176°F). The wheat is dried to a moisture content of 15 percent. As it cools, the final one percent of the moisture evaporates.
