COOKING TERMS.
Bill Poser at Language Log has an entry on cooking verbs, comparing the large variety available in English to the four of Japanese and the two (dry cooking versus steaming/boiling) of Carrier. This reminds me that I once tried to compare the semantic ranges of English and German cooking verbs and found they didn't match up at all well, but my dictionaries weren't as much help as they might have been, which brings up my standard complaint: bilingual dictionaries don't do food terms as well as they should. Savage them into quarters and, while they're still warm, splash-drop a top-tablespoon of vinaigrette".

One extreme example is red cabbage, taking 500 minutes at 80 C down to 5 minutes at 120 C (pressure cooker) Another example: Pasta. No hope under 90 C, 18 minutes at 90 C; 12 minutes at 100 C; 6 minutes at 120 C. This all fits very well with a famous equation called the Arrhenius Equaion, which describes the rate of any chemical reaction. The equation says: dx/dt = k x exp(-E/RT) where x - how much of the reaction has taken place (1=start; 0=finish) t - time k - pre-exponential factor E - activation energy R - gas constant T - temperature (in KELVIN!!) So we've got: rate of reaction (or rate that uncooked pasta is converted to cooked pasta, dx/dt) equals a constant (k) times the amount of uncooked pasta left (x) times an exponetial function of temperature, exp(-E/RT). And if you plug in k = 0.000018 and E/R = 5000, then you get exactly the same data as the pasta data above, and at 80'C the pasta takes 25-30 minutes. The upshot of all of this is that if you search for "Arrhenius constants" for cooking processes, you should find exactly the same data as the untranslated german book. I hope that's of some use.

The Germans are known for their rich and hearty cooking. Traditional German recipes are readily available and well known, but in a time of heightened concern for healthy eating habbits Germans are beginning to turn away from the traditonal meat and potatoes and trying out healthy alternatives. Wurst and Sauerkraut is what most people think of when they consider German cooking. Cooked sausages are readily avalible and can be bought at food stalls along the street (der Schnellimbiss), at other times sausages are eaten as a main course served with fries, potato salad, bread and of course sauerkraut. Sauerkraut is predominantly from the south and made from pickled cabbage.
