German Cooking - Cuisine of the Regions Delicacies from Baden-Württemberg With this issue of German News we will be starting a new series about the specialities and culinary delicacies from Germany, starting alphabetically with the Bundesland Baden-Württemberg. If somebody were asked to describe Germany, it would be rather easy to describe the sandy hills in the tiny islands in the North Sea, the flowering of the healther on the Lüneburg Heath in summer, the scenic mountains, lakes and forests, the magnificent palaces and castles, the splendid churches with world famous masterpieces in wood-carving, relief work and wallpaintings. But if then, the next question were to describe German cuisine, one would be at a loss to do so. Does Germany not have a speciality that one could call a „national dish"? disbelievers would ask. Of course, there is Sauerkraut, Frankfurter sausages, pease pudding, fried potatoes, one could enumerate a few more. But actually there is nothing that one could call „German cuisine", but there are mouth-watering delicacies in regional cooking. Therefore we want to introduce some of these specialities to our readers. Baden-Württemberg The delicacies of Baden-Württemberg are legend. People in the German „Musterländle" (translated it means „the model region") have become experts in producing the most fascinating culinary extravagancies from the most simple ingredients. Deep-rooted regional traditions whole-heartedly are mixed with influences from neighbouring countries. Most typical is the preference for sweet dish preparations in a flour base, called Mehlspeisen. Hand-made noodle variety, called Spätzle, is something that is a must on each and every table. These are not only served with meat preparations, but make also separate dishes when they are backed with cheese or lentils.

The German ladies who are married with Indians and other German women living in India like to cook some German/European dishes. But this is sometimes a difficult task as many ingredients are not available in the local market. As a self-help group the women started to collect recipes of German/European food which can be cooked in India with the items available locally. So they collected 162 recipies including soups, main dishes, sweets and cakes. They also included a few Indian dishes which are the favourite of Germans here. The director of SMS DEMAG sponsered the English translation, so that the book is now having the recipe on one page in English and on the opposite side in German.

Regional specialities feature strongly in traditional meals, whether it's Bavaria's Spanferkel suckling pig , Stuttgart's Maultaschen ravioli stuffed with meat , or Frankfurt green sauce made from nine fresh herbs. German meals tend to be quite hearty and meat-based, though today there are many international influences in German cooking. Bratwurst and other cooked sausages can be found in der Schnellimbiss takeaway food stalls , everywhere and can be eaten as either quick snacks or main meals. Portions are always large and come either served with bread rolls der Kartoffelsalat potato salad , or with Pommes frites chips Das Sauerkraut is another particular favourite that you'll find predominantly in the south. It's made from pickled cabbage and is served as a side dish with meat like das Eisbein pork leg , or die Rippchen ribs . This is not to be confused with der Sauerbraten , another traditional dish that is made by marinating a joint of roast beef in a sweet and sour marinade for two days. As Hamburg is a port city, its specialities are more connected with the sea. Some of its popular dishes include die Hamburger Aalsuppe lobster, eel and crayfish soup

Pork Schnitzel
Ingredients
  • 4 boneless pork cutlets or pork tenderloin, cut about 1/2-inch thick salt and black pepper, to taste 3/4 cup all-purpose flour 1 1/3 cups seasoned dried bread crumbs 1 egg 1 tablespoon milk or water 1/4 cup olive or vegetable oil
Method Pound each pork cutlet or tenderloin to 1/4-inch thickness using a meat tenderizing mallet. Sprinkle the pork with salt and pepper. Place the flour and dried bread crumbs in separate shallow bowls. Break the egg into another bowl and whisk in the milk or water. Dredge the pork in the flour, dip into the egg and milk mixture, then coat with the dried bread crumbs. Heat the oil over medium heat in a large non-stick skillet. Fry the schnitzel slowly, turning several times, until golden brown, about 10 minutes. Serves 4.

Regional Cuisine:
Although individually distinct, for the sake of simplicity you can put the sixteen German states into four broad geographical groupings. This region can easily be considered to be one of the truly great food centers of the world. More Michelin stars have been earned by Baden chefs then by any other region of Germany. In addition, every person will recognize the famous regional delicacies of Black Forest Cake (Schwarzwalder Torte) and Black Forest Ham (Schwarzwalder Schinken). Traditional specialties are based on this regions status as a fertile garden for many vegetables and a source of high quality wines. As one moves farther north these vegetables are used as a base of hearty soups. Farther south the cuisine shares more influences with the winegrowing traditions of France and Switzerland and shows more subtly and variation. Regional specialties include Spatzle, famous thick German noodles cooked in broth, Snail Chowder with Herbs (Badener Schneckensuepple), Veal and Spinach-Filled Pockets (Maultaschen) and Wine Stewed Beef Roast (Rheinischer Sauerbraten).
