Current Situation
Foodborne illness is a major health issue facing Americans. Between 6.5 million and 81 million cases of foodborne illness and as many 9,100 related deaths occur annually. Millions of illnesses and thousands of deaths in the United States can be traced to contaminated food. Illnesses from pathogenic bacteria appear to be increasing each year. The economic devastation of this disease is considerable, with an estimated $420 spent on direct medical costs and $7.3 billion attributed to lost productivity annually. Americans expect many things from their food supply. They want variety and quality; and they want nutritious, safe foods at a reasonable cost. The definition of good quality can be varied depending upon the type of food and the individual's food preference. Some of the important characteristics of quality include wholesomeness, freshness, nutritional value, texture, color, aroma and flavor. To many consumers, safe food means that there will be no danger from pathogenic microorganisms, naturally occurring toxins and other potentially harmful chemicals which may be deliberately added to foods. However, scientists generally agree that microorganisms pose a greater threat to human health than other sources of foodborne illnesses. Foods don't cause illness; bacteria and other pathogens do. However, raw foods of animal origin - meat, poultry, eggs, fish, shellfish - frequently are contaminated with bacteria common in the food chain. In other cases, healthy food handlers may contaminate food with bacteria common in the human body, or diseased food handlers may contaminate food with lesser common pathogens.

Professor of Foods and Nutrition Extension Food Safety Specialist
Dr. Andress has been a food safety specialist with the Georgia Cooperative Extension Service since 1994 where she develops, implements and evaluates Extension programs in food safety and quality, which include home food preservation. Dr. Andress provides statewide leadership for ServSafeâ foodhandler trainings delivered through the Extension Service in Georgia, provides foodservice assistance and guidance for personal care home providers, and shares leadership for Extension food preservation and consumer food safety education programs in the state. She also teaches FDNS 4640/6640, Food Sanitation and Safety, in the Department of Foods and Nutrition. Currently she is serving as Project Director for a USDA-funded National Center for Home Food Processing and Preservation, a multi-institutional research, education and extension endeavor.
Other background:
Dr. Andress served as National Program Leader for Food Science at the Extension Service, USDA, from 1991-1994. In this role, she also chaired the national Extension Food Safety and Quality Initiative, which provided special projects funding for food safety education throughout the land-grant university system. Prior to that, Dr. Andress was an Extension specialist at the University of Georgia and University of Florida. She was an Extension research associate in home food preservation at Penn State University for five years and co-authored the USDA Complete Guide to Home Canning. She began her career as an Extension home economist in Lawrence County, Pennsylvania, in 1978.

The recipients of the 2005 Walter Barnard Hill Awards and the Hill Distinguished Public Service and Outreach Fellow were announced by the Office of the Vice President for Public Service and Outreach on January 27. The winners were honored during a luncheon ceremony at the Georgia Center for Continuing Education as part of the annual Public Service and Outreach Conference. University president Michael Adams and provost Arnett Mace assisted vice president Art Dunning in distributing the awards.
“Each recipient is judged to have made contributions to the improvement of the quality of life in Georgia and elsewhere of an order that greatly exceeds the normal accomplishments of a productive faculty member,” said Art Dunning, vice president for public service and outreach.
Recipients are awarded a permanent salary increase and become eligible to be selected in subsequent years as a Hill Distinguished Public Service and Outreach Fellow. This fellowship is the highest award offered in public service and outreach and is similar to a distinguished professorship.
The awards are named for Chancellor Walter Barnard Hill, who led the University of Georgia from 1899 until 1905. Hill championed the idea that the university should be as active in the application of knowledge as it was in the instruction of students.
