    Reno, Nevada Problem/Need Education is one way to increase the consumption of fruits and vegetables. Research shows that those who think they should eat more fruits and vegetables are more likely to do so (Subar et al., 1992). Those who develop the habit of eating more fruits and vegetables early in life are more likely to continue those habits into adulthood (Subar et al., 1992). The 5-A-Day for Better Health Program is a national effort to increase Americans' fruit and vegetable consumption to five servings daily - one of the objectives of Healthy People 2000 (U.S. Department of Health and Human Services (DHHS), 1991). Program Development and Implementation Through partnerships with county school districts, school food services, retail supermarkets, and produce companies, the University of Nevada Cooperative Extension developed, implemented, and evaluated a 5-A-Day program in two Nevada middle schools with diverse student bodies from low socio-economic backgrounds were chosen since research has shown this audience has a higher incidence of chronic disease (DHHS, 1991).

    The processed fruit and vegetable industry in Canada produces canned, preserved and frozen fruit and vegetables, as well as fruit juices. Increasingly, the industry is also developing and marketing a wide range of value-added products. Thanks to technological advances in the processing of fruits and vegetables, consumers are able to enjoy the full flavour and nutritional value of fresh fruits or vegetables throughout the year. Many firms produce a variety of traditional value-added products, such as pickles, relishes, jams, soups, sauces and other items that incorporate a mix of vegetables or juices. In addition, the frozen food industry manufactures frozen prepared meals, such as frozen TV dinners, pizza and other entrees. The industry is always working to improve the handling of processed fruits and vegetables. For example, scientists at the Agriculture and Agri-Food Research Centre in Kentville, Nova Scotia, have developed technologies to give industry a shelf-stable, low-acid, fruit-based product with good sensory, safety and processing qualities. Many fruits and vegetables, such as blueberries, cherries and red onions, could go from the table to the medicine chest. Scientists at the Pacific Agri-Food Research Centre in Summerland, British Columbia, are looking at the antioxidant properties of anthocyanins, the pigments responsible for the reds, pinks and blues of many of our foods. Anthocyanins are able to bind readily with free radicals, rogue molecules implicated in the development of some cancers.

    Since the harvest period for many fruits and vegetables can be limited, FAO also provides information on the best methods for preserving produce (for example, drying, chemical processing and heat treatments) while retaining the maximum amount of nutrients.

    UNC News Services CHAPEL HILL Black Americans’ fruit and vegetable intake increased by 32 percent for each additional supermarket in the neighborhoods where they lived, according to a new University of North Carolina at Chapel Hill School of Public Health study. White Americans’ fruit and vegetable consumption increased by 11 percent with the presence of one or more supermarket in their neighborhoods, the study showed. "We don’t know why we saw a larger influence of supermarkets on the diets of black Americans compared to white Americans," said Dr. Kimberly Morland of the Mt. Sinai School of Medicine. "Based on our previous research showing a lack of private transportation in predominately black neighborhoods, we suspect that white Americans may have a larger geographic area in which to select places to patronize. "We believe these neighborhood differences may account in part for disparities in diet and illness."
