  • Return to the top VISITORS FOR LUNCH We are always happy to see a parent or grandparent come to eat with their child as a guest in the cafeteria. It is a special occasion. Visitors typically either purchase a hot, nutritious lunch from the cafeteria or bring a bag lunch from home. It is nice for students to see that grownups also eat nutritious lunches. We ask that you do not bring in soft drinks or "fast food" lunches to be fair to the other students. Soft drinks are not sold to students in the elementary and middle schools. (There are no vending machines, canned sodas, or ice cream machines.) Bottled water, milk and 100 percent fruit juice are available from vending machines in the middle schools.

Since most produce is considered "ready-to-eat," it is a prime vehicle for foodborne illness. Hence, it needs the utmost care and attention during preparation, including its washing. Since we use soap to remove germs from our hands, can we use soap when washing lettuce, cucumbers and tomatoes? The FDA says not to use any kind of hand soap or dish detergent when washing produce. Such soaps can leave behind residues, which will cause the produce to taste bad and may be harmful. Why is it even necessary to wash produce? Some fruits and vegetables are coated with a food safe wax to preserve their shelf life. Sometimes dirt and residues can get caught on this wax coating. For those concerned that water is not enough to get rid of the trapped dirt and residue, two manufacturers have introduced new products designed specifically to wash produce. The jury is still out on how effective these new produce-cleaning products are.

    Drying is the oldest method of preserving food. The early American settlers dried foods such as corn, apple slices, currants, grapes, and meat. Compared with other methods, drying is quite simple. In fact, you may already have most of the equipment on hand. Dried foods keep well because the moisture content is so low that spoilage organisms cannot grow. Drying will never replace canning and freezing because these methods do a better job of retaining the taste, appearance, and nutritive value of fresh food. But drying is an excellent way to preserve foods that can add variety to meals and provide delicious, nutritious snacks. One of the biggest advantages of dried foods is that they take much less storage space than canned or frozen foods. Recommended methods for canning and freezing have been determined by research and widespread experience. Home drying, however, does not have firmly established procedures. Food can be dried several ways, for example, by the sun if the air is hot and dry enough, or in an oven or dryer if the climate is humid. With the renewed interest in gardening and natural foods and because of the high cost of commercially dried products, drying foods at home is becoming popular again. Drying is not difficult, but it does take time and a lot of attention. Although there are different drying methods, the guidelines remain the same.

      What does GAP mean? What is the RI GAP program? The voluntary Rhode Island GAP Grower Certification Program is a joint effort of the Division of Agriculture, RI Department of Environmental Management, the University of Rhode Island Cooperative Extension Food Safety Education Program, and RI growers.
      The program begins with training for growers and their workers on the application of GAP food safety principles to the growing, harvesting, processing and transporting of fresh fruits and vegetables.
      Once a grower feels that they have met the RI GAP guidelines, a staff person from the RI Division of Agriculture visits the farm for a review of GAP practices. This audit confirms that the grower has successfully applied required GAP practices during growing, harvesting, processing and transporting of fresh fruits and vegetables.
