141. French Onion Soup
Presents a fast, basic recipe, at Lisa's cooking Cache.

FRENCH ONION SOUP
4 large onions, thinly sliced (I usually find 2 is enough)
4 Tbsps butter
4 10 oz Cans of beef broth (I just used Oxo cubes and water)
1/2 cup dry sherry (I don't use this at all)
2 tsps Worcestershire sauce
dash of pepper
6 slices french bread (toasted is best, but any bread will do)
3/4 cup parmesan cheese
1 to 2 cups grated mozza, greyere, cheese (whatever kind you like!)
Cook onions in butter til tender, but not brown. Add broth, sherry, worcestershire sauce and pepper and bring to a boil. Pour into individual ovenproof bowls. Top with french bread, parmesan and mozza cheese. Place under broiler and heat until cheese bubbles.
I've melted the cheese in the microwave, it doesn't get brown, but it's quick and still tastes delish! Also, add more worcestershire sauce if desired (we love the stuff) SUBMITTED BY KELL69 BEEF BEVERAGES BREAD MACHINE BREAKFAST ... SEARCH

143. Wilder's Famous French Onion Soup
Easy recipe for six servings, at Lisa's cooking Cache.

WILDER'S FAMOUS FRENCH ONION SOUP
3 tablespoons - Butter White Onion, sliced approx. 2 medium
4 1/2 cups Beef Bouillon
Worcestershire sauce (approx. 1/4 cup)
Salt and Pepper
Grated Cheese (a mix of Swiss and Monterey is yummy)
Heat butter; add onions; simmer about 10 minutes or until soft and lightly browned. Add bouillon; bring to boil, simmer 20 minutes Season to taste with salt, pepper and Worcestershire sauce. On top of each serving float a slice of sautéed French bread; sprinkle with grated cheese and pass around a bowl of additional cheese for your guests. Pour into earthenware or soup plates. I use eatable bread bowls with the centers taken out and lightly sprayed with butter and sprinkled with garlic salt, broiled for a few minutes and tossed onto the bowls. Makes about 6 servings

La Cuisine is an intimate (65 seat) restaurant located on the the 2nd floor away from vehicle or pedestrian traffic. The popularity of this restaurant stems from the preparation of comfortable french countryside cooking at affordable prices. The warm dijon plaster walls are adorned with a city scape of Paris, dimly illuminated by soft lighting.     Modern Mexican cooking is considered by culinary historians to be a fusion of three cuisines - indigenous, Spanish and French. This column has covered pre-Hispanic ingredients and techniques in the past, and last month focused on Mexican colonial-period cooking, characterized by the introduction of Spanish ingredients, notably animal products, citrus and other fruit, olives and olive oil, and Far Eastern spices, Spain's culinary legacy from the Arab world. The next important element in the evolution of modern Mexican gastronomy is the influence of French cooking, one that began surprisingly earlier than is generally believed Although culinary changes reached the New World slowly, continental cuisine was transformed from medieval - characterized by the heavy use of sugar and spices - to modern cuisine, in which the flavors are enhanced with salt and herbs, at about the turn of the seventeenth century. This style of cooking was dubbed nouvelle cuisine, a term which is actually over three hundred years old. However, it is evident from colonial Mexican kitchen manuals that, although many dishes were called
