The saucy and heavy dishes of the world's most famous cuisine were reserved for princes, not peasants. So forgo the foie gras and celebrate the true spirit of Bastille Day: Eat as the common man would food that is simple, fresh and filling. Bistro-type foods are more popular than ever and more cooks are writing of the pleasures of provincial cooking. Even chef Daniel Boulud of the lauded New York eatery "Daniel" is planning a book of rustic recipes for the home cook.

    Strongly traditional and slow to embrace influences from abroad, French cuisine can broadly be divided into three categories:
    • "Cuisine bourgeoise", which includes all the classic French dishes which are not (or no longer) specifically regional, and which have been adapted over the years to suit the taste of the affluent classes. This type of cooking includes the rich, cream-based sauces and somewhat complex cooking techniques that many people associate with French cuisine. At the 'top end' of this category is what is known as haute cuisine, a highly complex and refined approach to food preparation and kitchen management. "Cuisine du terroir", which covers regional specialities with a strong focus on quality local produce and peasant tradition.

    Liane C. Kuony died of a heart attack April 7. She was believed to be 90 years old. Any discussion of age was simply déclassé , much like omitting her "Madame" courtesy title in any reference to her name. She made her home in Fond du Lac, declaring it reminiscent of the French countryside of her youth. The Victorian-era home became the site for her Postilion Restaurant, the Postilion School of Culinary Arts, as well as her interior design business and the production of specialty retail items. Her fine foods drew rave reviews from food critics and national publications, including The New Yorker, Gourmet and Bon Appetit magazines. One of her longtime students, Mary Emory of Fox Point, recalled how she came to meet Kuony. Emory's husband, knowing that she loved French food, offered to send her to the Cordon Bleu in Paris.

    I am sorry that I did not mention Julia’s birthday earlier today. I will plead not guilty because I was misled by my husband into believing that Julia’s birthday was August 1 and I had already missed it. But as it turns out, August first is only Julia’s Birthday (Observed.) My bad. Also, I was a little woozy this morning from drinking the vodka gimlets I forgot to mention. Hey. It was a blackout. But Eric and I did celebrate Julia’s big day, with an improvised alfredo pasta containing her Solution for Canned Onions. I love that she gives this recipe because canned onions “are so useful in an emergency.” That emergency where you can’t buy onions?! I think if I’m in a situation where I can’t buy an onion, I’m going to have other things to worry about besides whether my canned onions taste “unpleasantly sweetish and overacidulated.” And then she gives a recipe that entails boiling the onions once, draining them, then simmering them for fifteen minutes in mushroom stock and butter with parsley, bay leaf and thyme. So she’s not talking about that emergency when you need onions instantly and just don’t have the time for that peeling and slicing nonsense.
