Authentic French cooking, therefore, like that of many other countries, is regional fare based on the traditions, geography, and climate of the area. French cooking can be divided into at least 12 different regions, each with its own distinct personality and traditions.

    Despite a common pan-gallic chauvinism, French cooking is not a monolith: it ranges from the olives and seafood of Provence to the butter and roasts of Tours, from the simple food of the bistro to the fanciful confections of the Tour d'Argent. However, it all shares a seriousness about food. Throughout the country , French cooking involves a large number of techniques, some extremely complicated, that serve as basics. Any cook will tell you that French food will not tolerate shortcuts in regard to these fundamentals. Because mastery of sauces or pastry doughs is the center of the culinary arts, recipes themselves remain classic and constant. In a way similar to Japanese cuisine , it is expected that even the simplest preparation be undertaken in the most careful manner, which means disregarding the amount of time involved. This is one reason why French cooking has always seemed so daunting on the other side of the Atlantic. Americans love nothing more than combining innovation with time-saving ; it is the particular genius of the United States , and it couldn't be more at odds with the French aesthetic.

    French Cooking Classes offers an unrivaled program of small classes taught by a master chef, excursions to local points of interest and cultural immersion amid beautiful scenery.
    This six-day program is led by chef-instructor Daniel Bonnot. Daniel has cooked in some of the world’s most famous kitchens, including the Savoy Hotel in London, several top restaurants in Paris and, currently, Bizou in New Orleans. He has received numerous awards and accolades for his culinary mastery. The program takes place in our beautifully restored 18th century stone Provencal farmouse. With each session limited to ten participants, you will receive plenty of individual attention during the three to five hours of cooking instruction per day. The program also provides numerous organized excursions to local points of interest, including a lavender distillery, an olive oil mill, the famous Nyons open-air market, a goat cheese farm and a wine cooperative, as well as some historical sites.     Good French cooking never really goes out of fashion. The heavy haute cuisine of days past has largely been shelved in favour of a lighter approach to cooking, but there's always been much more to French cooking than haute cuisine. Unlike Britain, France has proudly maintained its regional food traditions. In fact, it would be possible to argue that the ingredients and techniques used in each region are so different that there's not really such a thing as 'French' cooking at all. Ignoring political boundaries, French home cooks still divide their country into its old regional names. Each region's cuisine is based on its own produce and cooking styles and each makes a unique contribution to the country's culinary repertoire.

    If you want to make culinary legend Anne Willan happy, do not make her meal look as if it arrived via Western Union. Mei-Chun Jau / DMN Anne Willan, cookbook author and founder of the famed La Varenne cooking school in France, shows a chicken who's boss during a cooking class.
    The founder of France's famed La Varenne cooking school is weary of trendy presentations full of "dots and dashes — an indecipherable message in Morse code on the plate," in Ms. Willan's vivid description. She says this in a half-amused, half-ascerbic way, but she is perfectly serious. "It may look pretty on the plate," she says in her crisp, authoritative British accent, "but I object to food being purely decoration." There are several dining trends that Ms. Willan believes to be well past their sell-by dates: Tableside peppering, for example: "I'd like to see less freshly ground pepper from big mills."

    Day One
    Lessons are taught by Chef Albert Verschoor, who has a varied and interesting culinary background. Before becoming the chef and owner of restaurant Le Talleyrand, in Chalais Chef Albert worked as a business consultant in the food and chemical industries. He was trained by various top chefs in Amsterdam, New York and Boston. He has also organized and taught various management workshops. Later, he imported quality, regional French wines to the Netherlands and trained novice chefs. Albert has a professional, humoristic, hands-on approach to his courses that many people have highly valued.

    After lunch your final lesson will be the preparation of your dream dishes, followed by dinner.
