    • 1 can mushrooms 4 tablespoons butter 1 pound ground round 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1 tablespoon Worcestershire sauce 4 tablespoons Italian bread crumbs
    Saute mushrooms in butter. Add salt, pepper, garlic powder, and onion powder to the ground beef and mix thoroughly. Fashion into thin patties about 5 inches in diameter. Grill until desired doneness on the barbeque. Garnish with mushrooms, tomatoes, cheddar cheese and lettuce. Serve on a hamburger bun or kaiser roll. Sweet-Sour Barbecued Ribs
    • 1 1/4 cups ketchup 3/4 cup water 1/4 cup honey 2 tablespoons Worcestershire sauce 4 teaspoons lemon juice 1 small onion, chopped 1/2 teaspoon salt 1/2 teaspoon pepper 6 pounds back ribs

      Cook ribs over medium-low, indirect heat by banking the charcoal around the edges of a covered grill or roasting in a 300-350 degrees F. oven. Grill or roast ribs for 1-1/2 to 2 hours. You'll know the ribs are done when you can "wiggle" the bone somewhat away from the meat.

    Chef Andrew Zimmern offers ideas for making fantastic-tasting Fourth-of-July picnic favorites such as hamburgers, hot dogs and corn on the cob.
    • One timesaving tip for making a bunch of burgers to feed a crowd is to partially precook hamburgers in the oven. Lay the burger patties on a cookie sheet and bake at 350 degrees until they are partially done. Finish them off on the grill.

    • Save time by shaping burger patties before the big day. Patties can be placed on cookie sheets, covered with a piece of wax paper and kept in the freezer until time to grill (figure A) . There's no need to worry about freezer burn if they're only going to be in the freezer for one or two days. Remove burgers from the freezer and let them thaw completely before grilling.

    • For safety's sake, it's a good idea to cook hamburgers until they are medium-well to well done. Speed up the cooking time and make a juicier burger by using the "doughnut" technique. Make the patties fairly thin, then pinch a small hole in the center of each patty

    With the fourth of July fast approaching us, I am reminded of the celebrations of my early childhood in Texas where I eagerly awaited the firecrackers and the Barbecues. Now that, at least in most towns, firecrackers are illegal I can now only await the Barbecues -oh, we learn to adjust. Then as now my favorite part of barbecues was the dessert. Of course I always liked the ice creams, but to me the banana pudding with all the vanilla wafers and slices of banana was the true sign of a quality barbecue. Interesting that some 30 odd years later I still crave that dessert. I found myself planning a barbecue for this upcoming fourth and the first thing I penciled in was the dessert with the bananas. An interesting note with bananas is to buy the ones with the spots of brown. The banana is a starch as many of its less sweet varieties, namely the plaintain can attest. The fascinating point is that as a banana matures the starches convert into sugars. Therefore the browner the banana is the sweeter the fruit. Actually whenever I’m going to make banana bread, I go to the half-price section of the produce department in the back where the old spotty brown ones are. Though most people don’t want these, they have the best flavor and I will even buy and freeze them until I’m ready to cook. For the following dessert, only use the slightly spotty ones. These will have good sweetness and still be firm enough to hold up in the pudding. If you have a double boiler, use it for this recipe, if you don’t simply use a glass or metal bowl and place it over a bowl of boiling water-make sure that the bottom of the bowl is not touching the water.

    - by Leslie Glass S ummer is a time for leisure, for eating in the open air, for slowing down and grilling. Ha. Tell that to the dwellers of Chinatown, where there's no space on the sidewalks to sit outside. Tell that to April Woo and Mike Sanchez, two busy bosses in NYPD, who don't have time to go into the back yard in Astoria to grill or lounge or have picnics. Crime may be down, but this May and June in New York brought some very big cases including the infamous Wendy's shooting in the Bronx that left five people dead and two seriously injured and the hate crime destruction of church statues in the Bronx and Brooklyn. Both cases were solved, by the way.
    It's been a pressure cooker as usual. It's been hot. It's been cold and rainy. But mostly it's been busy. Here is the special treat April and Mike have planned for their Fourth of July celebration and the versions you can try at home.
