Author and cooking teacher Tori Ritchie demonstrates the following easy-to-make picnic recipes at the flagship store in the Time Warner Center in New York City. Stuffed Summer Sandwich If you prefer a vegetarian version of this portable sandwich, replace the ham with sliced mozzarella, Monterey jack cheese or grilled eggplant. The loaf can be covered in plastic wrap, refrigerated overnight and sliced just before serving. Ingredients: 2 large red bell peppers 1 round loaf of sourdough or coarse country bread 1 can pitted black olives, drained

1/2 tsp. roasted minced garlic

Fourth of July Fre sh Melon Platter Blackened Grilled Grouper or Salsa Burgers All American Potato Salad Fresh Tomato Salad Two-Bean Salad ... Old-Fashioned Blueberry Cobbler or Serves 6-8 (Recipes Below) - 20 Total Points (everything without melon) Blackened Grilled Grouper This dish is equally delicious when made with swordfish, fresh tuna, mahi mahi,
amberjack, orange roughy, or any other firm-fleshed fish.
Makes 9 Servings Ingredients 9 grouper steaks, 5 ounces each
Lemon wedges (garnish) Coating
1 medium yellow onion, cut in pieces
5 cloves garlic, peeled
1 Tbsp plus 1 1/2 tsp paprika
3/4 tsp ground dried thyme
3/4 tsp ground dried oregano
1/4 tsp ground cayenne pepper
1/4 tsp ground black pepper
1/4 tsp salt Place all of the coating ingredients in a food processor or blender, and process until finely ground. Set aside. Rinse the fish steaks and pat dry. Rub 2 tsp of the coating on each side of each steak. Set aside for 10 minutes. Grill the steaks over medium heat, covered, for about 5 minutes on each side, or until the meat is easily flaked with a fork. Garnish with the lemon wedges, and serve. POINTS: PER SERVING: 142 Calories, 1.8 g Fat, 0.6 g Fiber, 68 mg Cholesterol, 27 g Protein, 175 mg Sodium

The Fourth of July is the quintessential American holiday and since it is celebrated in the summer it's a great time to have a big family gathering. Since it's when Americans commemorate our nation's Day of Independence, be sure to prominently display your American flag. Whether your family gathering will be in the backyard, at the beach, or in the city, be sure to put our a great spread of food. What you might want to do is have everyone contribute something. Someone may bring wieners, hamburgers, and buns, others may choose to provide cookies, cakes or some other dessert, and still others are asked to bring the beverages. But if you want to whip up some specials for the big day, here are some of Emeril's suggestions. You can barbecue chicken or brisket long and slow over a good fire. You might also want to serve barbecue beans, garlic bread, and scalloped potatoes to go with whatever you choose as your main course. And if you have time, make a fun dessert in addition to the cakes and cookies. And hey, do as much as you can in advance so you can get out and enjoy visiting with everyone.

From The Stallion Store. Oooh Ahhh Chicken

1 cup catsup 1/4 cup firmly packed brown sugar 1/4 cup lemon juice 1 tablespoon Worcestershire sauce 2 teaspoons water 2 garlic cloves – crushed 1/2 teaspoon dry mustard 1/8 teaspoon hot sauce 1 teaspoon paprika 1 teaspoon pepper 1/2 teaspoon dry mustard 8 skinned boned chicken breast halves (4-ounce Vegetable cooking spray Combine first 8 ingredients in a 1-quart measure; stir well. Cover with wax paper; microwave at HIGH 3 minutes. Set aside. Combine paprika and next 3 ingredients; sprinkle over both sides of chicken breast halves, and set aside. Coat grill rack with cooking spray, and place on grill over medium-hot coals. Place chicken on rack; cook 10 minutes on each side or until done, basting occasionally with catsup mixture.

    FREE PRESS TEST KITCHEN DIRECTOR Spare ribs or baby backs? Ask rib aficionados which cut is the best and you'll likely get a slew of different answers. But most would agree that a Fourth of July celebration isn't much without tender and juicy, lip-smackin' barbecued ribs. According to the most recent Weber GrillWatch Survey, the approaching holiday is the hottest time for cookouts, with some 87% of Americans firing up the grill. At the family-owned Ronnie's Quality Meats at Gratiot Central Market, Tommy Bedway boasts that they sell more ribs than anyone else in the city. That's debatable, but one thing is certain: This week, they'll sell a lot of ribs. "It's not a big deal for us to sell around 40,000 pounds of pork ribs this July Fourth holiday week, and about 10,000 pounds of the pork baby back ribs," says Bedway, who co-owns the market with his father, Ronnie. If you're in the market for ribs for this holiday, be sure you know what you're buying. Bedway says a lot of folks get the styles of ribs mixed up, and they also have questions about cooking techniques.
