How did IUFoST come about?
The feasibility of establishing an international organization of food scientists and technologists dedicated to the nutritional needs of the people of the world was informally explored during the First International Congress of Food Science and Technology held in London in 1962. The President of the Congress was Lord Rank, a flour miller among other things, and in his presidential message he said: "If the potentialities of ... food science and technology are to ... culminate in the peoples of the world receiving a sufficiency of food that is ... appealing and nutritionally adequate, then there must be international collaboration."

1.1 Mission and emphases of the department Food Science activity at Cornell, including undergraduate instruction, graduate work through the PhD level, extension work, and faculty research, are coordinated by the Institute of Food Science. This program is designed for students who are employed in the food processing industries. It extends over six part-time years of study, and leads to the award of the degree of Bachelor of Science (Technology). Students are required to complete an approved program of industrial training of not less than twelve months prior to the award of the degree. Industrial training should normally be undertaken concurrently with attendance in the program, but with the approval of the Head of Department may be completed after completion of the prescribed program of study.
The program covers the same subject matter as the first three years of the full-time program: 3060. For the first two years students follow a common program in which general biology is taken, and thereafter specialise in the biological sciences, which are fundamental to the study of food science and technology. The courses of Stages 4, 5 and 6 may be available only in daytime classes, and substantial daytime release from industry may be required. Students who have completed the requirements of this program and have qualified for the award of the degree of Bachelor of Science (Technology) may proceed to the award of the degree of Bachelor of Science by attending for one full-time year and completing the courses listed in Year 4 of the full-time program. Students desiring to proceed to the award of a BSc degree must apply to the Head of the Department not later than 31 December of the year in which the sixth stage is completed.

Education Standards for Degrees in Food Science
The Institute of Food Technologists first established minimum standards for undergraduate curricula in food science in 1966, and over the years, they have evolved significantly. IFT reviews the minimum standards for approval of food science programs about every ten years. The major changes in the most recent revision (1992) were the addition of a capstone course requirement, a statistics requirement, and an emphasis on development of success skills (oral and written communication, critical thinking, and computer skills) within the curriculum. Despite these changes, complaints about the minimum standards have arisen in the past few years for several reasons. Food science departments did not like the rigid nature of the requirements and the manner in which they were implemented. Perhaps more important, employers were questioning whether graduates truly had the skills necessary to start their careers in the food industry. In response to these pressures, IFT's Executive Committee formed a task force in 1998 "to review and recommend outcome-based guidelines as compared to minimum standards to inspire excellence in food science education." Thus, the Executive Committee decided that future education guidelines would be based on learning outcomes and not solely on a rigorously specified curriculum with predetermined course content.

  • Grade point average (gpa) of 70% of maximum of scale. Students with a gpa between 65 and 70% can apply, but should provide in the letter of motivation, or in special statement, additional information why application may be possible. Reasons may be : relevant work experience, high gpa for thesis or research work, increasing gpa during the years, illness during one part of the previous study etc. Students with gpa below 65% are not eligible.

    The Major Program
    Food science applies chemical, physical, biological, engineering, and social sciences to processing, preservation, development, packaging, storage, evaluation, identity and utilization of foods. The Program. Students majoring in food science spend the first two years of study developing the scientific and general background necessary for upper division study. The science courses include chemistry, biology, physics, and mathematics. General background is provided by courses in the social science/humanities area and by optional courses in introductory food science. At the upper division level, students take courses in nutrition, food microbiology, food chemistry, food analysis, food commodities, food processing, and food engineering, and may choose to specialize in one of five career-oriented options. Students enrolled in the program are eligible for various scholarships, including scholarships from the Institute of Food Technologists. Career Alternatives.
