Scholarship to support minority students pursuing careers in food science, agriculture
    Date: Jan. 30, 1995
Editor: D'Lyn Ford, (505) 646-6528, dlford@nmsu.edu LAS CRUCES New Mexico State University's College of Agriculture and Home Economics received $60,000 for a minority scholarship program from the U.S. Department of Agriculture. Funding for the Fabian Garcia Multicultural Scholars Program was announced Jan. 27. The scholarships, named after a pioneering agricultural researcher at NMSU, will provide $5,750 annually for four years to each of three students preparing for careers in food science or agriculture. Fabian Garcia was the nation's first Hispanic director of an Agricultural Experiment Station. During his tenure from 1913 to 1945, he introduced the first commercial varieties of chile and made significant contributions in cotton, pecan and onion research. Garcia was a member of the first graduating class of New Mexico College of Agriculture and Mechanic Arts (later NMSU).

What is Food Science? Food Science applies fundamental scientific principles to the research, development, manufacture, packaging, storage, and marketing of food products. Have you ever wondered?
  • How an ear of corn becomes a corn flake? What is the difference between good and bad bacteria in the food you eat? How Gatorade became the drink of athletes? Why you cry when you chop an onion? What makes Jell-O wiggly?
You’ll learn the answers to these questions when you become a Food Science major at Cal Poly. Our applied, laboratory-based courses, taught in a food processing pilot plant, are designed to educate you about functional components of foods, food safety, sensory evaluation, quality assurance, new product development, food chemistry, food processing and engineering, and much more. Outside the classroom, an abundance of summer work experiences and internships will enable you to put Cal Poly’s learn-by-doing experience into practice. Career opportunities for Food Science graduates are as diverse as the products on supermarket shelves.
