National Center for Food Safety and Technology The National Center for Food Safety and Technology (NCFST) in Chicago , Illinois , is a research consortium among the FDA Center for Food Safety and Applied Nutrition (CFSAN), Illinois Institute of Technology (IIT) and the food industry. Established 17 years ago, the NCFST incorporates the FDA Division of Food Packaging and Processing and was set up by FDA to form a link with industry for its expertise in food technology. The NCFST is the only center where industry can work collaboratively on projects with FDA scientists on food safety and technology research. Membership in the NCFST allows companies to gain an early insight into emerging food safety issues from the CFSAN perspective to assess the safety of new technologies which may be important for innovation. This early collaboration with FDA may also facilitate speed to market through the regulatory process. NCFST Highlights In The News

    The food safety minor, major, graduate and graduate certificate programs are interdisciplinary courses of study. They are oriented toward the single issue of food safety, an area of concern around the world; the current target of tremendous interest, effort and spending nationwide; and an area in which shortages of expertise are already manifest. These programs present students from a variety of backgrounds with an opportunity to augment their education and careers with a novel, integrated food safety curriculum designed to provide them with the necessary knowledge and requisite problem-solving skills to thrive in tomorrow's food-related workplace. The undergraduate and the graduate programs are offered through the Great Plains Institute of Food Safety.. The Program Back to fact sheet index The Curriculum The food safety educational programs have at their core, courses in food safety, Safe 450/650, Safe 464/664, Safe 470/670 and Safe 484/684 which are only offered during the summer semester. For the minor, an additional 5 hours must come from approved electives in the Colleges of Agriculture, Food Systems, and Natural Resources; Arts, Humanities and Social Sciences; or Human Development and Education. A sample curriculum for the major is provided. Students interested in post-graduate studies in food safety are encouraged to contact the director.

Safe food is food that is free from physical, chemical or microbial contaminants that may cause us harm. Of these hazards, microorganisms present the highest food safety burden to consumers. Microorganisms are ubiquitous, opportunistic and adept at developing resistance to environmental stresses, and can grow in many foods and conditions. The nation's key food regulator, Food Standards Australia and New Zealand, has calculated that Australia experiences up to 4.2 million cases of food-borne illness per year (i.e. 11,500 cases per day) at an annual cost of $2.6 billion. The social consequences of food-borne disease include both temporary and serious chronic illness and even death. The production of safe food is a critical priority for Australia's food industry. Indeed, food safety is a condition of entry into, and survival in, the market place. Consumers have 'zero tolerance' to perceived breaches of food safety by food product manufacturers, sometimes even rejecting related brands or products after an incident.

    Research Highlights The Colleges of Agricultural, Environmental, and Consumer Sciences, and of Veterinary Medicine, at the University of Illinois are working to address issues in food safety from a systems perspective. The UIUC is uniquely placed to integrate analysis across the components of the food system, from production through processing, packaging, warehousing, distribution, retailing, and into the consumer household, and thus, UIUC research addresses all points in the food chain from "farm-to-fork." Researchers are developing cost-effective technologies that will enable everyone to enjoy the benefits of a healthful diet of safe and wholesome food without worry. Farm Level Control of Food borne Pathogens UIUC veterinary scientists, animal scientists, and food microbiologists are identifying the origin and control of microbial pathogens in farm animals that can pose a threat to human health. Working with Illinois pork producers, these researchers will be able to identify farm management practices that lower the incidence and numbers of food pathogens found in animals and therefore reduce the risk of pathogens entering meat later during processing.
