The Agency carries out or commissions extensive scientific research and survey work to ensure that our advice to the public is based on the best and most up-to-date food science. We are advised in our work by independent scientific committees. Keeping up with science The Food Standards Agency needs to keep abreast of scientific developments and maintain active channels of communication with leading researchers in several scientific disciplines. For example, the Agency needs to know how new scientific thinking in microbiology, toxicology, or molecular biology can influence our assessment of risks to health from factors as diverse as campylobacter, BSE and dioxins. We also need to establish a clear understanding of where the uncertainties lie in our knowledge and be aware of conflicting views among scientists, and we need to establish how changes in food technology and supply practices may affect our understanding of risks. Expert advice The Agency employs in-house experts to work on the priority food safety issues and also to keep an eye on the horizon for new developments. Some of these individuals are recognised nationally and internationally as experts in their own field. Nevertheless, for any issue where there is debate amongst scientists about the actual level of risk to health, the Agency usually seeks an opinion from independent experts. This can be done on an ad hoc basis, but normally an issue will be considered by one of a number of standing advisory committees on food safety matters.

Principal Investigator: Kathryn Boor The Food Safety Laboratory was established by the Department of Food Science as a biosecurity level 2 laboratory to facilitate research on foodborne pathogens. There is increasing evidence that what we eat affects our health and quality of life. Dietary factors are implicated in four of the ten major causes of death in the United States. Obesity is now considered endemic in the US and is linked to the increasing prevalence of diabetes. Concerns about the safety of the food supply have increased and there is a major federal initiative to improve food safety. Food security is a growing problem for limited-resource families. The Department of Nutrition and Food Sciences addresses these and related issues through our teaching, research and outreach programs.

Links Food Safety and Cheese Institute of Food Science and Technology Position Statement In mold-ripened cheeses the pH falls during the fermentation by lactic acid bacteria then rises due to the activity of the mold; in soft mold-ripened cheeses this rise can allow the multiplication of bacteria, including pathogens, to very high numbers. In order to ensure the production of safe cheese the following measures are important:
    (1) the raw milk should be collected and maintained in good hygienic conditions
    (2) the raw milk should be refrigerated to minimize multiplication of bacteria
    (3) the milk should undergo a full pasteurization
    (4) after pasteurization good conditions of hygiene should be maintained during production of the cheese to prevent contamination.
Microbiological tests on finished cheeses have an important place in quality control, but these tests cannot ensure the microbiological safety of the cheese (Desenclos et al. 1996; Rambling, 1996). In view of all these considerations the Institute of Food Science and Technology considers that it is important to draw attention to the real hazards to human health due to pathogenic bacteria in raw milk cheeses, particularly of the soft and semi-soft type, and to encourage the use of pasteurized milk in the production of cheeses.

Food Safety Research
Microorganisms are of significance in food systems because they have both adverse and beneficial effects - they can cause spoilage and illness, but they are also used to produce a variety of foods through fermentation.
At Virginia Tech, food microbiology research is concerned with basic and applied studies of foodborne pathogens, microbiological spoilage, prevention and control of contamination during processing, thermal and non-thermal processing, and method development to detect microorganisms and their toxins.
Recently, food safety research has focused on control of major foodborne pathogens in primary agriculture production and processing through the application of new and traditional processing technologies, antimicrobials, sanitation, HACCP based strategies and analytical methodology.

Safe Food Handler Program
The Food Safety Works Safe Food Handler Program was developed with funding received through the Cooperative State Research, Education and Extension Service (CSREES) of the U.S. Department of Agriculture's National Food Safety and Quality Initiative Program. It is appropriate for use by Extension educators, health department sanitarians, teachers, food service managers and others to train a wide variety of audiences who may benefit from gaining basic safe food handling knowledge and skills. Possible avenues include Work Force or other job-training programs, high schools, retail or institutional food establishments, culinary schools, youth and adult drug/alcohol rehabilitation facilities, group homes, child care facilities and various Cooperative Extension programs, such as nutrition classes, 4-H, master gardener, food preservation and county fair volunteer groups.
Program Information:
  • Training Length: The program can be taught in 1 to 3 hours, depending on the number of activities included.

Food Authority Director-General George Davey has been awarded the 2005 Australian Institute of Food Science and Technology (AIFST) Award of Merit for his outstanding contribution to the food sector spanning more than 30 years.
The AIFST Award of Merit, the Institute’s highest award, acknowledges significant achievement within food science and technology across research, industry and education.
George, who has been at the helm of the Food Authority since its inception in April 2004, received the award at the opening ceremony of the AIFST Annual Convention at the Sydney Convention and Exhibition Centre on Monday July 11.
AIFST president Professor Paul Baumgartner cited George’s “longstanding and valued contributions to the Institute and his advancement of food safety, regulation, policy and food standards within Australia.”
