Let’s start by looking at food allergy. Food allergy is usually easy to recognise. An allergy to a food gives rise to symptoms very quickly, generally within minutes of eating or even touching the food. The symptoms are often severe, and may even be life-threatening. The kinds of symptoms that might appear include asthma, vomiting, diarrhoea, eczema, urticaria (hives), rhinorrheaa (nasal drip), angio-oedema (swelling of areas of the skin) and in extreme cases, anaphylactic shock (total collapse). Food allergies are usually due to the protein component of the offending food. For some reason some of the food protein is absorbed from the intestine intact, instead of being digested as most proteins are. Once the intact protein is in the blood stream, it is recognised as a foreign protein to the body, or in other words as an antigen . The body produces antibodies (usually immunoglobulin E) to this antigen, and the immunoglobulin binds the antigen to form an

A food allergy is an immune system response to a food that the body mistakenly believes is harmful. Once the immune system decides that a particular food is harmful, it creates specific antibodies to it. Sephen Levine, Ph. D. Have you ever eaten something - a bowl of ice cream, a piece of cheese, an orange - and felt hungrier than before? Do you have urges for a particular food and find it hard to satisfy your craving unless you eat that particular food? If the answer is "yes" to either of these questions, then you have a food allergy. If you are also fat, then chances are your food allergy is making you fat. Food sensitivities may cause allergic people to crave those foods to which they are allergic. Just as a drug addict suffers withdrawal symptoms when the drug is withdrawn, allergic people experience discomfort when they lose access to a particular food. Obese people can testify to the overwhelming power of food allergy addiction. Compulsive eaters crave and continue to eat those allergenic foods to which they are addicted day after day. The obese person has no idea that his daily food cravings or eating habits are based on a physiological need to stop withdrawal symptoms caused by food allergy addiction. The phenomenon of simultaneous allergy and addiction to both foods and chemicals is now well accepted by doctors specializing in the diagnosis and treatment of allergies. These specialists, known as clinical ecologists, believe that many chronic health problems, such as migraine, fatigue, depression, and arthritis are caused by allergies to foods and chemicals and affect approximately one-third of the population living in industrialized countries.

Cow's milk contains many proteins that are antigenic - they excite immune responses. Patients of all ages with gastrointestinal tract disease may have difficulty digesting these proteins and may absorb them as antigens. Milk problems may be attributed to lactose intolerance and the milk-sugar enzyme, lactase, may be prescribed. Milk allergy is a protein problem and is not improved by changing the milk sugar - often the diagnosis of "lactose intolerance" is incomplete or wrong and symptoms persist with only lactose exclusion. Often, infant milk allergy is thought to be a specific and limited condition which children "outgrow." This idea can be misleading many children continue to have chronic symptoms from milk, although the original problem may disappear, the pattern of illness changes and confuses parents and physicians. At the very least, we can say that some children have an allergic diathesis that persists and evolves with different manifestations. In a follow-up study of children with immediate anaphylactic reactions to cows milk as infants, a prolonged pattern of hypersensitivity was noted with the development of multiple food and inhalant allergies, multiple hospitalizations and frequent episodes of drug reactions. These children may continue to manifest hypersensitivity and grow into adults with immune-mediated diseases. Although there are few studies which focus on milk-induced disease in adults, there is enough suggestive evidence to suspect that milk proteins play a major role in human disease at all ages.
