The Auburn University Marine Extension and Research Center (AUMERC), located in Mobile, Alabama on the shores of Mobile Bay and a short distance from the Gulf of Mexico, is part of the Auburn University Department of Fisheries and Allied Aquacultures . The Marine Center combines research programs of the Alabama Agricultural Experiment Station and extension programs of the Alabama Cooperative Extension System and the Mississippi-Alabama Sea Grant Consortium to help ensure that Alabama's marine resources remain renewable. AUMERC is actively involved with local governments, agencies, schools and organizations for whom we provide unbiased information to assist citizens and decision-makers when making choices about the future of coastal resources. AUMERC staff operates and maintains the Auburn University Shellfish Laboratory (AUSL) located on Dauphin Island.

Super Squid - Squid Recipes
Squid can make a superb meal provided it is fresh and cooked correctly. Old overcooked squid can be chewier than bubble gum and more suitable for tyre retreads than the table.
Plain Gorgeous Squid Rings
(serves 4) This is great as a snack or an entree. 1 squid, cut into rings
2 eggs
1 cup dried breadcrumbs
2-3 tablespoons of olive oil
Freshly ground black pepper (to taste) Method Place the flour in a plastic bag, add the squid rings and, holding the top of the bag tightly closed, shake the contents. Break the eggs into a small mixing bowl, add pepper and beat. Dust off the excess flour from the rings, dip them in the beaten egg and roll in breadcrumbs. Place them on a plate and refrigerate for 15 minutes (to set the breadcrumbs). Drop the rings onto a couple of layers of absorbent kitchen towel, to remove excess oil. Serve quickly, piping hot, with quarters of lemon to squeeze on top.
Stir Fried Squid with Herbs and Spinach
(serves 4) This little beauty comes courtesy of the Victorian Fishing Industry Federation and is excellent with rice or noodles. The combination of sesame and olive oil used for cooking would probably suit the previous recipe as well.

September 21, 2005 10:14 AM Central to protect our rivers and fish, to help preserve Lake Superior and its bounty, to learn more about the resources we enjoy and foster discussion, research and sound fisheries management practices, to educate anglers and the public about all these things are the tasks the LSSA has taken upon its shoulders. Issues too important to leave to chance or the vagaries of bureaucracies and politics. To protect and improve the cold water fishery of the Lake Superior region and to bring various groups of anglers together in an atmosphere of friendship so they can work for their and the resources common good. To these ends we coordinate volunteer efforts, in cooperation with local Fishery Biologists, on various conservation projects in the Lake Superior region. To see some of the projects we have done and others that we are presently working on check out our conservation projects page.

The results are in! And they're troubling. A recent study led by Oceana and the Mercury Policy Project suggests that a typical grocery shopper has a 50% chance of buying swordfish with mercury levels considered unsafe by the FDA.
