Karelian rye-crusted pastries with egg butter
Filling 2 cups water
1 cup uncooked rice
2 cups milk
salt Crust 1/2 cup water
1 teaspoon salt
1 cup rye flour
1/4 cup all-purpose flour Baste 1/2 cup butter melted Egg Butter 1/2 cup butter at room temperature
2 hard-boiled egg, chopped
pinch freshly ground white pepper (optional)
pinchd ground ginger (optional) For the Filling In a saucepan combine the water and rice. Bring to a boil.
Stir, cover, and cook over low heat for 20 minutes, stirring occasionally. Add the milk, cover, and continue cooking until the milk is completely absorbed and the rice is soft and creamy. Season with salt. Preheat oven to 500 degrees F. Line a baking sheet with parchment paper. To prepare the pastry, in a medium-sized bowl, combine the water, salt, and rye and white flours to make a stiff dough. Shape the dough into a log and cut into 16 parts. Shape eah part into a round. On a lightly floured board, roll out each round into a 6-inch circle. Spread about 3 tablespoons of filling evenly on each round. Fold two opposite edges of the pastry over the filling and crimp the edges of the dough toward the center to make an oval-shaped pastry, allowing about 1/2-inch of the crust to overlay the filling and leaving the center of the filling exposed. Place on the prepared baking sheet. In a small bowl, stir together the melted butter and hot milk and brush on the pastries. Bake for 10 to 15 minutes, brushing once during baking, until the pastries are golden on the edges. Reove from the oven and brush again.

This time it will be held on Sunday, 17th April, starting at 1.30 p.m. and going on till around 8 p.m. (13:30 - 20:00). The teacher of the course will be, as earlier, Eeva-Liisa Raittila, who is a teacher of home economics by profession. The course will be a one-day course. The course fee is only 5 euros, including the food eaten on the course and the recipes in English and Finnish, which you will get home with you.

Ruled by Sweden from the 12th to the 19th centuries and by Russia from 1809, Finland finally won its independence in 1917. During World War II, it was able to successfully defend its freedom and fend off invasions by the Soviet Union and Germany. In the subsequent half century, the Finns have made a remarkable transformation from a farm/forest economy to a diversified modern industrial economy; per capita income is now on par with Western Europe. As a member of the European Union, Finland was the only Nordic state to join the euro system at its initiation in January 1999.

RECIPE INGREDIENTS
1/2 cup dry bread crumbs
1/2 cup milk
2/3 pound ground top round beef 1/3 pound ground pork 1 teaspoon dried thyme , crushed 1 medium clove garlic , minced 1 small onion (about 4 ounces), grated 1 large egg , lightly beaten 2 tablespoons oil 1/2 cup water Lingonberry or cranberry relish RECIPE METHOD Mix the bread crumbs and milk together in a medium-size bowl. Set aside for 15 minutes to allow the bread crumbs to absorb the liquid. In a separate bowl, combine the ground meats, thyme, garlic, and grated onion. After the meat mixture is combined, form a well in the center of the meat. Pour the beaten egg in the well. Using a fork, mix the bread crumbs into the egg. With your hands, mix all the ingredients together until just combined; don't overwork the meat or the meatballs will be dense. For ease in forming the balls, chill the mixture for 30 minutes. To form the meat balls, dip your hands into water, then roll the meat into balls about 1 1/2 inch in diameter. This is a soft dough, so don't worry of the meatballs are not perfectly round. Heat in a large skillet, add the oil, and then add the meatballs to the skillet. Sear the meatballs over medium to high heat for about 3 to 4 minutes. When the meatballs are evenly browned on all sides, add the water to the pan and continue cooking over low heat, shaking the pan occasionally, for 10 minutes, or until the meat is cooked through. Serve warm or at room temperature, with a lingonberry or cranberry relish.

Helsingin Sanomat poll: Cooking favourite profession among Finnish youth

The profession of cook was the narrow favourite among prospective future careers in a poll taken among Finnish ninth graders who are completing their comprehensive school this year.
In the poll, which was commissioned by Helsingin Sanomat and conducted by Suomen Gallup, the schoolchildren were asked to choose one or more professions from among 70 that they might seriously consider training for. Cooking was popular among both girls and boys; one in five respondents said that they were interested in the profession. Next in line came the professions of youth worker, police officer, photographer, and lawyer. There were sharp differences between the genders. The top ten professions for girls included those of youth worker, child care specialist, photographer, cosmetologist, psychologist, teacher, hairdresser, flight attendant, artist, and waitress. Favourites for boys included computer expert, engineer, police officer, cook, lawyer, metal worker, military officer, and carpenter. The least favourite professions among the 15-year-olds were those of dental assistant and postal worker.

My grandmother was Finnish and used to bake bread on a regular basis. I was only 7 years old the last time I saw her, but as I knead the Finnish rye bread dough, I can see her in her kitchen making bread. I want to make everything in the book. Joulukinkku is the star of the Finnish Christmas meal. Its preparation is time consuming, but the results are well worth the trouble. No other ham in the world tastes quite as good as the Finnish joulukinkku, prepared as directed here. For busy people, baking a ham in foil will do just fine, but it just doesn't quite taste the same . . . 1 raw shank-in ham, 4-6 kg (9-13 lbs)
3 Tbs salt
2 Tbs sugar 5 l (1.1 gal) water
1/2 l (2 c) course salt 250 g (2 c) sugar water rye flour 1 Tbs mustard 3 Tbs bread crumbs 1 Tbs sugar Rub the shank with the salt and sugar. Bring to boil the water, salt and sugar. Skim off foam and let cool. Place the shank in the brine and leave to marinate for 2 weeks. , for 3 hours. Remove the rye crust. Baste the ham with mustard/breadcrumb/sugar mixture and quickly brown. Store the ham under the rye crust.

    To the left is the current map of our country. Note that Finland also owns the island of Bornholm Svalbard Islands in the Arctic Sea, the Aleutian Islands on North Pacific Ocean, the islands of Kiribati Line Islands , and Society Islands in Oceania, and a share of Antarctic continent , which are not shown on this map. First thing to know: Finland is not part of Soviet Union, although Russia is a neighbor - so are Sweden and Norway. Only the northernmost Finland is covered by glaciers, and polar bears are not common in the southern part of the country. Reindeer and lapps also live only in the northern part of the land. Even if Finland is not part of Russia, you will still see a lot of russians around. They sell cheap vodka, cigarettes, pirate CDs, videos, DVDs, clothes, and lots of other things, including certain services, at large parking lots in the cities of Southern Finland. You can always trust these honest Russian folk, who sell the products of their country to earn some Finnish marks.
