FINNISH MUSHROOMS Finland is mushroom picker's paradise, yet only a fraction of the hundreds of edible wild mushroom species growing throughout the Finnish forests is picked for consumption. Most Finns have traditionally thought all mushrooms to be "food fit only for cows", except those living in eastern Finland, near the border to Russia, where mushrooms have been a valued delicacy for centuries. Fortunately more and more Finns are starting to appreciate mushrooms and the various delicious dishes prepared of them. Used on their own or mixed with cultivated mushrooms, wild mushrooms make an indispensable ingredient in the Nordic cuisine. Collecting and handling mushrooms The Finnish mushroom season extends roughly from early May to late November. Most of the best edible mushrooms are collected from late summer to early autumn. Mushrooms mainly grow in forests, but they can also be found in gardens, parks and roadsides or on fields, pastures and lawns. But since many mushrooms absorb heavy metals (led, mercury, cadmium, etc ) and can store radioactive elements, they shouldn't be collected near heavily trafficked roads, highways, freeways, industrial areas, city centres or other polluted areas.

Porgankondushi" For the second time more than a thousand people gathered on 17 August 2003 in the historical village of Pogrankondushi on the annual Military-Historical Festival "Karelian Borders". The place for the Festival was not chosen by chance. The village of Pogrankondushi is situated along the perspective international route "The Blue Highway" and possesses the rich war and historical heritage, connected with relations among Russia, Sweden and Finland within different periods of time. You can see boundary stones , indicating the frontier between Sweden and Russia in 1618 as well as the frontier between the USSR and Finland (1917-1940), the concrete defences (the end of the 1930-ties), the Memorial to the Soviet soldiers, fallen during the World War II. The spectators became the witnesses of re-enacting of two battles: the Karelian and the Novgorodian warriors against the Swedish Vikings (XIII century); and the detachments of the Red Army against the Finnish Army (1941). These re-enactings were played by the members of the Amateur Military-Historical clubs from Petrozavodsk and St.Petersburg. More than 100 "soldiers" took part in the "battle". The splendid knightly armour, original military uniform and weapon, fire-technical effects and impressive battle scenes made the historical interpretation look real.

An essential feature of the Finnish Easter is the traditional Easter dessert mämmi. At least as essential is talking about its to say the least extraordinary appearance. There are anecdotes, legends, jokes. Every Easter people at the dinner table wonder how foreigners would react to mämmi. Professor of Sensory Food Science Hely Tuorila has studied these reactions. Sensory food science is carried out at the Department of Food Technology. The department is part of a unit to be launched under the collective name Viikki Food Science, thus giving a joint profile to the Food Science and Nutrition studied in three departments of the Faculty of Agriculture and Forestry on theViikki campus, ca. 8 km away from the centre of the City of Helsinki. Professor Tuorila has studied consumers experiences of the healthiness and taste of food, and the possible conflict between them. She also wrote her dissertation on this subject. A sabbatical year at a US Army research laboratory directed her interest towards unfamiliar foods, the impact of information, and consumer reactions. "During the Second World War leading psychologists and social psychologists were employed by the US Army laboratory to study the acceptance of foods. During long periods of field warfare it was important that soldiers ate properly and had enough to drink. Food went to waste in large amounts, however, and complaints of bad food were frequent," says Tuorila, describing the background of the laboratory, which is located near Boston. The laboratory has a strong research tradition concerning what food is acceptable and why. Different ethnic groups enjoy different foods; what is liked by one group is rejected by another. Thus the same foods are eaten by a wide variety of people.

Athletics chief 'switched from Paris to London'

Lamine Diack (Nick Potts/PA) The London bid convinced one of Paris's most influential supporters to switch sides and attracted the backing of two Finnish International Olympic Committee members, it has emerged. Sources have indicated to Times Online that Lamine Diack, the Francophone, Paris-educated Senegalese who is the head of the IAAF, the world athletics federation, switched from voting for Paris in the first ballot, and ended up supporting London in the decisive final rounds. M Diack had awarded London the right to stage the athletics world championships in 2003 and 2005, only reluctantly withdrawing the event from Britain when the Government withdrew financial backing to build a stadium at Pickett's Lock in north-east London. Today M Diack said in Singapore: "I would like to congratulate London. London's presentation was excellent, and this was a race with only one winner. The IAAF is pleased that London will host these Games in 2012 because Great Britain has always been a great country for sport and particularly our sport of athletics.

Could Finnish cookery gibe swing IOC vote?

Perhaps Jacques Chirac was just trying to be polite to his host when he dismissed Finnish cooking as the worst in the world on a visit to the Russian enclave of Kaliningrad this week. After all, there's nothing that the Finns can cook that the Russians cannot cook even worse. NI_MPU('middle'); Even so, it is a quip that could cost France dear when the 100-plus voting members of the International Olympic Committee have to choose tomorrow between Paris, London, Madrid, New York and Moscow to host the 2012 Summer Games. Despite its small population, Finland has two IOC members: the former yachtsman Peter Tallberg, and Jari Kurri, an ice hockey star who won the Stanley Cup five times as Wayne Gretzky's linemate at the Edmonton Oilers. Unlike the IOC members from France, Britain, Spain, the United States and Russia, both Mr Tallberg and Mr Kurri will be voting from round one. Between them, the pair represented their country at no less than seven Olympic Games and they may not be best pleased by M Chirac's decision to single out Finland's national cuisine as the worst on the planet.

The main factor influencing Finland's climate is the country's geographical position between the 60th and 70th northern parallels in the Eurasian continent's coastal zone, which shows characteristics of both a maritime and a continental climate, depending on the direction of air flow. The mean temperature in Finland is several degrees (as much as 10°C in winter) higher than that of other areas in these latitudes, e.g. Siberia and south Greenland. The temperature is raised by the Baltic Sea, inland waters and, above all, by air flows from the Atlantic, which are warmed by the Gulf Stream. When westerly winds prevail, the weather is warm and clear in most of the country due to the 'föhn' phenomenon caused by the Keel range. Despite the moderating effect of the ocean, the Asian continental climate also extends to Finland at times, manifesting itself as severe cold in winter and extreme heat in summer. Since Finland is located in the zone of prevailing westerlies where tropical and polar air masses meet, weather types can change quite rapidly, particularly in winter. The systems known to affect Finnish weather are the low-pressure system usually found near Iceland and the high-pressure systems in Siberia and the Azores. The position and strength of these systems vary, and any one of them can dominate the weather for a considerable time.

Presentation First of all some information about this so badly know country: Finland Geography Its territory represents two third of France whereas its population is only 5.2 M inhabitants. The landscape is shared between forests and lakes and it does not meet very sharp relief, execpted at some of its russian borders. This border line is represented by a 5 km board frank zone. Other neighbors of Finland are Norway in the north and Sweden which faces its shore in front of the Botnia Gulf. Helsinki is the capital. This last one faces Tallinn (capital of Estonia) through the baltic sea. Lapland covers the whole north part of the country. The population is very scared but the city of Santa Claus is there : Rovaniemi (on the polar circle). The geographical loaction of Finland confers a particular climate to this country. The summer is soft and they are days withouy night whereas the winter plunges the population in the almost complete night ("nights without days")... with temperatures like -20°C. Nevetheless thoses extreme conditions don't affect so much the activities of Finns who have reached a prefect adaptation. The econnomy of the country is primarily due to the development of telecommunications (ex : Nokia); however the wood and paper industry remains their second source of incomes. In fact a kind of "reconversion" occured after a deep crisis around the 90s and since 1995 the econnomy has a premanent growth. But graduate and qualified human resources are missing.

A Finnish member of the European Commission took a swipe at Jacques Chirac on Wednesday, linking London's success in winning the 2012 Olympics to the French President's derogatory comments on British and Finnish cooking. "After President Chirac's badly informed views on the British and Finnish cuisine, I feel free to congratulate London as a European city for the venue of the Olympic Games for 2012," Reuters reports Olli Rehn as telling the European Parliament, to laughter. "I love France, but it's not always easy," Rehn, the commissioner responsible for enlargement of the European Union, added in French. "You can't trust people who cook as badly as that," the French daily reported Chirac as saying of the British. "After Finland, it's the country with the worst food." He should perhaps have reflected on Charles De Gaulle's lament that it was "impossible to govern a nation with 250 cheeses". Helsinki hosted the Games in 1952 and was not a contender. Paris has been the venue twice, and London had the last laugh when it beat Paris on Wednesday for the right to host the Games.
