Finnish Fare The Finnish diet combines traditional country fare and upper class cuisine with modern continental style cooking. Spices have been adopted from both East and West. Finns appreciate fine cuisine, but consume it in moderation. They believe gastronomic delights and healthy habits go hand in hand. Although traditional foods such as sausage are still popular, today they are consumed with a concentration on more meat and less fat. A tradition of functional, healthy ingredients continues. Among these is rye, which has been scientifically demonstrated to improve well-being. Finns, especially young adults, are health conscious. Most Finns prefer to prepare everything from scratch, but will settle for convenience foods on occasion. In comparison, Finns eat much less fast food than Americans. In Finland, the main family meal is a full breakfast. Porridges are held in high regard, and many families also go for muesli, bran, cereals, yogurt, milk, and bread - a must at most tables. A Finnish breakfast is likely to resemble an American lunch! Finland is a world leader in coffee consumption statistics, but tea is gaining ground. In addition to water, many drink milk, buttermilk or beer with their meals, while a small but growing group has discovered a love for wine.

Caraway, Celery, Chives, Cinnamon, Cloves, Garlic, Ginger, Horseradish, Leeks, Mustard, Nutmeg, Onion and Thyme would complete their herb garden.
Finland, squeezed between Sweden and Russia, stretches northward, a phalanx of forests. Its foods are those that grow in humus, in shadowed nooks, in beds of moss, or swim in any of the many lakes. For more than 600 years the Finns lived under the Swedish crown, then 100 years under the Russian czars. As a result Finnish cooking is a melange, an exciting blend of influences from both West and East.
With a third of Finland within the Arctic Circle, the seasons affect the life style and diet of its people. Winters are extremely cold, with long nights from mid-November to the first of February. The summer growing season, though mostly daylight, is very short. The Finns see food as a gift from nature and are resourceful in raising, preserving, and preparing foods so they still have a fresh natural taste.

Starter Bergen fish soup This soup is made from pale -young pollack. The fish is usually served separately with melted butter and potatoes but may be cut into bite sized pieces and added to the soup, which is then considered the main course. About 3 lb young pollack or other fish that make good stock, for example mackerel, flounder or perch
3 pints of water
1 cup (250 ml) milk 5 tbsp flour
2 carrots
1 parsley root salt, pepper
Approx. ½ Cup (100 mI) thick sour cream or crème fraiche
1 tbsp chopped chives
METHOD
  • Clean, fillet and wash the fish. Remove the gills from the head and scrub head and back- bone free of blood. Put the head and bones in a roomy kettle and pour over cold water. Bring to boil and skim. Let the stock simmer uncovered for 20 minutes. If it cooks too long it will taste like glue. Strain the stock. Bring stock to a boil. Whisk flour and milk together and add the stock, stirring constantly. Cut the fish into cubes and poach them in the stock for 5 minutes. Clean carrots and parsley root and slice thin or dice. Cook them tender in very little water and add to the soup. Add salt and pep- per to taste and stir in the sour cream just be- fore serving. Sprinkle with chopped chives and serve piping hot. Formerly it was customary to serve pickled purslane or pumpkin in this soup.

Finland’s location between East and West is reflected in the country’s history, culture and arts. Finland became a part of Sweden in the 13th century. In the period from 1809 to 1917 Finland was a self-governing Grand Duchy under Russian rule. Finland proclaimed independence in 1917. In the Second World War Finland fought against the Soviet Union, maintained its independence and was never occupied. Finland is a western parliamentary democracy. The parliament consists of one chamber with 200 members. The members are elected for a four-year term by direct popular vote under a system of proportional representation. The current president is Mrs Tarja Halonen, the first female president in Finland. Finland became a member state of the European Union on the 1st of January 1995 and took over the EU – Presidency from July 1999 until December 1999. Before the Second World War Finland had a predominantly agricultural economy. Today Finland is a highly industrialised country. Service industries offer the most jobs. The main exports are paper, metal and high-tech industries. The monetary unit is the Euro. (1 Euro = 0.9 USD) There has been a complete freedom of religion in Finland since 1923. There are two national churches in Finland, the Lutheran and the Orthodox churches. The Evangelical Lutheran Church is the country’s largest denomination as ninety per cent of the population is baptised as Lutherans and one per cent as Orthodox. There are also Catholic, Jewish and Islamic congregations as well as numerous smaller religious communities.

Oh, and despite the fact that an al Qaeda cell took credit for the mass-murders, the MSM is now reporting as news that al Qaeda may have been involved. Brilliant. MSNBC Meanwhile, officials have continued to expand their search to include the possibility that there was a link between the four suicide bombers and al-Qaida. A police official in Faisalabad, speaking on condition of anonymity, told Reuters Friday that "security agencies have picked up four people. They were taken to an undisclosed location, but we were not involved in this operation." On a serious note, Pakistan is our ally in the war on terror. Not because they are a democracy, but because they are not. If the Afghanistan invasion taught the Pakistani state one thing it was that cooperation with the U.S. against al Qaeda is the safe route to survival. Almond potato
    (Solanum tuberosum) Almond potatoes are a special northern variety of potatoes grown in the Nordic countries. The Finnish variety, called Lapin Puikula , has been cultivated for centuries in Lapland, northern Finland. Almond potatoes are harvested late in the autumn. Along with the Italian Parma ham , the French Camembert cheese , the Greek Kalamata olives etc , the product name Lapin Puikula has been granted the Protected Designation of Origin -label, the " PDO ", which is given by the European Union to regional foods in order to protect them from any usurpation or imitation.
