Why this forum? I am starting and maintaining this forum as a place where people living a low-fat lifestyle can exchange ideas, cooking tips and recipes, and to provide people interested in living a low-fat lifestyle with the tools they will need and perhaps some inspiration. When I searched the net looking for low-fat recipes, I found that most are vegetarian. We eat vegetarian frequently, but we also eat meat. There are now quite a few other sites on the net where you can find low-fat recipes. Most are listed on my Links page. I have learned a lot the last few years about low-fat cooking techniques, how to eat low-fat, and have discovered some very good low-fat products. I also have an extensive library of low-fat recipes. Sugar-Free Butter Pecan Cookies
ingredients: 3 cups sugar free biscuit mix 1/3 cup pecan pieces 1 cup pitted dates 2 egg whites 1/3 cup warm water 2 teaspoons vanilla 1/2 cup butter fruit-sweetened jam pecan halves (optional) instructions: Preheat oven to 350 degrees. Use a blender or food processor to chop pecan pieces until finely ground. Sift biscuit mix, and stir in the pecans. Set aside. Use blender or food processor to purée dates, gradually adding egg whites and warm water. Beat several minutes until creamy. Melt butter, and then stir in date cream and vanilla. Fold liquid ingredients into biscuit mix. Stir only until blended. On an ungreased cookie sheet, form dough into cookies 1/4" thickness by 2" diameter. Press a thumb print into the middle of each. Decorate each cookie with 1/4 teaspoon of jam and/or a pecan half. Bake at 350 degrees for 7-10 minutes until touches of light brown can be seen. Makes 3 dozen cookies.
SUGAR FREE PUMPKIN PIE
1 (16 oz.) can pumpkin 1 1/2 c. skim milk 2 eggs 1/2 c. bisquick mix 20 to 22 pkts. Equal bran sweetener 1/4 tsp. ground cloves 1 tsp. cinnamon 2 tsp. vanilla Grease a 9 inch pie plate or a 6 x 10 inch container. Beat eggs and add pumpkin, spices, biscuit mix and sweetener mix well. Microwave on half power until thoroughly heated, stirring frequently. Pour into plate and microwave on half power 20 to 30 minutes or until set. May need to shield edges with foil to prevent over cooking. You will need a turn table for this. Don't substitute any other sweetener in this pie.

Low-Fat Techniques for Easter and Passover Cooking
When purchasing meat, buy only the leanest cuts of beef, pork, lamb, and veal. Ask your butcher to help with your selections. Trim all visible fat from the meat before cooking. Fish is a good low-fat option to meat. The higher fat fish (bluefish, mackerel, salmon, tuna, etc.) are good sources of Omega-3 oils which medical experts claim may be a defense against some health problems.
Roast meats and poultry on a rack to allow fat to drip away.
As long as you do not eat the skin of roasted poultry, you won't be getting any extra fat. The skin acts as a flavor-sealing envelope, keeping the flesh moist. We like to tuck herbs between the skin and the flesh of roasted chicken and turkey to heighten the flavor. Use dry herb and/or spice mixtures to rub over and into food before grilling it. This works well with meat, poultry, fish, vegetables, and even fruit. There's no oil or fat involved just great flavor. Experiment with blends using different amounts of these herbs/spices to cook around the world (note there's no salt)). These are great for your Easter or Passover lamb or turkey. Here are some guidelines to get you started:

I love this casserole, but it is very high in fat and sodium. I have tried lightening it with fat-free sour cream and fat-free yogurt, but I'm not sure what else I can do. Can you help? Thanks for any help. Dear Jennifer: This was a different version of a broccoli-and-cheese casserole, and it was very good, but it wasn't worth all that fat!
Luckily, you can make this just as yummy without all the fat. I omitted the noodles and seasoning pack entirely; it seems like maybe they were added to soak up some of the puddles of fat that collected while it cooked. They were barely detectable, and since they are fried, they come with added fat.
The seasoning pack also increased the amount of sodium. When I made it with fat-free yogurt, it had a pronounced tang.
I substituted fat-free sour cream, and it was more mild, like the original. I found that 6 cups is about 1 pound of broccoli, so a bag of frozen broccoli is perfect. BROCCOLI CASSEROLE 1/2 cup mayonnaise
1/2 cup plain yogurt
1 1/4 cup shredded sharp cheddar cheese
1/3 cup blue cheese dressing
2 eggs
1/2 teaspoon salt
1 1/2 teaspoons freshly ground black pepper Flavor pack from ramen noodles 6 cups broccoli, peeled stems and heads, chopped and blanched in salted water
