Fat-free Cabbage Casserole
Fat-free Cabbage Casserole
Ingredients 1 head (small) cabbage, shredded or chopped fine
1 jar (large) favorite spaghetti sauce (or make your own)
1 cup rice (I use white, but I'm sure brown would work)
1 cup water
1 cup sliced mushrooms (other vegetables would work too)
Directions In a dry, nonstick skillet fry rice until it's brown in color. Put
half in the bottom of a large casserole. Layer half of shredded cabbage on
top of it.
Mix water and spaghetti sauce and pour half of it over cabbage.
Spread half of mushrooms over this. Then repeat layers. Bake for about an hour at 350º F. Recipe contributed by Rosemary! Peer Review Status: Internally Peer Reviewed By law, foods containing less than half a gram of fat per serving are considered fat-free. But when choosing foods advertised as fat-free, it's important to consider the standard serving size when it's listed on food labels. Food amounts formerly listed as fat-free, such as a teaspoon of fat-free salad dressing, will be shown to contain a significant percentage of fat calories when eaten in a typical amount. And most of the fat-free foods in the supermarket don't come with labels. That's because they are found in the fresh produce department. Nearly all fruits and vegetables, with the exception of avocados, are fat-free or nearly so at normal serving sizes. And even fresh foods will soon have their nutrition information posted, according to U.S. labeling laws. As for other fat-free foods, a one-half-cup serving of most legumes, including beans, peas and lentils, whether dried or fresh, is fat-free. Skim milk and any product made from skim milk, such as nonfat yogurt and skim milk cheese, are also fat- free. Some tasty fat-free snacks include the following:

"Milk consumption is on the upswing," said Terri Myers-Verason, director of nutrition services at the Dairy Council of Arizona in Tempe. Milk is packed with lots of nutrients - calcium, vitamin D, vitamin A, protein, riboflavin and potassium. Don't believe the hype: Milk is not chock-full of calories. "A glass of fat-free (skim) milk has less calories than an apple," Myers-Verason said. Drinking milk isn't the only way to enjoy dairy foods. Milk keeps company with butter, cream, yogurt and cheese. Generally, milk products are good seven to 10 days after the sell-by date stamped on the container. This rule applies to milk, butter, yogurt, cheese and cream. Of course, milk products should be refrigerated at 40 degrees or less. CHANGE IN LABELING You probably have noticed the milk labels in the supermarket changed recently. In November 1996, the Food and Drug Administration approved the milk industry's request to change milk labeling. This makes it easier for you to figure out what you're drinking, Myers-Verason said.

HEALTH DEPARTMENT ASKS RESTAURATEURS AND FOOD SUPPLIERS TO VOLUNTARILY MAKE AN OIL CHANGE AND ELIMINATE ARTIFICIAL TRANS FAT Trans Fat Contributes to Heart Disease, Which is New York City’s Leading Cause of Death NEW YORK CITY – August 10, 2005 – The New York City Department of Health and Mental Hygiene (DOHMH) today asked City restaurateurs and food suppliers to voluntarily make an oil change by eliminating partially hydrogenated vegetable oils from the kitchen. Partially hydrogenated vegetable oils have been chemically modified and contain relatively high levels of trans fat, which significantly increases risk of heart disease, the City’s top cause of death. Commercial vegetable oils used by restaurants for cooking, frying, and baking often contain trans fat, as do many margarines, shortening, and pre-fried foods, baked goods and snack foods. DOHMH is announcing this new educational initiative following recently released federal dietary guidelines, which recommend that consumers keep their trans fat intake as low as possible. While many nutrition labels already indicate trans fat content, the federal Food and Drug Administration (FDA) is requiring that trans fat content be listed on all nutrition labels starting January 1, 2006.

If you abide by it, you practically can't go wrong. ``Do Not Over Cook Your Fish" That is it. I told you it was simple but it is by far the most common mistake. When it is done it is done, anything beyond done is damage! Remember when it comes to cooking any kind of fish, less is better. It is very easy to tell when fish is done. All you have to do is break a piece in half and see if it has cooked all the way through. You can tell by the color change. Fish is the easiest of all meats to tell when it is done because of this. If you have thick pieces, you can watch the color change on the side travel to the middle. Flip and watch the fish cook through the opposite side. You are done when it reaches the middle and it is the same color all the way through. Do not give it an extra minute or two for good measure. If you batter the fish before cooking, you will have to sacrifice a piece to test by breaking it in half to check it. Time it so you will know how long to cook the rest. This won't take long. Fish cooks very fast and high heat is fine. I usually use the test piece, as an appetizer for myself because I just can't wait. This way when you serve it on a platter every piece is perfect. Presentation scores high for any meal or so I've been told!
