Trying to Lose Weight?
OK, so you want to lose a few pounds. That doesn't mean you have to stop drinking milk. Actually, that would be just plain wrong; fat free skim and 1% low fat are low in fat and don't have a lot of calories. And milk's mosaic of nutrients helps your body in all sorts of ways. Even on a diet, it's important to get three glasses of milk a day for the vitamins and minerals your body needs. Trim fat, not nutrients. Fat free skim milk has only 80 calories per 8 fl oz serving and absolutely no fat - and all the nutrients found in whole milk. 1% low fat milk has only 2.5 grams of fat per 8 fl oz serving. A plain bagel has about two-and-a-half times the calories of one glass of fat free skim milk. Diet Tips:
Don't delay, start at breakfast with an icy cold glass of fat free skim or 1% low fat milk - it tastes great and is perfect for the "I'm not hungry in the morning" type.
Instead of coffee, order a cup of steamed fat free skim or 1% low fat milk with foam. Shake on cinnamon, nutmeg, vanilla powder or presweetened cocoa.

With this newest addition to their 99% fat-free cookbook series, best-selling authors Barry Bluestein and Kevin Morrissey present their version of America's favorite cuisine. They broke new ground with The 99% Fat-Free Cookbook by proving that tasty, sophisticated, and virtually fat-free meals could be made without resorting to artificial ingredients. With 99% Fat-Free Appetizers and Desserts, they applied those same principles to two of the most popular and potentially fat-laden courses of any meal. In 99% Fat-Free Meals in 30 Minutes, they conquered the time factor. Now, with 99% Fat-Free Italian Cooking, they bring their expertise to bear on one of America's favorite cuisines. While Italian food may, for some, be synonymous with olive oil and cheese, it is also famous for its use of healthy grains, pasta, and rice. Bluestein and Morrissey have conquered polenta, tamed risotto, and made peace with pasta, but they also include a full range of 99% fat-free meats, poultry, and fish, with dishes ranging from Seafood Salad to Sausage Calzones to Veal and Couscous-Stuffed Red Peppers to Chicken Piccata to Tuscan Stew. Nor do they forget those delicious Italian desserts, such as Chocolate Tiramisù.

Diabetic-Lifestyle offers recipes, menus, medical updates, entertaining - practical information enhances life while managing diabetes on a daily basis. - Home An Old-Fashioned Way to Cook Fat-Free Recently my sister-in-law, who happens to also have diabetes, visited me for a couple of weeks while I was recuperating after surgery. Since she's a fabulous, innovative cook I was delighted when she announced she'd be doing kitchen duty, preparing and serving all of my meals. To my surprise the first thing she did was to unearth my 20-year-old cast-iron skillet and once satisfied that I'd properly kept it well seasoned, went on to prepare some of the most delicious meals without using an ounce of fat in cooking crispy fish fillets, blackened sea scallops and chicken breasts, "fried" sweet potatoes and other crisp-cooked vegetables-all in the cast-iron skillet. I'd long forgotten that a seasoned cast-iron pan offers a nonstick surface for fat-free cooking. You can even finish off the cooking in a hot oven (just be careful of the hot, hot handle). If you don't own a cast-iron skillet, it's well worth the time and monetary investment. You can find skillets for sale right here on the Net and at cookshops everywhere. Or, you can scour the tag and yard sales for one that might look as if it's seen better days. Not to fret! We'll tell you how to get that new or very old one into shape so that you can enjoy a lifetime of fat-free cooking with your cast-iron pan. In fact, you can pass it on to your children and grandchildren.

december 2001 Diabetic-Lifestyle Cooking Tips features useful ways to cook with more flavor, using less fat, salt, and sugar. Diabetic-Lifestyle offers recipes, menus, medical updates, entertaining - practical information enhances life while managing diabetes on a daily basis. - Home Lower Fat Holiday Cooking It's important that we as diabetics control our fat intake to 30% or less of our daily calories. This is particularly hard to do during the holidays when we're wanting to feed our families traditional dishes of the season-most from times when fat was not considered to be that important. Why is it so today? For one thing, we've of a generation that gets less exercise than our forefathers who had to work the fields from before dawn to after dusk. And we now know the role that fat plays in the health of the heart and other body organs, possibly leading to severe complications which when added to diabetes can literally kill us. Past are the days of eating unlimited fat in the form of fudge, butter cookies, fruit cake, and other foods loaded with butter, but that doesn't mean that you're left with nothing but dull, flavorless food. Food is only food and yes, foods high in fat can taste good going down, but is it worth it in the long run? We don't think so. Instead, we cook lower fat all year long and especially during the holidays. Here are some tips. You'll not only save considerable calories, but lots of fat grams (especially saturated fat grams) and cholesterol.

Those tasty add-ons - like salad dressing, gravy, butter or margarine, cream cheese, or sour cream - can add a lot of extra calories to the food you prepare, and your body tends to store extra calories as fat. It can be tough to maintain a healthy weight if your meals contain high-fat foods such as cheese, whole milk, nuts, and certain fatty meats, or if you use fats and oils while you cook. Luckily, there are low-fat choices available at the supermarket.
* Try fat-free salad dressing instead of regular dressing, or use plain vinegar or lemon juice on your greens.
* Try fat-free or "lite" cream cheese.
* Try fat-free sour cream or low-fat plain yogurt in place of regular sour cream.
* Try an egg substitute instead of fresh eggs.
* Try jelly, honey, applesauce, or pureed prunes in your baked goods instead of butter or margarine. Your choice of cooking method can make a big difference in the amount of fat you consume. Bake, broil, steam, boil, microwave or barbecue instead of frying. If you use non-stick cookware, you won't have to add butter or margarine. Or you can try fat-free cooking sprays. Many come in several varieties to enhance the flavor of foods.

"FAT-FREE SNACKS COMING SOON" CINCINNATI, February 10, 1998
  • In test markets, these snacks have been a big hit - more than 28 million servings sold. If people in these markets had chosen to eat regular chips instead, they would have consumed more than two billion calories and 285 tons of fat.
  • NEW COOKING OIL Olean is made starting from soybean or cottonseed oil. It's processed in a special way, creating an oil that looks, cooks and tastes like ordinary fat, but isn't broken down by the body. As a result, Olean adds no fat or calories to foods. A one-ounce serving of potato chips fried with Olean contains only 75 calories and grams of fat vs. 150 calories and 10 grams of fat in regular chips. That's half the calories and none of the fat in regular potato chips. Tortilla chips fried with Olean contain one gram of fat per serving because, unlike potatoes, corn itself contains fat. GOOD HEALTH, SMALL STEPS Health and nutrition experts agree: for good health, Americans generally need to eat a more balanced and varied diet, including fruits and vegetables every day; limit fat and calories; and exercise more. Of course, that's easier said than done. Cutting fat and calories, in particular, is very tough for most people. That's because fat makes foods taste good and gives them a richness and texture we all love.

    HEALTHY HOME COOKING
by JoAnna M. Lund Includes photo of JoAnna Lund. Welcome back into my kitchen, where the cooking is easy and the food is both healthy and tasty! I have more cooking tips to share with you, and a few recipe makeovers I've gladly created, in the Healthy Exchanges way. Hope you enjoy. Did you know that you can make your own fruit-flavored yogurt by mixing 1-1/2 tablespoons of any flavor spreadable fruit spread with 3/4 cup plain fat-free yogurt. It's every bit as tasty, and much cheaper than "store-bought." I love my homemade fruit yogurt, and it's a great calcium boost at breakfast time or as a late afternoon snack. Another quick tip for that plain fat-free yogurt, now that you've purchased it to make personalized fruit flavored yogurt: if you want to use it instead of sour cream in baked or cooked recipes, just remember to stir 1 teaspoon of cornstarch into every 3/4 cup of yogurt. This will help to stabilize the yogurt and your finished product will be much creamier! Any time you're browning ground beef for a soup or casserole and want to get rid of almost all the excess fat, just place the meat loosely in a plastic colander. Set the colander in a glass pie plate and place in your microwave. Microwave on HIGH for 3 to 6 minutes (depending on the amount of meat being browned) stirring every so often. The fat gets trapped in the pie plate, and you're left with flavorful browned meat. You can chop up onion or green pepper and stir into the meat before browning, if you choose. With this quick tip, can a satisfying bowl of chili be far behind?

    HEALTHY HOME COOKING
by JoAnna M. Lund Includes photo of JoAnna Lund. Hi, I'm so glad you chose to join me in the kitchen again, for more of my "common folk" healthy cooking tips. Once again, I'll again share a couple of recipe makeovers I did, so you can enjoy them, too! An excellent white sauce for creaming veggies can be made simply by combining 1and 1/2 cups of JO's Evaporated Fat-Free Milk (the cooking tip I just shared with you) and 3-tablespoons flour, in a small covered jar. Shake well to combine. Pour the mixture into a medium-sized saucepan sprayed with butter-flavored cooking spray. Cook over medium heat, stirring constantly with a wire whisk, until mixture thickens and just starts to boil. Season as you desire. Now if you want to make cheesy white sauce, stir in 1-cup of shredded, reduced-fat, Cheddar cheese, and continue cooking and stirring until the cheese melts. However, do NOT ever use fat-free Cheddar cheese and expect it to melt correctly and if you insist on using the fat-free, you are forbidden to tell anyone it was my recipe! Nothing turns families off from eating healthier quicker than fat-free cheeses! Or maybe you're in the mood for Thai food and want to make a creamy peanut sauce. If so, then stir in 1/4-cup peanut butter (reduced-fat or regular, your choice) instead of the cheese and continue cooking and stirring until the peanut butter melts. Both creamy and chunky work well. Drizzle this over cooked carrots and celery and you won't have any problem getting your family to eat their veggies!

    MATZO BALLS
    Ingredients:
    • 1 box regular matzos
    • 1/2 cup egg substitute (Eggbeaters, etc.)
    • 2+ cups minced onion
    • 1+ cups finely chopped fresh parsley
    • Matzo meal
    • Water or broth
    • Your best veggie broth (put lots of celery in)
Crush up matzos (the crackers) in bowl and cover with water. Let soak 1/2 hour or so. Then "squish up" through fingers until it is kind of a dough. Dry saute the onions in nonstick large deep pot (or saute them in a greased large deep pot). Remove from heat when edges are brown and liquid has mostly evaporated. Stir in "squished" matzos, then the egg-likes, then the fresh parsley. Add matzo meal or water (or broth) to get to the right consistency.
    MATZO BALLS #2
    Ingredients:
    • 1/2 cup matzo meal
    • 1/2 tsp salt
    • 3/4 tsp powdered instant broth (veggie)
    • 2 Tbsp chopped parsley (optional)
    • dash of onion powder
    • 3 egg whites
    • 3 Tbsp cold club soda
Stir the dry ingredients together. Stir egg whites, club soda, and parsley slightly with a fork and pour over the dry ingredients. Mix well and refrigerate at least one hour.

Trans Fat-Free Whole Harvest cooking oils
by Glenna B. Musante Carolina Soy Products introduces
Whole Harvest offers a healthy new alternative to traditional hydrogenated frying oils. To avoid trans fats, schools throughout California have begun buying House of Raeford products par fried in healthy Whole Harvest.
Whole Harvest is a revolutionary, trans fat-free alternative to traditional hydrogenated and partially hydrogenated commercial cooking and frying oils. Traditional hydrogenated cooking oils contain trans fats, known to contribute to coronary artery disease.
In addition to being much healthier than the standard oils, Whole Harvest is also cost-competitive and significantly less absorbent than the typical cooking and frying oils used by restaurants. Tests conducted at the Texas Engineering and Experiment Station have shown that products fried in Whole Harvest typically taste better than those cooked in traditional cooking oils.
And a recent independent study conducted through N.C. State University in Raleigh, N.C., concluded that foods par fried in trans fat-laden hydrogenated oils have much lower trans fat contents after being finish-fried in Whole Harvest.
