America's First Trans Fat-Free City!!! Project Tiburon is a project of BanTransFats.com. We worked with restaurants owners and managers in Tiburon's 18 restaurants, and all now use trans fat-free cooking oil for frying. The cooking oils used in restaurants are a major cause of the high trans fat consumption that we experience in the United States. It is not just the McDonald's and the Burger Kings and other "fast food" restaurants. Most "quality" restaurants use partially hydrogenated oils too. You will now see stickers like the one below in restaurant windows throughout Tiburon:

referred to on the sticker. We were ably assisted by California Rice Oil Company . We have no commercial relationship with the company. They volunteered their time to make this project succeed. Many restaurants chose to use rice bran oil, but all restaurants were free to use the oil of their choice. Tiburon is located on the San Francisco Bay, with a terrific view of the City of San Francisco. It is close to Sausalito. We hope to expand the trans fat-free city project to other towns in the near future.

We thought we would experiment with homemade fat-free salad dressings. The trick was to find something that could replace the "mouth feel" of oil but not add any fat. The solution was threefold: We tried using gelatin, cornstarch, and pectin: three fat-free thickeners. The results were great. Try the Fat-Free Balsamic Vinaigrette (thickened with cornstarch), the Fat-Free Pineapple-Tarragon Dressing (thickened with fruit pectin), or the Carrot-Orange Dressing (thickened with gelatin). Fat Free Baked Rice Pudding Presented by Mary E. Ross on December 24, 2004
Ingredients:

  • cooking spray
  • 1/2 cup raw short-grain rice such as Italian Aborio rice*
  • 3/4 cup sugar
  • 4 cups skim milk
  • 2 cups evaporated skim milk or fat free half and half
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1/4 teaspoon fresh grated or ground nutmeg
  • 1/4 teaspoon cinnamon
  • pinch salt – optional
  • ½ cup raisins – optional
  • fat free whipped cream or whipped topping-optional
  • Cinnamon sugar made with ½ cup sugar and 1 teaspoon cinnamon. Sprinkle 1 to 2 teaspoons over individual servings. If using whipped cream top pudding first with whipped cream then sprinkle with cinnamon sugar Method: 1. Preheat oven to 300º F. Sprinkle rice over the bottom of a 2- to 3-quart ovenproof baking dish. Add sugar, skim milk and evaporated skim milk or fat free half and half and vanilla to rice, stirring well to combine. 2. Sprinkle cornstarch over milk a teaspoon at a time, stirring well to dissolve after each addition. Stir in nutmeg, cinnamon and salt 3. Bake 1 hour, stirring every 20 minutes to prevent rice from sticking to bottom of dish. Increase heat to 350º F. stir in raisins if using and bake an additional 45 minutes to an hour continuing to stir after every 15 to 20 minutes. Serve hot, warm or cover and refrigerate to serve cold.

    Fat Free Soft Caramels Presented by Mary E. Ross on December 19, 2003
    Ingredients:

  • Regular or butter flavored non stick cooking spray
  • 1 ¼ cups packed light brown sugar
  • 1 cup light corn syrup
  • 2 tablespoons Molly McButter or other dry butter flavoring
  • 1 can fat free sweetened condensed skim milk
  • ½ teaspoon real vanilla extract Method: Lightly spray an 8 x 8-inch pan with non stick butter or regular cooking spray and set aside. In a medium sized heavy bottomed sauce pan combine sugar with corn syrup, butter flavoring and condensed milk. Stir mixture over low heat until sugar has dissolved. Increase heat to medium and continue to cook stirring frequently until mixture reaches 234 to 238 degrees on candy thermometer. (soft ball stage) Remove from heat and stir in vanilla and pour immediately into prepared pan. Cool to lukewarm and mark in 1-inch squares using a knife sprayed with cooking spray. Spray a teaspoon lightly with cooking spray and scoop 1 heaping teaspoon of caramel onto a 4 x 5-inch square of waxed candy papers. Roll paper jellyroll fashion and twist ends to seal. Store in a cool dark place for several weeks. Yield 38 1-oz soft caramels each at approximately 55 calories; 0.2 gram total fat; saturated fat; cholesterol;14.5 grams carbohydrate; gram dietary fiber; 0.1 gram protein; 38 milligrams sodium

Look at this as a new challenge as well as an opportunity to awaken taste buds you never knew you had! Try using spices, herbs and condiments. You may just be pleasantly surprised at the new taste sensations you will discover.
    When you saute or stir-fry, you do not need as much fat as many have become accustomed to using. By using a non stick skillet or wok and nonstick cooking spray, you cut out tons of fat and calories before you have begun with the food! An even better choice would be to grill your food or for tender cuts of meat, broil it instead of sauteing or pan-frying.
    When you do have to use some fat, use it sparingly. Stick to olive oil whenever you can. To add flavor during cooking, try using fat-free salad dressing, marinades, mustard, chutney, fruit preserves or salsa. This will keep the food moist in place of the fat doing so.

    Today's foodcourt consists of another wonderful low-fat recipe! Everybody loves pizza but you'll rarely see a man with a six pac eating pizza on his lunch break. Why? Because when restaurants make pizza, they pack it with saturated fats. The ingredients in the crust and the oil are usually low in quality and full of unwanted fats. But we have the answer: guilt-free pizza. Get cooking and try this low-fat pizza. It tastes great and is quick to bake.
    dough
    3/4 cup lukewarm water
    1 tsp honey
    1 tbs dry active yeast 1/2 cup Semolina flour 1/2 tsp salt 1/2 cup cornmeal Light vegetable oil cooking spray baking instructions -Combine water and honey in a medium stainless steel bowl. -Sprinkle yeast on top and set aside for 20 minutes to proof, until bubbles form on the surface. -Put the flour, semolina, and salt into the bowl of a food processor.
