Tasty Vegetarian Recipes from Egypt

Introduction
Being raised in an Egyptian family, I soon found out that food was of tremendous importance in our culture. Social and family gatherings were centered around large amounts and various types of food. I found the dishes my mother and grandmothers would prepare quite flavorful and grew up always adding lots of spices to whatever I ate. Spices common to Egyptian foods include cumin, garlic, onion, and allspice, and the list goes on and on. My family is Christian Coptic Orthodox to be exact. This was one of the earliest forms of Christianity and was the religion of the country until the Arab invasions. Many of the following recipes have been passed down from generation to generation. The Coptic church believes in partial fasting almost 200 days of every year. During about 60 of those days, the members eat a completely vegan diet. The remaining days they are permitted to eat fish, but no other animals or animal products. The reasons behind the fasting vary by interpretation. They look to stories in the Bible for the reasoning behind the fasts. According to the Coptic interpretation of the Bible, when God first created the world, he gave humans only vegetables as food. It was only later, when people multiplied and became sinful, that God permitted them to eat animals, only because it was in accordance with their sinful behavior. Therefore, the Copts believe humans survived for a great length of time without eating animals. In an effort to purify themselves and to make a sacrifice to God, they give up the eating of animals during these 60 days. The Copts consider the vegan food they eat during fasts to be a sacrifice because they consider such food less appetizing and less nutritious.

Yield: 4 servings
1 lb lean ground chuck
1 ea small onion, chopped
2 cn beef consomme
2 tb to 3 soy sauce
1 ts Worcestershire sauce
1 jar sliced mushrooms, drained
1 c raw rice
salt and pepper to taste

Ingredients: 2lbs cream of wheat 2.5 cups sugar 3/4 lb. butter 16 oz. plain yogurt slivered almond halves Instructions: Bring all ingredients to room temperature. In a large bowl mix sugar and cream of wheat. Add butter, mix by hand, rubbing the buuter, sugar and cream of wheat between your palms for 10 minutes or more until the mixture is very well blended. Add the yogurt and mix with your hands until the dough feels smooth in your hand. If it feels dry add one tablespoon at a time of water so when you hold it in your hands it feels like pie dough. Butter a 13x9x2" pan and pat the dough into the pan with your hand. With a sharp knife slice the dough in 2 x 2 inche squares or into diamond shapes.

In appreciation of students who chose to live on campus this year, University Housing is offering down-home cooking and hospitality as part of Southern Hospitality Day, officials say. Beth Scally, University Housing coordinator of marketing and public information, said the Southern Hospitality Day is designed to show students they are wanted and appreciated by Housing. "We try to do this every year, but last year, there were electrical problems, and we couldn't do it," she said. "This year, we want the students to know that we understand that they didn't have to choose to live here, and we appreciate the fact that they did." Scally said students will receive complimentary pens, pencils and mints, and they will have a special dinner available in all cafeterias tonight. Mary Morgan, assistant director of dining, said the dinner consists of many different Southern-type entrees for students to choose from, such as chicken and dumplings, country fried steak with white gravy, smothered pork chops with onions and mushrooms, and sliced turkey and vegetable stew. She said some of the side dishes include baked beans with apples, green beans with bacon and mashed potatoes. Ed Jones, University Housing director, said Southern Hospitality Day creates an environment Housing wants to live up to.

Ancient Egypt was a narrow strip of land along the Nile River. Each year the river flooded its banks, leaving behind a fertile fringe of soil they called "the Black Land," while the desert all around the Nile valley was called "the Red Land." It was here the Ancient Egyptians built their homes.
Family Life
    The people of ancient Egypt highly valued family life. They treasured children and regarded them as a great blessing. In the lower class families, the mother raised the children. The wealthy and nobility, had slaves and servants that helped take care of the children by attending to their daily needs. If a couple had no children, they would pray to the gods and goddesses for help. They would also place letters at the tombs of dead relatives asking them to use their influence with the gods. Magic was also used as an attempt to have children. In event that a couple still could not conceive a child, adoption was also an option. Although women were expected to obey their fathers and husbands, they were equal to men in many ways. They had the legal right to participate in business deals, own land, and were expected to represent themselves in court cases. Women even faced the same penalties as men. Sometimes wives and mothers of pharaohs were the "real" ruling power in government, though they ruled unknowingly to common people. Queen Hatshepsut was the only woman who ruled out right by declaring herself pharaoh. An Egyptian wife and mother were highly respected in this ancient society.

Vanishing ways - Cooking in Egypt

Once you are 30 years or more, you start to see this for yourself, reminiscing over how things were like when you grew up, vs. how they are now. These are examples of societies evolving right before your eyes. Let take a few examples from Egypt, related to cooking for example.
Eid Cookies كحك العيد
For example, in the last week of the fasting month of Ramadan, women of a household, together with other women relatives and friends, used to spend days preparing "ka7k كحك" (sort of cookie dessert). It was an elaborate process, making the dough with genuine "samnah baladi سمنة بلدي" (clarified butter from water buffalo milk), making the fillings, whether it is cooked date paste "3agwa عجوة", or honey and nut mix "3agameyya عجمية", or a mix of cinnamon, sugar and nuts "ma3mool معمول". The indiviudal cookies themselves were decorated by a special tongue like tool called "mon2ash منقاش", so when it is sprinkled with powdered sugar, it would hold in the grooves. Who said cooking was as easy as boiling a pot of pasta? But alas, the offerings are heavily coated in aspic and therefore inedible. At the 2004 National Salon Culinaire held this week, over 300 entries in 14 categories ranging from cold fish, shellfish and mollusks show-platters, vegetarian platters all the way to petit fours were judged according to composition, originality, correct preparation, presentation, ingredients, recipe and serving. "A little too much sauce on the plate," mused one of the judges and the group of fellow panelists nodded their white-hatted heads in consternation. According to head judge Cornelia E Volino, chairman of the Canadian Culinary Federation, "Compared to other national competitions, the entries on display here are very competitive." And Volino should know; she has judged similar national competitions in the Nordic countries, China and New Zealand, to name but a few.

One: Kosa Mahshiya – Zucchini, Stuffed
Ingredients
1) 1 KG small Zucchini.
2) ½ KG beef. Savory Minced Beef (Beef marbled with fat). If unavailable add fat to meat while mincing.
To prepare the Savory minced Beef (Lahma Mu'assaga): use 2 onions, finely chopped, cooking oil, salt and pepper. Mince the beef coarsely. Brown the onion to a pale golden color, then add beef and seasoning and cook until the juice is absorbed. 3) 1 ½ cups rice.

The September 2000 promotion, which introduced 119 U.S. products to the Egyptian market, featured a special competition: 40 Egyptian chefs competed to create the best recipe using U.S. ingredients. Six were selected for a final competition at the Cairo Marriott Hotel, site of the Great American Food Fest each fall.

Again a lot of information and experience was exchanged. Main realizations: v The first Scheffler Solar Community  Kitchen (SSCK) which can cook 300 meals a day with two reflectors got inaugurated the 10. August 2000 at the El Sherouk Farm in presence of the Swiss Ambassador. Delicious food was cooked. Now Egypt can test a technology which can offer work- opportunities to local entrepreneurs as the entire installation is produced with out any additional dependency from industrialized countries. The return on investment is approximately 15 years due to very cheap gas prices. In India or Nepal e.g. the installation is already paid back after 3 years as the wood there became so expensive! We will see, when Egyptian decision makers want to use their free sunshine at a larger scale. The quicker this takes place, the more it will benefit people – not only in an economical way. The investment for one Scheffler-Reflector is $ 1’000.-.

Fool Medames (or Fool Mudammas Ful Medames Ful Mudammas Fuul Medammis , etc., often just called Fool Ful or Fuul ) is an Egyptian bean stew: the basic recipe is fool ful fuul , i.e., fava) beans, cooked until tender, mashed then mixed with olive oil and seasonings, typically lemon juice and cumin. PROFESSIONS
In Ancient Egypt there were definite social classes which were dictated by an egyptian's profession. This social stratification is like a pyramid. At the bottom of the "Social Pyramid" were soldiers, farmers, and tomb builders, who represented the greatest percent of the Egyptian population. The workers supported the professionals above them, just as the base of the pyramid supports the rest of the structure. Above the workers were skilled craftsmen, such as artists, who used primitive tools to make everything from carts to coffins.
Above the craftsmen were the scribes. The scribes were the only Egyptians who knew how to read and write, and therefore had many types of job opportunity. A scribe's duties ranged from writing letters for townspeople, to recording harvests, to keeping accounts for the Egyptian army. Above these scribes were more scholarly scribes, who had advanced to higher positions such as priests, doctors, and engineers. Priests were devoted to their religious duties in the temples at least three months out of every year, during which time they never left the temple. At other times the worked as judges and teachers.
The medical profession of Ancient Egypt had its own hierarchy. At the top was the chief medical officer of Egypt. Under him were the superintendents and inspectors of physicians, and beneath then were the physicians. Egyptian doctors were very advanced in their knowledge of herbal remedies and surgical techniques. Also part of Egyptian medicine were magic, charms, and spells, which had only psychological effects, if any, on a patient.
