A HYDROFOIL operating between Aswan and Abu Simbel, the first of its kind in Egypt, is expected to solve the problem of congestion at the airports of Aswan and Abu Simbel. Blue Stars, the company that owns the vessel, is confident that the vessel will facilitate the movement of tourists. "The influx of travellers to Abu Simbel and the difficulty in transporting them to the temples by traditional means of transportation has encouraged us to offer travellers an opportunity to have a wonderful trip on Lake Nasser and see all the monuments that lie between Aswan and Abu Simbel," said Essam Mursi Ezzeddin, general manager of Blue Stars. The journey will take about four hours and travellers are even provided two free meals with a return trip.

AFTER a year of preparations, the Islamic and Coptic museums of Cairo's Pharaonic Village were officially opened last week, by Minister of Tourism Mamdouh El-Beltagui and Abdel-Salam Ragab, board chairman of the popular tourist site. The Islamic museum covers the history of Islam from the pre-Islamic period (Jahiliya) to the present and includes the achievements of the Arabs in science, medicine, mathematics, astronomy and other specialisations. It also provides visitors with information on traditional Islamic art crafts. The Coptic museum covers one of the most important periods in Egyptian history, between the first and seventh centuries. It reviews the beginning of Christianity in Egypt and provides profiles of important Coptic characters and their role in Egyptian history. There is a display of the journey of the Holy Family in Egypt, as well as an introduction to monasticism and its founder Saint Antony. Earlier museums in the village include those dedicated to Tutankhamun, Pharaonic boats, mummification, medicine, arts, the pyramids builders and the Ptolemic history.

Oh, we had a fun and happy Easter! The Easter bunny went all out, as usual. What a guy! How did all of you fare? Any memorable moments to share with the rest of our readers? We had the pleasure of my cousin and his wife visiting from Italy with their two children who happen to be the same age as mine. They had a blast together. I love family gatherings, especially ones that involve kids. There's always laughter and kids really know how to have a good time, ya know? No work woes, no pressure ... just heathanistic good times! LOL! Parents, April 27th is "Bring Your Daughters to Work" day! The one day of the year you can get away with it and spend some serious quality time with your daughters. Seeing you at work, realizing exactly what you do every day when you're not playing Mom, is a great experience for our daughters. If your boss objects, he/she is a creep! Either live with it or move on ... ;-) I think we should have a day to bring our sons to work, too. I really do love hearing from you and would especially like to receive feedback about this newsletter. Registered: Mar 2005 posted 26 June 2005 12:25 PM hi everyone how are you? i've been trying to learn to cook for a few years now. and although i do have some recipes down, i haven't yet tried to apply any of them because i'm scared it will turn into a disaster.
although i'm almost 25 i've never learned to cook, and since i've always lived with someone else who did, i never felt the need to! but now that i'm getting married and leaving to australia inshallah,i really do need to learn, and since my fiance doesnt know how to cook either! we're going to starve!!
my ignorance in cooking is unbelievable. and by ignorance i mean i didn't even know that an onion (bsala) had to be peeled!
so i just thought it would be interesting to open a thread on cooking disasters. please anyone who attempted to cook a certain meal and ended up with something completely different tell me about it! we could learn from it, laugh about it, and to be honest i want to make myself feel a little better about my ignorance! : TIME Traveler Monday, Mar. 03, 2003 Not inclined to get on a plane to the Middle East? If you want to sample the region's cuisine, then Hong Kong's Habibi may be the next best thing. It offers diners an authentic taste of home-style Egyptian cooking in a comfortable and elegant setting. Third-generation chef and part-owner Hosni Emam came to Hong Kong in 1999 to work as an executive chef on the booming restaurant scene, but it wasn't until the homesick Cairo native started cooking Egyptian feasts for appreciative dinner guests in his tiny apartment that he thought of opening his own restaurant. His friends raved about his flavorful meze (vegetable-based Egyptian appetizers) and succulent tagens (traditional slow-baked stews of meat, vegetables and herbs), but they doubted the menu would sell in a city dominated by Continental and Chinese restaurants. Undeterred, Emam teamed up with veteran Hong Kong restaurateur Jennifer Migliorelli to open an oasis of charm on a busy market street in Central. "It was a gamble," he says. "And we were spending money we didn't even have." Habibi, which means beloved in Egyptian, celebrated its second anniversary last month. The heavy blue door on Wellington Street opens into a cozy space graced with high, arched ceilings and intimate lighting. The decor is exotic: Emam bought the filigree light fixtures and colorful tapestries on trips home. Stone walls and carved wooden lattices separate plush booths lined with silk cushions. It's like stumbling upon a quiet café in a forgotten corner of an Egyptian bazaar, with a welcoming proprietor eager to keep his guests content.

As my many fans and admirers know, I am partial to Middle Eastern cooking, especially that of the beautiful land of Egypt. One of the classic dishes of this region is Koufta, a mixture of ground meat and spices. Egyptian women vie with one another to produce the best koufta, and I have had the good fortune to have had some made by a lady who is almost certainly the best koufta cook in Cairo. Here is my version, adapted from Samia Abdenour's "Egyptian Cooking: A Practical Guide," published by the American University in Cairo Press (ISBN 977-424-026X, and well worth getting a copy). Most Middle Eatern dishes work admirably with venison, and this is no exception: Koufta Mashwiya (Grilled Koufta) For each pound of **finely ground** venison, you will need: 2 tablespoons ground allspice 2 tablespoons ground cinnamon 1/2 onion, very finely chopped 1-2 teaspoons ground black pepper 1/2 teaspoon powdered garlic 2 tablespoons chopped cilantro or parsley 1/2 teaspoon salt Olive oil Mix these well into the gound meat, until all the spices are thoroughly incorporated. Shape the spiced meat mixture into "logs" about 4 inches long by an inch diameter, and slide the "logs" onto oiled bamboo skewers, two to a skewer. Lightly rub the outside surfaces with oil, and grill over medium heat about 4 minutes per side. Serve with warm pita bread and side dishes such as hoummous (pureed sesame paste, available at your local supermarket: "Tribe of Two Sheiks" is the brand around here).   • Wash the rice and soak it in a lot of water (not strictly necessary but will make it need less water to cook). Blanch the leaves in boiling water for a few minutes (3-4) to make them pliable enough to roll and less salty. Chop one half of the onion and the two tomatoes coarsely (seed and peel the tomatoes first). Put them in a pan with 2 cups of water (= 1 1/3 x the quantity of rice). Add the juice of 1 lime, a little bit of salt, and lots of freshly ground black pepper. Bring to a boil, lower the heat, cover and cook until ready to roll the leaves. Mash the garlic in a small bowl. Add quite a bit of dill weed (maybe 1-2 Tb), some coriander, and cayenne to taste. Add a little bit of water and mix well to make a paste. Chop the other onion half finely. Saute it in about 1 Tb of olive oil (or other oil) until it begins to turn brown. Add the garlic paste and fry for about a minute. Add the ground beef, fry until it has no pink left. Lower the heat, cover and cook for about 15 minutes.
