Volume 26, Number 6 The Good Things of Egypt Written and photographed by John Feeney Some ancient Egyptian foods, however, are no longer eaten, at least not in quantity. The lotus and the payrus, the two main flower emblems of old Egypt, are not usually thought of as edible. The green stem of the papyrus, though a little tough, is sweet to chew, while the flowers of the white or blue lotus make a tasty salad. Today people will tell you that the wild lotus, which once grew prolifically in the swamps and lakes of the Nile, has vanished. But recently, one evening at dusk, we were driving along a dusty road beside a small canal somewhere in the northern Delta, when a young boy emerged from the bushes bearing in his arms an immense pile of wild lotus flowers, drooping and top-heavy on their long stems, just as they appear on the walls of the tombs. To see this boy appear, his arms full of lotus, was as if countless centuries had melted and we ourselves were alive and breathing in the distant past. An easier way to get a taste of the past is to eat the onions and beans of Egypt. They are consumed in vast quantities by the modern Egyptians and, according to the pharaonic texts and wall paintings, they were just as popular in ancient times. The onion, and the closely related garlic and leek families, had an almost religious, or at least medicinal, significance in ancient Egypt. Wall paintings show priests holding up bunches of onions; papyrus texts tell of special days for chewing onions, days for tying onions around the throat or stomach, and a day for walking with onions in procession. On the arrival of a new season's crop, onion and garlic festivals were held. To this day, on the eve of Sham an-Nassim, Egyptians put a piece of green onion or garlic under their pillows and on waking the next morning crush the piece and smell it before going out to "sniff the breezes" on the first day of spring.

At the opening ceremony, the Ambassador of Kazakhstan, the mayor of Meguro City and the Chairman of Meguro Bar Association gave speeches. About one hundred people were invited to the ceremony. Kazakh dances and music were performed and documentary movie was shown. At the lunch time people tasted Kazakh food. In the afternoon there was a concert and dances were performed. Slides were shown as well as a movie entiltled "Wolf Club Among People". A talk ws given about the experiences of staying in Kazakhstan. About 150 people attended in the afternoon.

This year we will not only be offering our usual Egyptian Colloquial and Modern Standard Arabic courses but there will also be several special courses. These include * Calligraphy * Intermediate Conversation and * Reading for Pronunciation. Generally these courses cost U$5 per hour and usually total 20 hours. Reading and / or writing clinics can be arranged to enhance your skills even further. Each month we have also organised social activities. This gives you a chance to discuss and learn more through lectures, trying the delights of Egyptian cookery (and learning the secrets) as well as visiting many tourist attractions with a professional guide. See the calendar below for proposed activities. There is still the opportunity for studying over an extended period, and some courses will be 5 weeks long to give you more exposure to the language. During the summer we will be organising a Summer Club for students. This will give students the chance to learn more through activities such as watching videos, learning songs, playing games or reading. The Summer Club is held in addition to the classes and will not only be in a relaxed environment but also be fun.

  • Mandino's (or Mandeno) Egyptian Recipes
    This seems to be the most comprehensive site, so far, on Egyptian Cuisine, although not complete. It has lots of recipes, grouped according to the traditional classification of Cook Books (Meat, Poultry, Dessert, ...etc.). Some pages are still under construction, and the site was last updated September 1998, I hope the owners didn't lose interest.
    Mandino is short for Mandoura and Nino . According to their site they are two Egyptian ladies who are lifetime friends and share a passion for cooking, and that is why they decided to create this web site.

This sauce is excellent with kushary , on top of spaghetti, or with any vegetable. cup extra virgin olive oil medium onion, finely chopped garlic cloves, crushed One 6-ounce can tomato paste cups water teaspoons white wine vinegar teaspoons salt teaspoon freshly ground black pepper teaspoon cayenne pepper 2. Mix the tomato paste and water and add to the onion. Reduce the heat to low while you simmer the tomato sauce for 20 minutes. Stir in the vinegar, salt, black pepper, and cayenne and cook until denser, about another 5 minutes. Makes 4 cups home about recipes books ... contact

Dr. Ragab's Pharonic Village, 26 Jan, 1999 W e spent an enjoyable afternoon at the Pharaonic Village in Cairo, where we observed Egyptians living and working just as the ancients did. We went on a guided (in English) boat ride where we saw people working on farms, making textiles, pounding papyrus reeds into paper, spinning pottery, making reed boats and baskets, quarrying stone, carving artwork on tomb walls, fishing, raising animals and pigeons, and even paying their taxes. Then we walked through the homes of a nobleman and a peasant, as well as a temple and a replica of King Tut's tomb. At the gift shop/museum we had our names printed in hieroglyphics onto handmade papyrusthe best deal of any souvenir in the store. Step back in time with us and experience living in Egypt, ancient style.

CAIROIn light of the experiences of some of my esteemed colleagues in this glorious city I now call home, I thought it time to come to her defence.
Or at least offer some tips on dodging the worst of the touts and other rat-like creatures.
Despite the fact that in Middle Eastern dance terms it is apparently not what it once was, Cairo remains a popular destination. As it should. It's still Cairo after all-the pyramids, more than a thousand years of Islamic culture, including some fine architecture, centuries-old souqs, and, of course, the food.
Yes, when you've been out sightseeing all day, when you think you'll scream at the sight of another Volkswagon-sized block of yellow stone, when the next person to offer to show you their brother's shop had better hope he has a brother to carry on the family name, when you're in need of refreshments, a chair, and perhaps even a flush toilet…the last thing you want is to have a couple of open soft drinks that you don't want plunked down in front of you by a grinning waiter who proclaims, "Welcome in Egypt!" as he proceeds to give you mediocre food at inflated prices and then explains to you why you should be happy to pay so much for this "real Egyptian experience".
Cairo is filled with wonderful places to eat where you won't be given mediocre food at inflated prices. However, most of them are not in the ever-popular Khan al-Khalili area, where bus loads of tourists are released by their guides for their daily dose of exotica. Step off that bus and you can tell that every waiter in sight sees you as a fatted sheep waiting to be fleeced.
