    Pittsburgh Post-Gazette The simple egg in all its symbolism plays a starring role at both the Passover meal and the Easter holiday. Hard-cooked eggs turn up in abundance on the Seder plate and in Easter baskets and table centerpieces. That means there will be lots of cooks wondering what to do with their bounty of cooked eggs. As long as the eggs have not been left at room temperature for more than two hours bacteria love protein-rich foods and have been promptly refrigerated after the Easter egg hunt, you can turn them into a scrumptious lunch or sandwich filling. Or just crack them and eat them out of hand plain or with salt. Egg salad and deviled eggs immediately come to mind. If the eggs have been colored and some of the dye has tinged the solid whites, all the better it makes for a very festive-looking egg dish. We found a recipe for deviled eggs with fresh tarragon and chopped green onions and capers that truly tastes like a mouthful of springtime. Served as an appetizer or alongside the leftovers of the Easter ham, the eggs make a lovely study in pastels. Eggs are always a welcome addition to leafy green salads. Think chef's salad (again sneaking in some of the leftover ham) with meat and cheese and wedges of tomato and egg. Or a salad Nicoise: greens topped with steamed spring green beans, canned albacore tuna, egg wedges, grape tomatoes, olives and a tangy vinaigrette (anchovies optional).

    Tired of the same old boring ham made with that scary looking red glaze out of a jar? Try these simple and easy ham glazes to perk up your Easter ham.
    Ham is part of many of our holiday dinners. This year why not jazz it up with a new sauce or glaze? They are easy and inexpensive, but can add that extra touch to your holiday meal. Remember, always cook your ham slowly and only for the time suggested. A 325 degree oven is the standard temperature for cooking ham to avoid drying out.
    The following recipes give you a wonderful choice of toppings for your ham.
    Maple Glazed Ham
    Ingredients:
    4-6 pound fully-cooked ham
    Whole cloves 1/4 cup packed brown sugar 1/4 cup maple or maple flavored syrup 1 tablespoon prepared mustard Preheat oven to 325 degrees. Insert cloves into ham. Bake uncovered 1-1 1/2 hours until temperature reaches 140 degrees. While ham is baking, combine brown sugar, syrup and mustard; spoon over ham during the last 1/2 hour of cooking. Let stand 10 minutes before slicing. Honey Ham Glaze Ingredients: 1 cup honey 1/2 cup orange juice 4-5 pound ham Bake ham 30 minutes for every pound at 325 degrees. Combine ingredients in a small bowl. The last 45 minutes baste with glaze several times.

    Cook, handle Easter eggs with extra care By Linda Breazeale MISSISSIPPI STATE Warmer days, new growth and Easter eggs go hand-in-hand in more ways than one, but sometimes the growth is not what consumers need. Sharon Allen Haynes, an area nutrition and food safety agent with Mississippi State University's Extension Service, said eggs must be handled with care to prevent the growth of micro-organisms that cause food-borne illnesses. "Eggs are among the most perishable foods. Leaving eggs, cooked or uncooked, unrefrigerated for more than two hours will lead to spoilage," Haynes said. "Eggs are very susceptible to the growth of micro-organisms that you cannot see or taste, but you'll certainly know it hours or days later." Haynes recommended cooking extra eggs for eating to avoid the food poisoning risk with Easter eggs that are unrefrigerated longer because of the dyeing, hiding and hunting process. "If you plan to eat dyed eggs, start with the best product possible. Select eggs with a good expiration date printed on the carton and from the refrigerated display case.     WASHINGTON, April 4, 2001 — "As Easter and Passover are observed with family meals, they should be remembered for their religious significance, rather than foodborne illness," said Susan Conley, director of Food Safety Education for the U.S. Department of Agriculture’s Food Safety and Inspection Service. "So we are urging folks to handle and cook spring foods safely."
    Using a food thermometer when preparing springtime meals is essential to safe cooking, which is one of the four steps in preventing foodborne illness. As part of the national "Fight BAC!™" campaign, the BAC messenger advises consumers always to cook thoroughly, clean hands and surfaces, separate raw and cooked foods, and chill leftovers promptly.

    To Christians all over the world the holiday of Easter is considered the most holy day in the year. In Jerusalem, which has residents of more than 23 different Christian sects, the holiday has special meaning, because this was the Holy City in which Jesus preached his philosophy of love. It has another meaning as well, for even though the holiday, which marks the Resurrection of Christ is known in French as "Paques", in Greek, Arabic and Russian as "Pascha", few people outside of Jerusalem realize that the name of the holiday derives from the name of the Jewish holiday day of "Pesach" or Passover.
    Theologians living in Jerusalem also realize that many of the traditions of the holiday stem from springtime pagan festivals that were observed as early as the 7th century B.C. During those days, members of the cult of Demeter, the goddess of agriculture, tried to guarantee the richness of the forthcoming grain harvest by undergoing a fast, sitting through an all-night vigil and taking a communion of barley water from a sacred goblet.
    Today, in similar fashion, many devout Christians abstain from eating meat during the forty days preceding Easter. During Holy Week, the seven days before the holiday, some, especially members of the Greek, Ethiopian and Armenian Orthodox churches, even eliminate eggs, milk and fish from their diet. Communion is taken on the day before Easter, which always falls on a Sunday and, on Saturday night church services begin at ten in the evening. In many nations, one of the most beautiful highlights of the holiday is the rich, ceremonial midnight mass.

Many families get together for the holiday season and the festivities usually include a big dinner. One Kansas State University professor, though, urges caution during this holiday season. Chicken is not only a popular dish served during Easter, but baby chicks are often given as pets. Karen Penner, professor and extension specialist of food science notes that protecting against salmonella, a food-borne illness commonly transferred through poultry, is a concern for families at Easter. There are many ways to protect against salmonella infection during food preparation. * Make sure your kitchen is clean and sanitary. "A lot of times we look at a surface or our hands and if we don't see any visible dirt we think, 'oh, that's safe," Penner said. "But washing kitchen countertops, utensils and dishes is really important. The kitchen should be a healthy place to prepare food." * Wash hands with warm soapy water when working with fresh meat. "There have been a number of studies done on hand-washing and actually only about 50 percent of people wash their hands after using the restroom. That's a bit alarming when you think about all the people that prepare and fix food for you. Even people who know better often use the restroom and don't wash their hands.
