    State Cooking Pot, the Dutch Oven In 1997, the Utah State Legislature approved H.B. 203 , designating the Dutch Oven as the State Cooking Pot. The following information was generously sent to the Utah State Library by the International Dutch Oven Society located in Logan, Utah. Utah is not only the headquarters of the Society but the site of World Championship Dutch Oven Cookoff which is a major event of the Festival of the American West. When the early pioneers came to Utah they used a number of things such as lumbering prairie schooners, teams of massive oxen, mossy wooden water barrels, and heavy dresses which almost dragged on the ground. For most of us, such common pioneer artifacts are difficult to relate to or use in our lives today. However, there is one very popular pioneer indispensable which thousands of Utah families are using in their everyday activities. It not only looks the same but is still made basically the same waythe tried and true Dutch oven. Explorers like Jim Bridger and Peter Skene Ogden used the kettle versions on the trail but appreciated the standard three-legged, flat top with a rim version together with its "lite" breads, tasty fruit cobblers and delicious stews when they wintered in. Mountain men who rendezvoused in Cache Valley in the 1820's used them and Osborne Russell in his Journal of a Trapper writes about how much they appreciated having some greasy, grizzly bear meat to cook because the cast-iron pots needed re-seasoning after boiling roots for meals the previous eleven days.

Aluminum Foil Trout Fillet
1 teaspoon garlic (chopped) Butter Parsley (chopped) Salt (to taste) Black Pepper (to taste) 1 Lemon Aluminum Foil Serves - 1 Spread out a 12 inch by 12 inch sheet of heavy duty aluminum foil. Onto the foil, place a trout fillet. Sprinkle on top 1 teaspoon chopped garlic, a few pea sized pieces butter, chopped parsley, salt, and black pepper. Cut up a large lemon into wedges and squeeze the juice from one wedge onto the fish. Fold the foil into an envelope– like packet. Be sure all the edges are sealed to keep in the steam as it cooks. Place the packet on the grill or onto a bed of hot coals. Cook about 8 minutes, turning every three minutes. Serve with the remaining lemon wedges.

Dutch oven cooking was the most effective cooking tool in the western frontier.
Dutch ovens were an important tool in frontier history dating back to the early 1800's. The Pioneers were very limited in the amount of equipment they could pack in moving westward. Dutch ovens, although heavy, had multiple cooking uses and could be heated and cleaned quickly. The Dutch oven proved to be an easy way to bake bread, fry fish or make stew without causing much delay to your travel time. Because Paul Revere had a pattern for making a Dutch oven almost identical to the ones used on the frontier, he is often credited as their creator. The Dutch, of course, argue that the frontier Dutch oven was patterned after their iron kettles brought to the colonies by tradesmen and that the popular ovens are named after them. Everyone agrees that at that time the Dutch oven was one of the most efficient cooking utensils ever built...and it still is! A good Dutch oven may be difficult to find. Look in specialty sports and recreational stores or mail order catalogs. They may only be available during camping or hunting season as well. They come in several different sizes ranging eight to sixteen inches in diameter and four to six inches deep. SEASONING YOUR DUTCH OVEN The trick to a good Dutch oven is proper seasoning prior to use. Old Ironware was coated with varnish or lacquer to prevent rusting. "Seasoning" was a term that referred to scrubbing or burning off the coating. Modern day ovens still need a good washing in hot sudsy water and then need to be completely dried. This is the only time you should ever wash your Dutch oven in water. Next, heat your oven and boil grease in it. Use a clean rag to completely coat the inside, outside, top and bottom of your oven. When the grease starts to smoke, remove the oven from the heat and wipe it out. Leave a little grease as a protective coating.

This is an invitation to try some of the little-known triumphs of those Pennsylvania Dutch farmers' wives whose pride, skill, crowning achievement, vocation and avocation has been- literally for two hundred and fifty years-a way with food.
For out of the Pennsylvania Dutch farm country there has arisen a school of regional cookery second to none.
The cooking is as simple, plain and wholesome as the people themselves-and as hearty. One of the most enlightening traditions of this "napkin under the chin" school of eating is the old one that every company table should include "seven sweets and seven sours" all served forth at once. The sweets might include currant or apple jelly, apple butter or applesauce, preserves such as quince, candied watermelon rind, or wild straw- berry; and two or three pies such as schnitz, shoofly, cheese cake, or "funeral pie" made from dried raisins or sour cherries.

See also Amish and Mennonite If you have browsed through my site, you know that I am of Pennsylvania Dutch origin. Most of the cookbooks I have seen contain recipes as they were recorded many years ago. Pa Dutch cooks seldom measured except in baking, and those measurements are estimates. For example, you will often see reference to "butter the size of an walnut" or "a coffee cup full of flour". Luckily, somewhere in my ancestry, perhaps my grandmother, someone translated some of the old into terms we can understand. But my mother and I had to remake many of the recipes on my site to record the measurements before posting. In any case, the books are very interesting from a historical point of view and the instinctive cook will understand the directions. Two of the books listed below are in my library and I have added comments. So have fun and explore.     The Cook-off Celebrates the Buffalo , "a symbol of leadership, long life, abundance and power". In August of 1804, Lewis and Clark’s Corps of Discovery entered present day South Dakota and feasted on their very first Buffalo. While traveling across the Great Plains the Bison provided an excellent food source for the men. Each man ate about nine pounds of meat a day! The Great Plains Indians based their culture around the buffalo. "As elder and teacher to man, Buffalo also represents physical strength, spiritual insight, dedication and courage.
