Herbed Beef Stew Recipe By : Marlene Severson, Taste of Home, Feb/Mar 93 Serving Size : 10 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient Preparation Method 2 lb beef stew meat, 1" cubes 2 tbl oil 3 c water 1 lg onion chopped 2 tsp pepper 1 tsp (or 2) salt, optional 1 1/2 tsp garlic powder 1 tsp dried rosemary crushed 1 tsp dried oregano 1 tsp dried basil 1 tsp ground marjoram 2 bay leaves 1 can (6 oz) tomato paste 2 c potatoes cubed 2 c carrots sliced 1 lg green pepper chopped 10 oz frozen green beans 10 oz frozen peas 10 oz frozen corn 1/4 lb mushrooms sliced 3 med tomatoes chopped Brown meat in oil in a Dutch oven. Add water, onion, seasonings, and tomato paste. Cover and simmer for 1 1/2 hours or until meat is tender. Stir in potatoes, carrots, and green pepper; simmer 30 minutes. Add additional water if necessary. Stir in remaining ingredients; cover and simmer 20 minutes.

On the old time cattle drives, the cook was sometimes an aging cowboy hired for his ability to drive a wagon more than his cooking skills. He was in charge of the wagon and everything related to it. The cook was paid more than the other hands because the success of the camp and the drive depended greatly on him. A cowhand earned about a dollar a day and the cook made twice that. Ranch cooks today still command a great deal of respect and many expect a certain strict etiquette in their vicinity.
Cowboys were forbidden to eat at the chuck wagon table. A cowboy never rode their horse through the "kitchen." The cowboys always rode downwind of the wagon, so the dust they stirred up wouldn't blow into the food.

SCOUT COOKING
I became interested in scout cooking after seeing my son's patrols menu for an upcoming outing. I knew there had to be more to scout cooking than beans and franks, sandwiches and cold cereal. I started with two recipes for Dutch oven cooking. I now have assembled a book with about 200 recipes for Dutch ovens. My son has even competed in a few cooking events now.

    Dutch oven cooking has survived from the days of the open hearth, and flourishes still. When Lewis and Clark made their pioneering trek to the Northwest in 1805, they listed the Dutch oven as one of their most valued pieces of equipment. Legend has it that the Dutch oven was actually invented in colonial times by Paul Revere. The oven was then widely manufactured in the New England states, but after traders from Holland bought large numbers for barter with the Indians and frontier settlers, the name"Dutch oven" stuck. After widespread use in the colonies, the Dutch oven followed the pioneers west as an indispensable utensil in the chuck wagon and the miner's mule pack. Today, river runners, wilderness campers and even home cooks consider the Dutch oven an essential item, to whom it is affectionately referred to as the "D.O."

New Oregon is a Hamlet of North Collins and is a quite little park located in a rustic setting at the corner of New Oregon Rd and Langford Rd. with 18 Mile Creek running gently through it next to the pavilion. The date is September 11, 2005 and is scheduled to start around Noon with a time to eat around 5:00. This will give those who attend church time to get home and get into their DO attire and drive out to the country and participate. A map and directions will be sent later.     The most impressive cooking I have ever demonstrated was a stacked Dutch Oven meal. You will need three Dutch Ovens. The bottom one is a 14" Dutch Oven, then you can use a 12" and a 10" oven. Have a good amount of charcoal going. In the bottom oven, layer sliced thin skinned potatoes (skin and all), sliced onions, and raw bacon. When the oven is about 3/4 full, put the lid on and add a layer of charcoal to the lid. Cover the top with charcoal. Put the 12" oven on top of the bottom oven. When the second oven is hot, put in about 2 pounds of hamburger meat (coarsely ground ok). Stir until no longer pink. Add a large can of tomatoes (we like the Rotel brand). Also add chili powder, salt, and pepper. Stir in a can of chili beans like Ranch Style beans. Put the lid on and add a layer of coals to the lid. In the top oven, put one of the cake mix cobblers. A favorite is the apple pie filling, spice cake mix, and a Dr. Pepper or root beer. I prefer to line this Dutch Oven with foil. I don't like scrubbing off the crusty sugary remains. Add the lid and put some coals on top.

They were primarily farmers who came to this country, often to escape religious persecution in Europe. The cooking reflects both the German heritage and the hearty foods associated with the physical work involved in farming. Women spent a lot of time preparing three hearty meals a day. Preserving, such as canning and drying, was a necessity to help get through the winter months, and many recipes using preserved items are still popular. There are two misconceptions about the Pennsylvania Dutch that require explanation. One is caused by the use of the term "Dutch", which leads many to believe that the people came from Holland. In fact, the term came from the word "Deutsch", which is the German word for "German". Another thought is that all Pennsylvania Dutchmen are Amish. However, the Amish community represents only a small portion of the people who settled in eastern Pennsylvania during the German migration of the 18th century. The majority of the Pennsylvania Dutch are not Amish. Although the foods are very similar because of the German heritage, there are differences, probably based on the influences of the regions into which they settled.
