83. Steak Soup
Simple dutch oven recipe making eleven cups of soup, at Lisa's cooking Cache.

STEAK SOUP
1-1/2 lbs. lean ground beef
2 c. diced onions
1 c. diced carrots
1 c. diced celery
1 tbsp. minced garlic
3 cans (13 or 14 oz.) chicken broth
1 can (16 oz.) crushed tomatoes
1 tsp. red pepper sauce (can use flakes 1/2 tsp.)
2 tbsp. Worcestershire sauce
1/2 tsp. freshly ground pepper
1/4 c. margarine 1/2 c. flour Brown meat in Dutch oven over med-high heat. Drain and rinse. Add onions, carrots, celery and garlic to meat. Cook 10-12 minutes until vegetables are softened. Add broth, tomatoes, red pepper sauce, Worcestershire sauce and pepper; bring to a boil. Reduce heat, cover and simmer 15 minutes. Meanwhile, melt margarine in small pan. Stir in flour. Cook over med-high heat until deep brown. *note, it may seem like it scorches, but it needs to be dark. Whisk into soup. Cover and simmer 15 minutes more. Makes 11 cups. SUBMITTED BY CHRIS M. ANOTHER EARTHQUAKE
I am inside a government building when the computers start to dance on the tables. As computers normally are not educated in dancing, something else must be going on, probably an earthquake. (It appeared later to be an earthquake of 5.6 on the Richter scale, the 23rd this year. So the risk is not neglectible). I run to the corridor: nobody. In all rooms I find people, sheepishly laughing, not planning to go anywhere.
When I ask them, what they would do in case of a major earthquake, most of them confess they would quickly make their way towards the elevator. Nobody has ever heard of sitting under a table or standing in a doorway. They find the idea very funny. Probably there is a very useful job for me as free-lance emergency trainer. Geen reacties
CHOCOLATE
Our Anna is already a big girl and she can walk around in the house without constant supervision, at least that is what we, parents think. She also understands a lot, which is very convenient.
She knows where the kitchen is, and what milk is. She also knows milke belongs in the frids. She stays away for a long time, too long. And she is extremely silent. O, and by the way, in this warm country we keep our chocolate sprinkles also in the fridge. Geen reacties

A simple dutch oven recipe, at Lisa's cooking Cache.

BLACK EYED PEA SOUP
1/2 pound sliced bacon
2 cups diced celery
2 cups diced green peppers
2 cups diced onions
1 can beef broth
2 cans whole tomatoes
2 cans black-eyed peas
In large Dutch oven, cook bacon until crisp; remove with slotted spoon, drain on paper towel. Add celery, green pepper, and onion to bacon drippings; sauté until soft, about 5 minutes. Drain off excess drippings. Add beef broth to Dutch oven; bring to boil. Add tomatoes and black-eyed peas; bring to boil again, then lower heat and simmer 30 minutes. Serves 10.

Autumn Chicken and Apple Stew
1 chicken, cut in parts
1/4 cup apple cider vinegar
1/2 teaspoon nutmeg
6 whole cloves
1/2 teaspoon salt
3 carrots, peeled, sliced
1/4 teaspoon pepper
6 apples, peeled, sliced
2 teaspoons Dijon mustard
1 cup shredded cabbage 1 3/4 cups low sodium chicken broth, warm 1 cup applesauce Spray large Dutch oven with vegetable cooking spray and heat over medium high temperature. Add chicken and cook, turning to brown on all sides, about 10 minutes. Sprinkle with nutmeg, salt and pepper. Spread mustard over chicken pieces; add warm broth, vinegar, cloves and carrots; bring to a boil. Cover, reduce heat to low and cook 15 minutes. Add apples and cook 5 minutes. Add cabbage, stirring into liquid. Cook, covered, about 10 minutes more or until fork can be inserted in chicken with ease. With slotted spoon, remove chicken and vegetables to warm serving bowl and keep warm. Into liquid, stir applesauce; boil on high temperature 5 minutes and pour over chicken and vegetables. Serve with brown rice, if desired. Makes 4 servings. Per Serving: 159 calories; 19.8 g protein; 2.2 g total fat; 0.6 g saturated fat; 14.8 g carbohydrates; 49 mg cholesterol; 574 mg sodium.

I am a Wood Badge trained scouter and have been working as a leader in the Boy Scouts of America for a number of years. I have worked in all four families of Scouting and currrently serve on the Boy Scout Troop Committee. Here are a couple of links to some great scouting resources online! Among my favorite hobbies is Dutch oven cooking . I have several recipes to share with you if you are interested in learning about this skill. All it takes is practice, and who doesn't like to eat? The worst you can do to your food is burn it. Otherwise, it just takes some patience and a little experience to make something really delicious. For several years I have taught a class with some friends, on Dutch oven cooking for Scouting Leaders at the BYU/UVSC Merit Badge Pow Wow in November. We give out recipes every year.

Cooking Legend
Qty. of charcoal = 2 x the Diameter of the Oven = 325º
Each additional charcoal adds 10-15º to Cooking Temperature
  • Bake = coals in rings 2:1
    ratio top over bottom
  • Stew or Simmer = coals split evenly
  • Broil = coals in checkerboard
    2:1 ratiotop over bottom
  • Fry or Boil = all coals on the bottom
Baby Back Ribs
8 lbs of ribs
2 tsps. sage 2 12 oz. beers 1 to 2 tsps. cayenne 1 cup honey 1-1/2 tsps. dry mustard 2 tbsps. lemon juice 1 teaspoon salt Marinade overnight. Barbeque the ribs on your Lodge grill turning and basting frequently, or broil in sauce at 325º F for one hour in your 12" Dutch oven.
Barbecue Sauce
3 cups tomato sauce 4 tsp. celery seed 1 chopped onion 2 tsp. sugar 6 tbsp. vinegar Mix and simmer ingredients in a 2 qt. camp Dutch Oven
