Ingredients
Pastry
  • 1 package active dry yeast 1/2 cup warm milk ("blood warm", to be exact!) 1 3/4 cup bread flour 1/2 teaspoon salt 2 tablespoon sugar 1 egg 2 tablespoon butter, melted 1 egg white, lightly beaten 2 tablespoons ground or chopped almonds

Filling
  • 2 tablespoon butter, soft 8 oz. cream cheese ('Topfen') 2 eggs, separated 1/2 cup sugar grated zest of 1 lemon 1 tablespoon golden raisins
Recipe
Pastry:
Proof yeast in warm milk.
Sift flour and salt together into large bowl.
Add sugar and stir in yeast mixture.
Beat in egg and butter and work into a dough using a wooden spoon; dough should be smooth and elastic and not stick to sides of bowl.
Cover bowl with a cloth and let rise in a warm place until double, about 1 1/2 hours.

Everyone knows the Danes are sick for furniture and other kinds of high-design stuff. But who would imagine they’d be just as obsessed about Danish food? Well, they are. Just check out some of the declarations of chef René Redzepi of noma , a high-design nouvelle Scandinavian restaurant that was recently awarded its first Michelin star, bringing the country’s total to eleven: We want to go into depth with the matters before us. We are paying careful attention to the qualities in our culinary legacy, but we also aim to generate something new and innovative. We are exploring the potential of milk and cream in today’s modern cuisine. We are developing new ways of preparing the well-known and other not so well known kinds of cereal grains. We are constantly on the lookout for berries and herbs in the natural environment, including certain varieties that other people do not generally feel like gathering. We are also interested in working with raw ingredients which have no part in any systems of formalized cultivation and which therefore cannot be obtained through the ordinary channels of distribution. And that’s not even mentioning the horse mussels, musk ox, and Icelandic seaweed.

The Delights of Danish Dining
Though not as well known as many other European cuisines, the cooking of Denmark and the Nordic region as a whole is growing in stature internationally. Danish cooking has undergone something of a revolution in the last decade or so. These days the restaurant menus of Copenhagen don't simply look overseas for influences and ingredients, instead their chefs have learned to exploit the wonderful natural resources of the Nordic larder. Fresh, seasonal vegetables; wild game; locally caught fish; and cured or smoked fish and meats are some of the hallmark ingredients that have helped shape a modern local cuisine with international appeal. The capital's restaurants lead the way
Copenhagen's restaurants have been lauded in publications as diverse as the Michelin Guide, Condé Nast Traveller, Wallpaper and the Time Out Guide to Copenhagen.   • 1 cup water or milk
  • 1 cup flour
  • 1 teaspoon salt
  • 3 large eggs
Directions: In saucepan combine butter and liquid and bring to a boil. Remove from heat and quickly stir in flour. Cool slightly. Add salt and beat in eggs one at a time until well incorporated. Drop by teaspoonfuls into hot ( not boiling ) soup or broth and cook till puffed and tender. INGREDIENTS:
  • 1 pound ground beef 1/2 pound ground pork 1/2 pound ground veal 2 teaspoons salt 1/2 teaspoon ground black pepper 2 eggs 1/3 cup finely chopped onion 1/2 cup heavy cream 1 cup dry bread crumbs 1 cup butter 1/4 cup all-purpose flour 2 cups chicken broth 2 cups sour cream 1/4 cup chopped fresh dill
DIRECTIONS:
  • Preheat oven to 375 degrees F (190 degrees C). In a large bowl, mix beef, pork, veal, salt, pepper, eggs, onion and heavy cream. With moistened hands, shape the mixture into 1 inch balls. Roll the balls in the bread crumbs until all balls are well coated. Arrange in a single layer on a large, shallow baking sheet. Melt 1/2 cup butter in a large saucepan over low heat. Stir in the flour. Gradually stir in the chicken broth. Continue stirring until thickened and bubbly, then blend in the sour cream and fresh dill.

If you wish us to pass a message on email us Contributor Martin James Dancer and Graphic artist Martin James was born in Christchurch, New Zealand, on 22 September 1961. He attended the New Zealand School of Dance and in 1981, became a ballet dancer with the Royal New Zealand Ballet. The following year he was awarded the Queen Elizabeth II Arts Council Grant for study in the United States. In 1985, he married the former dancer Adrienne Jane Terehunga. Their daughter, Rachael Unaiiki, was born in 1990, and their son, Marcus Sebastian Tane James, in 1992. Shortly after his marriage in 1985, Martin joined the English National Ballet, becoming the Company´s principal dancer from 1987 until 1990. He has since joined the Deutsche Opera Ballet (1990 to 1994) and the Royal Danish Ballet (1994 to present). His major performances are listed below:

    (e-SoupSong 15: July 1, 2001) ONCE UPON A TIME, Pippi Longstocking had a fantasy about American children walking in gutters. "It's only in this country [Sweden] that people have got the notion that children shouldn't walk in gutters. In America the gutters are so full of children that there is no room for the water. They stay there the year round. Of course in the winter they freeze in and their heads stick up through the ice. Their mothers have to carry fruit soup and meatballs to them because they can't come home for dinner. But they're sound as nuts, you can be sure of that." Pretty crazy, huh? Well, actually turns out to be a perfect symbol for the whole subject of fruit soups. Food scholar Alan Davidson calls fruit soups "perplexing," "an anomaly"and that's an understatement. I knew when I started that cold fruit soups were popular in a few strange and seemingly unconnected places: Scandanavia and Israel; the Baltics and Central Europe; Russia and the Caribbean. Then, if you add in traditional hot fruit soupsespecially ones with meat in themyou can also factor in Iran, parts of the Mideast, the Caucasus, Central Asia, and China. Finally, you can scroll back about 700 years and recall that in medieval Europe, fruits and spices were stuffed into soups and lots of other savory things. But nowhere else in the world, at least in a traditional sense. Not Japan, Korea, or Southeast Asia. Not Australia, the Philippines, or the East Indies. Not India nor Africa (except for the occasional banana in Tanzanian or Senegalese soups). Not the British Isles or western Europe, unless you count tomatoes and cucumbers as the fruits they are (in which case you'd include Spain's gazpacho). Not North America or South America (with a few funky exceptions that prove the rule).
