Tuesday, September 20th 2005 Due to short summers and cold harsh winters, Danish cuisine is heavy and filling; much like other Scandanavian countries. Although some might say their cuisine is something to be desired compared to flamboyant foods from other countries, many of the dishes are great comfort food.Until the mid 19th century, Danish people had to rely on foods that could withstand the long winters; root vegetables, pickles or preserves, and smoked meats. Therefore many traditional dishes are based upon those types of ingredients. Pork, plums, cream, butter, carrots, potatoes, seafood, apples, onions, cheese, beer and bread are dominate ingredients in Danish cooking. Pickled herring is quite popular in Denmark. 1/2 Teaspoon Salt

Recipe Based on: Wonderful, Wonderful Danish Cooking by Jensen
12 Large Beets
2 Pounds Short Ribs
1/2 Cup Lemon Juice
1/2 Cup Sugar
1 Teaspoon Allspice
1 Medium Onion thinly sliced
Salt to taste
1/2 Teaspoon White Pepper
Sour Cream for garnish
Wash beets and scrape them. Do not peel them. Cut beets into small chunks. Place in kettle with remaining ingredients except sour cream. Cover with water, cover and simmer for 2 1/2 hours over low heat. Strain through a sieve. Serve topped with sour cream.

Far-sighted farmers crossed Lincoln, Leicester, Wensdale CotsWold, Hampshire Down and other breeds to form the origin of the Texel breed. This breed quickly spread throughout many countries. This is why Texel sheep from all countries look alike. However, cultural traditions as well as climate and nature have influenced the breed, so that each country has developed its own caracteristic Texel sheep.

What to do, what to do?
I'm at a loss for inspiration food-blogging-wise these days. I think (hope?!) you all know what it's like - it's not because you don't cook, it's just because - well, maybe what you cook are old standby's, maybe they look goddam-awful, maybe you forgot to take the picture (although the Boyfriend has started joking that he never gets to eat before I get the perfect shot) - maybe your thoughts are elsewhere, or as in my case, should be elsewhere (exam, yes, again. Not until another two months, but our school has made it their case to make sure we only have 4 days for catching up on all the "insert cursing phrase" we didn't have time to read before exam is actually there - so we have to start now to try and get through all of it)
I thought I had things planned, with pictures already up-loaded and ready for a couple of catchy words, but alas, it's just not so much fun posting about things you've done a looong time ago - the memory of tastes, textures and trials during their making are not as crisp and fresh as they were when you'd just done them, hence the wording of it, not very fresh and crisp either. I want to post about cake today, not the Jerusalem artichoke gratin from Jamie Oliver I tried the other night...

  • 1 package active dry yeast 1/2 cup warm milk ("blood warm", to be exact!) 1 3/4 cup bread flour 1/2 teaspoon salt 2 tablespoon sugar 1 egg 2 tablespoon butter, melted 1 egg white, lightly beaten 2 tablespoons ground or chopped almonds
Filling
  • 2 tablespoon butter, soft 8 oz. cream cheese ('Topfen') 2 eggs, separated 1/2 cup sugar grated zest of 1 lemon 1 tablespoon golden raisins
Recipe
Pastry:
Proof yeast in warm milk.
Sift flour and salt together into large bowl.
Add sugar and stir in yeast mixture.
Beat in egg and butter and work into a dough using a wooden spoon; dough should be smooth and elastic and not stick to sides of bowl.
Cover bowl with a cloth and let rise in a warm place until double, about 1 1/2 hours.

Welcome to my site! Here is a collection of over 600 Danish recipes. It started out from my interest in where my dad's family came from, and my mom's love of cooking. I've collected these recipes over a number of years from numerous sources. Below you'll find links to various types of recipes. The formats are simple, and I'm just not that fussy about my site's appearance (can you tell?), although if anyone has image files of any of the recipes here, I'll put them in and give credit for them if you wish. I'd be very interested in backgrounds on any of the recipes here, stories anyone may have about any of them, new recipes, or Danish food history in general.
For a time I've had special characters hard-coded, like fractions and certain danish characters. I've now converted them to HTML symbols, so they should be viewable on Macs as well as Intel-based machines. Let me know if you still have trouble.

6 ounces lean middle bacon, rind removed and finely chopped
1 small onion, finely chopped
3 tsp butter
3 tsp plain flour
8 fluid ounces lager
8 ounces grated Havarti cheese
8 ounces grated Samsoe cheese
Sweet and sour gherkins and chunks of light rye bread for dippers
Instructions Put bacon, onion and butter into a saucepan and cook until bacon is golden and onion is soft. Stir in flour, then gradually add lager and cook until thickened, stirring frequently. Add cheeses, stirring all the time, and continue cooking until cheeses have melted and mixture is smooth. Pour into a fondue pot and serve with gherkins and chunks of light rye bread. For the Danish:
3/4 cup 1 percent cottage cheese
1/3 cup sugar 1/3 cup 1 percent milk 1/4 cup canola oil 1 teaspoon vanilla extract 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt For the Filling: 4 ounces reduced-fat cream cheese 1/4 cup sugar egg , separated 1 teaspoon grated lemon peel 1 teaspoon vanilla extract 1 cup fresh or frozen blueberries 1 tablespoon water For the Glaze: 1/2 cup confectioners' sugar 2 teaspoons lemon juice RECIPE METHOD In a blender or food processor, cover and process cottage cheese until smooth. Add sugar, milk, oil and vanilla; process until smooth. Combine the flour, baking powder and salt; add to cheese mixture. Process just until dough forms a ball (dough will be sticky). Turn onto a floured surface; knead 4-5 times. Place in a bowl; cover and refrigerate for 30 minutes. In a mixing bowl, beat cream cheese and sugar until smooth. Add egg yolk, lemon peel and vanilla; mix well. Turn dough onto a 17-in. x 13-in. piece of parchment paper. Roll into a 16-in. x 12-in. rectangle. Transfer with paper to a baking sheet. Spread cream cheese mixture lengthwise in a 3-1/2-in.-wide strip down center of dough; sprinkle with blueberries. On each long side, cut 1-in.-wide strips about 3-3/4 in. into center. Fold alternating strips at an angle across berries. Pinch ends to seal and tuck under. Beat egg white and water; brush over dough.

1/2 cup white vinegar 1/2 tablespoon white peppercorns bay leaves 1/2 tablespoon dried dill seed 1 tablespoon dried mustard seeds 1 pound firm-fleshed boneless, skinless white fish fillets For the Cucumber Salad: 1-1/2 cups white vinegar 1/2 tablespoon dried mustard seeds 1/2 tablespoon white pepper corns bay leaves 1/2 cup brown sugar 1/2 cup water cucumbers , peeled and thinly sliced RECIPE METHOD TO MAKE THE FISH: In a deep saute pan, combine the water, vinegar, peppercorns, bay leaves, dillseed, and mustard seeds. Bring to a boil. Reduce the heat and add the fish. Simmer for 8 minutes. Remove the fish and keep warm. TO MAKE THE SALAD: In a medium saucepan, combine the vinegar, mustard seeds, peppercorns, bay leaves, brown sugar, and water. Bring to a boil and boil for 3 minutes. Strain over cucumbers. Serve the fish with boiled new potatoes and lemon wedges, and the cucumber salad. Choose from over 9,000 cookbooks

'Danish cuisine?' you would ask, 'isn’t this site about Dominican cuisine?' Yes, indeed, but this hasn’t stop us from writing about Caribbean cuisine; and the fact that we love and promote our vernacular cuisine does not mean that we do not enjoy exploring what lies beyond our little chunk of island. Besides, I have another good reason to write about Danish cuisine, but we’ll get there later.
A good start for this would be to tell you how Denmark is alike and how it is different from the Dominican Republic. Despite the abysmal difference between Denmark and the Dominican Republic it isn’t hard to find the two things that are common to both countries. Denmark is roughly the same size as the Dominican Republic (if we ignore Greenland of course). As is the Dominican Rep., Denmark is almost entirely surrounded by water, Denmark more so because it is comprised by the mainland, two large islands and countless smaller islands; so many that even those big enough to be visible in a map can’t be counted with my fingers and toes.
And the similarities end there. Despite its climate Denmark is a fertile country with a flourishing agriculture and which exports dairy products as far as the Dominican Republic (a very popular brand of powdered milk in D.R. is in fact Danish).

Basic Danish Dough (Adapted From Joy of Cooking)
Eggs, beaten cups Warm milk (about 110 Degrees) ounce Package of active dry yeast cups Bread flour teaspoon Salt tablespoons Sugar cups Butter teaspoons Ground cardamom Preheat oven to 375 degrees. In a mixing bowl whisk the eggs, milk and
yeast together. Let the mixture sit for 15 minutes under refrigeration.
Using a pastry blender, blend the flour, salt, sugar, and cardamom
together. Work the yeast mixture into the flour. Knead the dough until
smooth, about 2 minutes. Form the dough into a ball and allow to rest,
about 20 minutes in the refrigerator. Beat 1 1/2 cups butter until smooth.
Turn the dough out onto a floured surface and roll into an oblong about 3/8
inches thick. Dot 1/3 of the butter over 2/3 of the dough. Fold the *

1/2 cup melted butter
1/2 cup brown sugar packed
1 teaspoon cinnamon
16 ounces can applesauce
1/2 cup chilled whipping cream
Combine zwieback crumbs with melted butter, sugar and cinnamon. Spoon applesauce into 1-quart soufflé or baking dish. Top with crumb mixture. Place baking dish in slow-cooking pot.
