This site contains information on the industrial utilisation of lactococci and other lactic acid bacteria, their bacteriophages, natural and 'added' antimicrobial systems in milk, and factors influencing the quality and yield of cheese. There are also sections on modelling in food technology, and modified atmosphere packaging. Some general health information including reference to allergy and food intolerance, related mainly to dairy products, is also included.
The information on antimicrobial systems includes material on the exploitation of the lactoperoxidase system in milk replacer manufacture.
Calculators for determining the theoretical yield of cheese (Van Slyke) , the volumes of skim and whole milk required to standardise milk to a required fat content and casein and fat retentions have now been included.

10 oz (300 g) pkg of frozen unsweetened raspberries, thawed 12 oz (340 g) bag fresh or frozen
cranberries 1 cup granulated sugar 250 mL 7 g envelope unflavored gelatin 1/4 cup cold water 50 mL 3/4 cup plain yogurt 175 mL 2 cups Real Whipping Cream 500 mL
  • Press raspberries and juice firmly with back of spoon, through a sieve into saucepan (discard seeds). Add cranberries and sugar. Cook over medium heat, stirring frequently and crushing cranberries until smooth. In a small bowl, sprinkle gelatin over ¼ cup (50 mL) water; let stand 2 minutes. Stir into hot cranberry mixture. Refrigerate, stirring occasionally until thickened slightly, about 1¼ hours. Stir in yogurt.

    Validation of Food Safety Programs Under the Code of Practice for Dairy Food Safety (COP), all participants in the dairy industry are required to have a food safety program approved by DFSV. DFSV validates the food safety programs used in the dairy industry by obtaining evidence that the elements of the program are effective. DFSV’s approval of food safety programs (FSP) must ensure they:
    • Address food safety risks; Comply with Code Of Practice for Dairy Food Safety and legislation; Comply with export/trade requirements; and Can be audited for compliance with food safety standards.

    The report The case against cages , says both conventional and so-called 'enriched' battery cages, which will still be allowed from 2012 under an EU Directive, are inherently cruel to laying hens. Furthermore, research published in the new report found that converting to higher welfare multi-tier barn systems is similar to the cost of moving to poor welfare 'enriched' cages - working out at between 1p and 49p more per bird depending on the size of the unit and whether or not the farmer has an existing building.
    The EU Directive is expected to be reviewed by member states early next year. The RSPCA wants to see all battery cages for egg-laying hens replaced with barn or free-range systems that provide better welfare standards.
    "Claims by the egg industry of excessive costs preventing a faster move towards higher welfare egg production - unlike more progressive policies in Austria, Germany and Switzerland - do not add up," says David Bowles, the RSPCA's head of the external affairs.
    "No longer can the government stand behind research quoting industry averages and compare cage systems with far more expensive free-range systems. Instead of moving to 'enriched' battery cages, egg producers can convert to multi-tier barn systems which are economically viable and can provide a better life for millions of hens.
