Cass-Clay Creamery also carries a full line of 8 oz. carton milks including Vitamin D whole milk, 2%, 1%, fat free skim, 2% Swiss chocolate, fat free chocolate skim and 6 oz. cartons of Cass-Clay 100% Florida orange juice and 6 oz. pure apple juice. Cass-Clay Creamery produces cultured products for the food service industry. This line consists of 5 pound packages of regular sour cream, light sour cream and sour cream with chives. deliver on dairy proteins Dairy producers often find themselves investing in new technology on the farm, and through their checkoff they also are investing in nutrition and product research. The goal? The same as for all research and promotion efforts — increase the demand for milk and its components. The investment includes not only basic research, but then, education — telling food and beverage developers about the nutritional benefits of dairy products and ingredients to meet consumer demand for convenience and on-the-go products. “Today’s consumer wants meals that are not only convenient, but healthier than ever,” said Neil Hoff, Dairy MAX president and Windthorst, Texas, dairy producer. “Most important, they want products offering great taste. Use of dairy as an ingredient in new foods and beverages helps to meet consumer demand and encourages lifelong dairy consumption.” Examples include innovative positioning of the nutritional and functional benefits of whey protein, a high quality protein that has the highest biological value of available food-grade proteins. New research indicates that whey protein can help restore muscle after recovery from exercise, while other studies have demonstrated that specially processed whey protein can lower blood pressure. At the recent annual meeting of the Institute of Food Technologists, food and beverage formulators sampled products that use whey proteins in new ways — a whole grain apple-cranberry muffin; a clear mango-flavored isotonic sports drink; and a cheesy, protein-enriched snack that included whey protein along with five other dairy ingredients.

    Plan Review Section
    The Division of Food Protection provides a Central Plan Review Section, which performs a comprehensive review of plans and specifications submitted on new and remodeled food service and retail food store establishments to be constructed in South Carolina. For information on submission of plans contact the Division of Food Protection at (803) 896-0640. Is there a fee for plan review services? No. This is a free service the Division Of Food Protection offers to assist owners of new or remodeled facilities in making sure that the construction aspects of a retail food establishment meet the applicable requirements of Regulation 61-25 before construction. The local health authority will receive all of the same information that the owner or his/her representative receives from the plan review section; This should assure that everyone involved with the project will be on the same page during construction. The local health authority will take this information and perform site inspections of the construction and then eventually a permitting inspection of the facility. Is plan review required in South Carolina?

During 2002, UDIM's Dairy Image Program continued to build trust and confidence in the safety and healthfulness of dairy foods.
Media Outreach
UDIM keeps the medical/health media informed of new research relating to the health benefits of dairy foods, both on a regular basis and in the event of breaking news. By the end of 2002, six Breaking News Alerts and six Bimonthly News Alerts will have been distributed to the medical/health print and broadcast media. Stories included undiagnosed osteoporosis, the nutrition contributions of flavored milk, and dairy's role in reducing the risk of insulin resistance syndrome and colon cancer. Two media campaigns were implemented this year as well: childhood obesity in the spring and "Tailgate Touchdowns: Nutrition Scores Big" in the fall in coordination with UDIM's Cheese Food Publicity Program.
UDIM also stands ready to protect the image of dairy products. The Grand Rapids Press and the Penasee Globe (Wayland) interviewed staff for articles on PETA's "got sick kids?" billboard campaign. The information provided by UDIM helped to set the record straight by reminding readers that PETA's nutrition advise is not in line with current government guidelines or the recommendations of reputable health and nutrition groups. The bottom line: Parents should get their family's nutrition advice from reputable health professionals.
Health Professional/Medical Outreach
Health professionals trust in and depend on the current, science-based nutrition information and education materials developed by the Dairy Council to educate and counsel their clients and patients. "The Dairy Council! I use your materials all the time— they're wonderful!" is often heard at health professional meetings and conferences. To promote these resources, UDIM staff manages local coalition building, speaker sponsorships, conference exhibits, presentations, and advertorial placements in health professional newsletters.
