ESE Dairies, is a subsidiary of East Side Entrees, a company that specializes in marketing and distributing food products to more than 3,000 school districts nationwide. Recognizing the challenge that schools face in persuading children to consume good-for-you products, ESE Dairies set out to provide a fun, appealing product that would encourage kids to drink more milk. Its innovative answer was the new Shake ‘n Sip brand of flavored milks and milkshakes, packaged in aseptic cartons by global packaging technology leader Tetra Pak. With favorite flavors and exciting graphics featuring popular cartoon characters, Shake ‘n Sip products encourage kids to drink more milk. The shelf-stable packaging helps schools to increase the occasions when wholesome milk beverages can be served to their students. Together ESE and Tetra Pak worked to develop the products that were launched in the spring of 2003 in national school foodservice markets.

    Nutrient Content of Dairy Foods
    Many dairy foods such as yogurt, other cultured milk products, and ice cream are important sources of many of milk's nutrients, including high-quality protein, calcium, phosphorus, magnesium, riboflavin, and vitamins A and B12.
    In general, the nutrient content of cultured and culture-containing dairy foods is similar to that of the milk from which these products are made. However, factors such as the type and strain of bacteria, milk (whole, lowfat, nonfat) used, fermentation conditions, storage, and other treatments such as the addition of milk solids-not-fat, sweeteners, and fruits (e.g., in yogurts) can influence the nutrient composition of cultured and culture-containing dairy foods. Recent regulations allowing yogurt to meet all or part of the meat/meat alternate requirement for child and adult nutrition programs attest to the high nutrient value of this dairy food.
    The nutrient content of ice cream varies as a result of such factors as the milk fat content, and the addition of dairy and other ingredients (e.g., milk solids-not-fat, stabilizers such as caseinates and hydrolyzed milk proteins, sweeteners). The Nutrition Facts panel on product labels indicates the nutrient content.

Albrecht, Extension Food Specialist Previous Category Catalog Order Info Food stands, bake sales, bazaars and other food sales provide good opportunities for organizations to raise money, but the food you prepare and offer for sale must be safe for the consumer. When customers buy food, they have the right to expect that it will be safe and wholesome. If customers are unhappy with the products they purchase from you, they will not be back. Word-of-mouth advertisement from a bad experience may hurt future business. Sponsoring organizations are responsible for the safety of the food products they offer for sale. The Nebraska Food Service Code has rules for Temporary Food Service Establishments. Food stands, bake sales, bazaars, and community suppers could be inspected by the Department of Agriculture or Department of Health under this ruling. Bake sales and church/community suppers are not routinely inspected, but commercial food stands at county fairs and other events are. If complaints are made or if a reported illness results from food sold at an event, inspection and/or investigation may result. A "Temporary Food Service Establishment" is defined as a food service establishment that operates at a fixed location for a period of time of not more than 14 consecutive days in conjunction with a single event or celebration. If your food sale event extends beyond this definition, your event and facilities will be regulated by the appropriate agency (either the Nebraska Department of Agriculture or your local health department).
