This Czech recipe hides its spicy Hungarian origins

COURTESY PHOTO Fresh peppers and rich cream brighten this Central European classic. At our restaurant, we're trying to serve traditional Czech cuisine in a modern way. Part of my own inspiration comes not only from traditional, historical Czech cooking, but also from foods of the entire former Austro-Hungarian Empire, of which Bohemia was part. In earlier times this dish was cooked with a hen. But I like to use baby chicken, as the meat is more tender. In the traditional recipe, the hen is simply boiled. However, I prefer to poach it, then roast it in the oven to give it a pleasantly crispy exterior. Another difference from the original recipe is that I use fresh peppers for the sauce instead of powdered paprika. It adds more freshness, the taste is more intense and the sauce is lighter. With fresh peppers, the cream sauce actually binds itself, while with powdered paprika, you'd need to add flour. Ingredients
  • 4 baby chickens around 250 grams (8 ounces) each
  • 200 grams cut root vegetables (carrots, celery root, etc.)

"I didn't know how to cook a thing when I got married," she conceded. Since then, she has become known for her great Czech cooking and catered meals she makes from scratch. Gloria has been serving food to the community for a long time, and it has made her the cook she is today. She first worked at a nursing home, where she learned to cook to taste and use fresh foods.
"I've always said each thing I did kind of led to one another," Gloria says. "We used to eat Czech meals all the time, especially when the kids were growing up. I can't remember a Sunday that we didn't have roast duck and dumplings," Gloria says.

Dan Levine gives Prague's food forecast, offering an advanced dispatch on a restaurant scene that's really beginning to cook. ess than six years after the revolution, a record number of eateries are up and operating in Prague-close to 2,000 at last count. Despite the rapidly expanding number of good dining rooms, however, there is still no world-class restaurant in this city. Top-of-the-line dining in the capital is so scarce that Michelin hasn't yet bothered to send their respected ratings professionals in our direction. Precious few Praguers-including those in the food industry-can name a favorite local chef, and none of Prague's restaurants have a culinary reputation that extends beyond the country's borders. When Alan Levy dubbed this town the "Left Bank of the Nineties," he was certainly not thinking about gastronomy.

In any given week, 95 percent of the jobs listed in The Prague Post are for English teaching positions. While finding a position without a TEFL certificate is not difficult, the training will help you to know what to do on that first day in front of a new class. Teaching private classes can be more lucrative, but it will be difficult to get your residency permit without an actual employer to back you up. If you do work illegally, just be sure you cross a border before your tourist visa expires. The Prague Post

FOOD AND DRINK IN THE CZECH REPUBLIC AND SLOVAKIA The two republics have several cultural common denominators. Meat and alcohol consumption are among the greatest of these shared traits. If you are an indiscriminate carnivore who likes to wash down well-done cuts of meat with copious quantities of beer, follow your palate's desire right into the land-locked heart of Eastern Europe, where menus read all turf and little surf. Taste is relative, though. If you come from a meat-and-potatoes background, you might not mind the food. A Czech fellow in his mid-forties—a former dissident who never signed on with the communist party—explained:
    "Because I am a translator and an interpreter, I had the opportunity to leave Czechoslovakia prior to the revolution. I could have gone to France or Sweden, but I would have missed Czech cooking, and that was one of the main reasons I stayed."
Meat and potatoes, or versions thereof, are the staples of the Czech and Slovak diets. Stewed meat served with dumplings is very common. Given the very conservative use of spices, most dishes are relatively bland. Vegetables are given short shrift in both countries, while dairy products are common ingredients in many dishes.
