Authentic Cuban food is a melting pot of the traditional cooking recipes from the four continents of South America, Africa, North America and Europe which combine cuisines to produce a rich, mouth-watering and unique style of cooking. By most historical accounts, there is agreement that barbecue originated in the Caribbean islands before being brought to the Cuba and the Carolinas by slaves. The tradition continues in the Caribbean today as meat roasted over wood coals is still enjoyed on the island of Cuba, and beyond. Lechón de Asado (roast pig) and Pollo al Carbon (BBQ Chicken) are commonly served throughout the island. Typical Cuban dishes often contain black beans, white rice, yellow rice, fried sliced banana (plantain), garlic, and citrus marinades. Olive oil and garlic marinades are often used as sauces. Meat is often prepared roasted and in "creola" style marinade. In Cuba and in Cuban cooking, as it was and as it is, there are two things that are not often seen: creams and milk products and cheeses in heavy sauces. These products, popular in Europe and North America are expensive to purchase and often difficult to store on the island. We strive to provide you with the foods enjoyed by the common families, seen every day as we travel about the beautiful countryside.

Columbus came to Cuba in 1492 which at the time was inhabited mostly by the Arawak Tribal people. By the early 1500’s a full scale invasion of Cuba was on the way by the Spaniards. The Arawak were systematically killed, and African slaves were imported to work the sugar cane fields. In 1898 Teddy Roosevelt and the Rough Riders drove the Spaniards out of Cuba. Although initially, a very welcome liberator, the United States soon became another unwanted foreign ruler. In 1909 US troops left (mostly) and in 1933 Batista became dictator. He was overthrown by Fidel Castro in 1959. Later we get to the Kennedy era and the Bay of Pigs event which is where most American schools pick up on Cuban history. And what does any of this have to do with food? I just thought you should know a little bit more of the origin of the food you eat. Black Beans

The ajiaco is a Cuban typical food, a nutritious and thick broth. Moreover, they frequently consumed fish, other sea's product and terrestrial animal's meat like: iguana, hutia, crocodile, different birds. Later on, most of those aliments were rejected, but others took an important place in the food, not only for the new population, but for the rest of the people of the world, among them cassava (mandioc), casabe or corn. Regarding to Spanish, since the conquest times, they brought the domestic animals, which did not exist in the island, those were reproduced rapidly. Also, different cultivations were introduced from many part of the world such as: the sugar cane, rice, some varieties of vegetables, tubercles, fruits, species, wheat, coffee, cocoa and potatoes.

More Fat for the Fire You people seem to enjoy hearty recipes full of cholesterol, so I'll tell you what I'm cooking today. Boliche. It's a sort of pot roast or something. Cuban. Cubans cut up cows differently, perhaps so they can save certain parts for Santeria, and one thing they end up with which we don't is boliche. It's a penis-shaped roast, sort of like a lean, tough tenderloin. It's like three inches thick and up to maybe fourteen inches long. But don't let it make you self-conscious, guys. I have always loved this stuff, but I never found a good authentic recipe. So I made up an inauthentic recipe. It's a cheap cut of meat, but after it's been in the oven for four hours, it comes apart like a French car in a stiff breeze. INGREDIENTS 1 boliche (some sort of a big long roast, shaped like a tongue)
3 chorizos
3 peeled baking potatoes
3 huge onions - NOT VIDALIA
2 red bell peppers
4 tbsp. minced garlic

Chicago Tribune, Sunday, April 27, 1997 "When Yuca first opened eight years ago in a posh setting in Coral Gables, it, too, was quite an experience. It seemed so different, so chic, so stylish compared to Miami's other Cuban restaurants.
Its name really seemed to stand for young, upwardly mobile Cubans, rather that what its namesake (yucca, as it actually is spelled) is: a starchy root vegetable boiled or baked and served with garlic and onion seasoning.
Since the beginning, the goal for the restaurant, says Cuban-born Efrain Vega, 45, was to take Cuban cooking and integrate it with California and French influences. The hope was also to bring more 'balance' to Cuban cooking and less filling, less starchy dishes.
Thus was born a vibrant strand of Nuevo Blue Sky Eats. Take yucca stuffed with a picadilo (beef stew) of wild mushrooms on a bed of sautéed spinach with beef and carrot vinaigrette ($19). A version of the traditional Zarzuela here ($31) is fresh fish, lobster, shrimp and fresh mussels in a rich black bean broth, resting on strips of sweet plantain pasta.
