All About Cuban Cooking
January 21, 2000:
All About Cuban Cooking
by Josefina Alvarez AACC Publisher, $14.95 (paper)
With Cuba in the news more and more these days, the debut of this self-published bilingual cookbook by Cuban culinary arts instructor Josefina Alvarez couldn't be more timely. Alvarez includes all the well-known staples of the Caribbean island's national cuisine, everything from the ever-present sofrito (an aromatic vegetable mixture used to flavor many dishes) to arroz con pollo (chicken and rice in a pot), ropa vieja (shredded beef), and even cuba libres (rum and Coke). The first 11 chapters feature the Spanish versions of each recipe, and the second half of the book presents them in English. While the book is very simply produced, with no color pictures or fancy typefaces, its value is definitely in the authenticity of the food. Cuban food is not known for great diversity or overt spiciness, but the hearty peasant food is flavorful and satisfying. The chapter on appetizers didn't offer much to tempt me, but I found several recipes in the rice section that got me moving toward the kitchen. The Arroz con Pollo Cubano reminded me somewhat of the delicious version I've often enjoyed in the home of Puerto Rican friends, though I don't think their recipe includes either beer, wine, or saffron as this one does. The intriguing

Copies of the book reprinted in the United States without her permission, Villapol once complained still circulate in Spanish-language bookstores in Miami-Dade County. A home economist, Villapol became well versed in making do with little while studying in wartime England. She put the skills to work decades later in what became her greatest challenge and a controversial role: teaching Cubans how to cook without meat, milk and a whole range of spices indispensable to traditional Cuban cooking.

In general, the ingredients in Cuban cooking are not exotic or difficult to find. Some specialty items may be found in Hispanic markets. Cuban bread, unfortunately, is not to be found outside Tampa or Miami. Much like the San Francisco sour dough bread, Cuban bread is imitated elsewhere, but never perfected. Italian bread or French bread are acceptable substitutions, but they are not the same. Fresh vegetables, meats, and herbs are a must. Spices may be dried, but everything else must be fresh. Instant rice should never be substituted for long grain white rice. The recipes found at my site are simple to prepare, everyday family style recipes that would be typically served in a Cuban-American home in Tampa or Miami. Both cities have extensive Cuban populations.

Cuba: a Land with Colorful and Delicious Natural Foods

Cuba is not only a beautiful island surrounded by blue waters and white sand, but it is a haven for tropical delights. Plantains mangos guanabanas (called soursop in other countries), mamoncillos, mameys pineapples coconuts tamarinds ... frutabomba (commonly known as papaya), Texas-sized avocados , and many other of nature's decorations adorn the many variations of trees, as well as serve as the basis of inspiration for many Cuban Dishes.
To learn about other tropical fruits, go to University of Floriday, Sarasota County Page. The Spanish Influence Not only is Cuba blessed with nature's candy, but Cuba's main dishes are filled with flavors that perfectly combine in your taste buds. Some basic Spanish ingredients typically found in Cuban cooking are: olive oil, green olives, garlic, onions, green bell peppers, saffron, oregano, bay leaves, and cilantro, to name a few. Cuban Cuisine
C uban Cui sine Has Been Influenced By Spanish,
French, African, Arabic, Chinese, and Portuguese cultures.
A Typical Cuban breakfast consists of a tostada and Cafe Con Leche. The tostada is a portion of Cuban bread which is buttered then toasted on an electric grill. The cafe con leche is a combination of strong, espresso coffee with warm milk. Cubans break the tostada into pieces, then dunk them into the cafe con leche, as Americans would dunk their doughnuts into their coffee. Additionally, some may eat ham croquetas, smoky creamed ham shaped in finger rolls, lightly breaded, and then fried. For those on the run, with no time or desire to eat, a shot of cafe cubano, Cuban coffee, will revive the dead.
Lunch consists of Empanadas, Chicken or Meat turnovers, or Cuban sandwiches. The sandwich could be a media Noche (midnight sandwich), consisting of a slice of Pork, Ham, and Swiss cheese and then topped with pickles and Mustard on Sweetened Egg Bread. The Pan con Bistec is a thin slice of Palomilla steak on Cuban bread garnished with Lettuce, Tomatoes, and Fried Potato Sticks. One may also order a side of Mariquitas, thinly sliced plantain chips, to accompany their hearty sandwich.
