Welcome to Paru's! We specialize in the cuisine of South India, where cooks typically use rich spices and aromatic herbs to transform intricate conjurations of vegetables, lentils, and rice into tasty meals that are as fulfilling as they are filling. Masala Dosa, Idli, Uppuma, and Sambar are the mainstays of a style of cooking with which all India, and now much of the rest of the world, has fallen in love. Paru's was first established in Washington, D.C., in 1975, after my family had immigrated from India. They wanted to engage in a business that would harmonise with their beliefs and their life-style, and so my father combined his entrepreneurial skills with my mother's talents in cooking and plunged boldly into the difficult job of keeping a small restaurant running seven days a week. Following the success of that first venture, we moved to California where our present location opened in March of 1979, and we've been here on Sunset Boulevard ever since. As more and more people have become aware of the physical, social, spiritual, and environmental benefits of the vegetarian diet, Paru's has become somewhat of a landmark both to local vegetarians (as well as non-vegetarians who simply like the food!) and to visitors from abroad. Shhh! Don't tell nobody, but this recipe has some, well, rather French roots. Naw, not celeriac or such, I mean the origin of the recipe. I realize that the French aren't too popular in these parts since their government declined our invitation to Shock and Awe in Iraq; however, I'll let someone else go down to Louisiana Cajun country to talk about French folks being "pussies and can't fight∑. I've seen some men named Michele that I ain't gonna mess with!
This is basically the recipe for vichyssoise (pronounced "cold tater soup"). However, this is served hot and isn't pureed through a blender and is a bit thicker and contains some country ham, carrots, and celery. You can mess with this recipe in many ways and it will almost always turn out good. It's quick, homemade comfort food that everybody will eat.
First, gather three dozen snails and slugs.

3 eggs
1/3 C. water
2 C. self-rising flour
1 t. pepper
1 to 2-1/2 pound chicken, cut into pieces seasoned salt
Crisco shortening for frying
Beat eggs with water. To just enough self-rising flour to coat all the chicken, add black pepper. Dip seasoned chicken in egg; coat well in flour mixture. Fry in moderately hot shortening (350° F.) until brown and crisp. Remember that dark meat requires longer cooking time (about 13 to 14 minutes, compared to 8 to 10 minutes for white meat).

Ingredients 3 Family Size Tea Bags 2 Cups Of Cold Water 1 Cup of Sugar Directions We in the south make the best iced tea you'll find. Maybe it's how it's done, or maybe it is the water in the south, or maybe it's just that a southern belle has put a lot of TLC into making the tea. Who knows! We recommend Luzianne Tea Bags if available. Place the two cups water in a pot and add the tea bags. Bring to a boil, do not continue boiling. Remove from heat and let steep. Pour warm tea into empty pitcher. Add the sugar and stir until the sugar is dissolved. Fill remaining pitcher with cold water. Optional - some women say they use less water and add ice to the tea.

Ingredients 3 family sized tea bags a pinch baking soda (about 1/4 teaspoon) 1 to 1 1/3 cups of sugar Directions Here is my never fail sweet tea...
Everyone (even yankees) loves it.
Bring 3-4 cups of water to a boil. Add a pinch of baking soda to the water and add 3 family sized tea bags. Remove from heat and cover. Allow to sit for at least 10-15 minutes. Pour into gallon pitcher and add sugar. Then fill with cold water. Refrigerate.
*the soda takes out the bitterness and darkens the tea....this small amount doesnt change the taste.

A unique way of life exists in the foothills of the Great Smoky Mountains. Subsistence has changed little for three centuries since settlers first arrived in the area in the early 1700's and discovered land that offered them abundant resources and plentiful agricultural opportunities. During the peak of the 1720-1770 immigration from Scotland and Ireland, the natives of the area, the Cherokee Indian tribe, began their own migration to the south and west. T he greatest factor that affected life for these settlers was the procurement, preparation, and preservation of food and the staple crop absolutely essential to survival was corn. This most important part of daily life was adopted from the displaced Indians, who taught the pioneers how to grow, process, store, and eat corn. Although every family had some type of vegetable garden and did hunt, in times of need these products were traded in order to get corn, which was used to make everything from bread to whiskey. The potato was another New World staple readily accepted by the Appalachians. W ild game were not simply an important protein source; every part of the animal was useful in some way: clothes, storage containers, and blankets from deer, bear, and rabbit skins; clothes hangers and gun parts from antler; bear fat for frying food. The most popular game animals, rabbits, raccoons, and opossum, were crop pests.

San Francisco: Women's Co-op Printing Office, 1881. This volume is the third of the five major works by African Americans we have chosen to represent their contributions to American cookery. See also: That this book was written at all and that it has survived is a marvel. Mrs. Fisher, born a slave, somehow found her way to San Francisco soon after the Civil War and, by dint of talent and hard work, created a life and business there. She and her husband created a business manufacturing and selling "pickles, preserves, brandies, fruits, etc." She was proud of a Diploma awarded at the Sacramento State Fair in 1879 and two medals awarded at the San Francisco Mechanics' Institute Fair, 1880, for best Pickles and Sauces and best assortment of Jellies and Preserves. Mrs. Fisher seems to have been supported by many of the leading business and professional figures in the San Francisco and Oakland areas. Perhaps it was these citizens who helped her to write and publish her book as both she and her husband were illiterate. We are grateful to whomever it was that helped her to publish these splendid recipes. She hints that they were written "at my dictation." This may account for a few interesting variant spellings and names of dishes.

I suppose technically he was correct, but as long as your doctor isn’t getting really mad at you, you should learn some techniques from Southern cooks. Slather some comfort on that food, and enjoy. I’ve seen a vintage cooking show where the cook was struggling to get the lid on the pot against all the crawdads and crabs struggling to get out. This is proper – you want to know the seafood is fresh. Only in Louisiana is boiling a form of performance art. The Louisianans are known for putting heat into most of their savory dishes. Easy dishes use Tabasco or powdered cayenne pepper; when cooking from scratch, diced hot peppers are added to the mirepois. Cajun cooking, it should be said, is not typical of most Southern food: The classical techniques and general style derive from French cooking, which seems to owe its best aspects to inheritances from Italy dating back to the paleoculinary epoch. The deepest roots of Cajun cooking thus are Mediterranean, with the attendant abundance of fresh vegetable type things with bright colors. And herbs.
