I’d appreciate having your view on microwave cooking. I am confused as to whether microwaving destroys nutrients. Is it safe, and just a different form of cooking? Some time back, I read an article that caused me to get rid of my microwave as it stated it affected nutrients in food. A: Microwave ovens, their safety and their effect on the nutritional value of food is yet another subject that yields wildly conflicting information. A Spanish study published in the Journal of the Science of Food and Agriculture in 2003 disproves that statement. Researchers from the Spanish scientific research council CEBAS-CSIC found that cooking by microwave is the worst way to preserve at least one key nutrient in vegetables. According to Dr. Cristina Garcia-Viguera, co-author of the study, microwaved broccoli loses 97 percent, 74 percent, and 87 percent of the three major cancer-protecting antioxidant compounds (flavonoids, sinapics and caffeoyl-quinic derivatives). By comparison, steamed broccoli loses 11 percent, percent and 8 percent of the very same antioxidants. In a 1992 article in the journal

Hard-Cooked Eggs Separate yolks and whites of eggs into 2 lightly greased liquid measures or small bowls. Stir yolks with fork. Cover each container with plastic wrap. Cook separately on 50% or 30% power, stirring once or twice, allowing about 20 to 30 seconds per yolk, about 30 seconds to 1 minute per white. Remove when slightly underdone. Let stand, covered, about 2 minutes. Cool long enough to handle comfortably, then chop or chill until ready to chop. Poached Eggs Pour 1/3 cup water into 10-ounce custard cup or small deep bowl. Break and slip in 2 eggs. Gently prick yolks with tip of knife or wooden pick. Cover with plastic wrap. Cook on full power about 1 1/2 to 2 minutes. If necessary, let stand, covered, until whites are completely set and yolks begin to thicken but are not hard, about 1 to 2 minutes. Pour off water to serve in custard cup or lift out with slotted spoon. NOTE: For 4 eggs, use 2/3 cup water in 1-quart bowl or baking dish. Cook 1 1/2 to 3 minutes and let stand as above. Scrambled Eggs In 10-ounce custard cup, beat together 2 eggs, and 2 tablespoons milk with salt and pepper to taste, if desired, until blended. Cook on full power, stirring once or twice, until almost set, about 1 to 1 1/2 minutes. Stir. If necessary, cover with plastic wrap and let stand until eggs are thickened and no visible liquid egg remains, about 1 minute. NOTE: All microwave cooking times are based on a full power output of 600 to 700 watts. For a lower wattage oven, allow more time.

About Microwaves Microwaves are used to detect speeding cars, to send telephone and television communications, and to treat muscle soreness. Industry uses microwaves to dry and cure plywood, to cure rubber and resins, to raise bread and doughnuts, and to cook potato chips. But the most common consumer use of microwave energy is in microwave ovens. That use has soared in the past decade. The Food and Drug Administration (FDA) has regulated the manufacture of microwave ovens since 1971. On the basis of current knowledge about microwave radiation, the Agency believes that ovens that meet the FDA standard and are used according to the manufacturer's instructions are safe for use. Many people overlook the importance of maintaining an appropriate refrigerator temperature. According to surveys, in many households, the refrigerator temperature is above 50 degrees (10 C). Measure the temperature with a thermometer and, if needed, adjust the refrigerator's temperature control dial. A temperature of 41 F (5 C) or less is important because it slows the growth of most bacteria. The temperature won't kill the bacteria, but it will keep them from multiplying, and the fewer there are, the less likely you are to get sick from them. Freezing at zero F (minus 18 C) or less stops bacterial growth (although it won't kill all bacteria already present). Answer B is the best practice; give yourself two points if you picked it. Hot foods should be refrigerated as soon as possible within two hours after cooking. But don't keep the food if it's been standing out for more than two hours. Don't taste test it, either. Even a small amount of contaminated food can cause illness. Date leftovers so they can be used within a safe time. Generally, they remain safe when refrigerated for three to five days. If in doubt, throw it out.

I would like to first thank you for developing Healthy Body Calculator . I think it's great way of giving a clear picture of what my health levels are. I know that I am extremely obese for my size, but what worries me even more that my eating habits are going to reflect on my children . I originally came from Europe where cooking high fat foods are the standards. Even though my children are perfectly proportioned; they already have slightly increased cholesterol levels. When I lived in Europe walking is a way of transportation for your daily activities. Therefore, even though I never had to exercise per say, I was always fit. After we got married and I had my children I decided to go back to college and continue my education. It took up so much of my time that between raising my children and school I had no personal time to maintain my fitness. I also had a back injury in 1985 that is still part of my life. In addition to that I was born with a hip disability that they operated on when I was only 4 and limited my hip movement ability. I have been trying numerous diets and exercise programs, but I had always failed. It is totally frustrating to know that I accomplished so much in my life, but that something that should be so simple and natural as healthy eating and living, I can not even begin to master. I am totally confused as to what to do. I would like to change the life style of my family, but I just don't know how. I don't know what to cook and how to cook to make everyone still eat, but eat healthy. I also have a great time restraint on my hands when the meals got to be quick ( most of the time that is when pizza and McDonald's come in ).

    Microwaves possess three basic characteristics:
  • Just as sunlight shines through a window, microwaves pass right through some materials. Materials such as glass, paper, and plastic are transparent to and generally unaffected by microwaves. Microwaves are reflected by metal surfaces, much as a ball would bounce off a wall. The metal walls of the cooking space actually form a cavity resonator . In other words, the enclosure is designed to resonate the microwaves as they are radiated from the magnetron tube. The principle of resonance may be illustrated using sound waves. When a piano key is struck, it produces sound vibrations or sound waves. Sometimes a note is played on a piano, and an object across the room, perhaps a wineglass, can be heard vibrating and producing the same sound. This is the result of resonance. The resonating characteristics of the wineglass are the same as those of the piano string. Therefore, the wineglass is in tune, or in resonance, with the sound wave produced by the piano string. In the same way, the cooking cavity of a microwave oven is designed to be in "tune" with the resonant characteristics of the microwaves.
      Metal racks are physically proportioned so as not to disrupt the energy pattern.

    Dr. Lee, how is it that the marshmallows cook without the tray or the air getting hot? That's not how a regular oven works.
    That's a good observation, Alex. Here's why microwave ovens selectively make liquid water hot. Most food, even "dry" foods, have water in them.
    So only the food gets warm?
    Yes and no. Other things can get hot by being in physical contact with the hot food.
    You haven't said why the water gets hot. What's special about water?
    The microwave oven generates electromagnetic waves (called microwaves) which makes water move. This motion leads to friction, and friction leads to heating.
