Microwave cooking is one of the most important causes of ill health . It is certainly one of the most ignored. There was a lawsuit in 1991 in Oklahoma. A woman named Norma Levitt had hip surgery, but was killed by a simple blood transfusion when a nurse "warmed the blood for the transfusion in a microwave oven!" Logic suggests that if heating is all there is to microwave cooking, then it doesn't matter how something is heated. Blood for transfusions is routinely warmed, but not in microwave ovens. Does it not therefore follow that microwaving cooking does something quite different? A little evidence of the harm caused by microwaving cooking was given by the University of Minnesota in a radio announcement:
    "Microwaves ... are not recommended for heating a baby's bottle. The bottle may seem cool to the touch, but the liquid inside may become extremely hot and could burn the baby's mouth and throat... Heating the bottle in a microwave can cause slight changes in the milk. In infant formulas, there may be a loss of some vitamins . In expressed breast milk

Many people become frustrated when attempting to cook in the microwave because they do not realize that most recipes for microwave ovens are written for the 700-watt oven (the industry standard). Don't be discouraged if your first attempt is not a glowing success. It takes time to learn how to cook in your microwave oven. Now for the few recipes that I have. One of the first things I did when I started cooking in my microwave, was to buy a microwave cooking book and followed it exactly, until I was comfortable with using the microwave. The second thing I did and this very important, I kept a notebook beside the microwave and as I experimented with different recipes, I marked down the time it took to cook that recipe. Then there was no more guessing! There is no set conversion from conventional to microwave cooking. Remember when you are converting a recipe, use less liquid (almost 1/4 less) because there is less evaporation; and you can almost eliminate using salt. Foods containing liquid, sugar and fat cook faster. So reduce the cooking time by 1/4 of conventional cooking and then gradually increase until you obtain the desired result. Microwave ovens can play an important role at mealtime, but special care must be taken when cooking or reheating meat, poultry, fish, and eggs to make sure they are prepared safely. Microwave ovens can cook unevenly and leave "cold spots," where harmful bacteria can survive. For this reason, it is important to use the following safe microwaving tips to prevent foodborne illness.
Microwave Oven Cooking
  • Arrange food items evenly in a covered dish and add some liquid if needed. Cover the dish with a lid or plastic wrap; loosen or vent the lid or wrap to let steam escape. The moist heat that is created will help destroy harmful bacteria and ensure uniform cooking. Cooking bags also provide safe, even cooking. Do not cook large cuts of meat on high power (100%). Large cuts of meat should be cooked on medium power (50%) for longer periods. This allows heat to reach the center without overcooking outer areas. Stir or rotate food midway through the microwaving time to eliminate cold spots where harmful bacteria can survive, and for more even cooking.

  • Standing Time
    Every microwave recipe has a specified standing time. The dish or casserole must stand on a solid surface to retain heat and finish cooking (DON'T use a cooling rack or trivet). Remember, microwave ovens cook by making water, sugar and fat molecules vibrate, creating heat. Standing time allows heat to spread, cooking to finish, and allows the temperature of the food to stabilize and moderate.
  • Doneness Tests Every microwave oven will cook differently. Hot spots, differences in the stirrer blade (which circulates energy throughout the appliance), and variations in wattage all make a difference in cooking times. Pay careful attention to doneness tests as specified in the recipes. To be extra safe, use an instant read food thermometer to make sure your foods are at

Utensil: 4 cup GLASS (must be glass) measuring cup, Pyrex or equiv.

Microwave on High Power for 7 Minutes, stir and wisk at 4 minutes and again every 30 seconds until you get a nice dark caramel color, don't burn. You may get the color after only 5 to 6 minutes.

Saute on High Power 2 Minutes. Your 4 Cup Glass Measuring Bowl should now be above the 3 Cup Mark and your color should be a nice dark color. You are now ready for the next 2 Recipes. In the case of microwave ovens, the commonly used radio wave frequency is roughly 2,500 megahertz (2.5 gigahertz). Radio waves in this frequency range have an interesting property: they are absorbed by water, fats and sugars. When they are absorbed they are converted directly into atomic motion heat. Microwaves in this frequency range have another interesting property: they are not absorbed by most plastics, glass or ceramics. When I found myself in the situation where my children were grown and my husband was often away on business trips, I eagerly read all the cookbooks about cooking for one that I could find. However, I never found any recipes in those books that I could use because the portions were too large and the food was not appealing. In my search for cooking ideas, I attended a microwave oven demonstration, and there I found my pot of gold at the end of the rainbow. The microwave oven seemed to have all the answers for individual-oriented households, in a working household, or — last but certainly not least — in a cost-conscious household. This magical invention could satisfy individual food needs and keep the kitchen spotlessly clean as well. Shortly after purchasing my microwave, I cleaned up my conventional oven (the housekeeping job I hated the most!) for the last time and have not used or cleaned it since. If you are old enough to remember typing on a typewriter, you'll also remember that you had to go through some adjustments and up some learning curves to adapt to using your computer. With the microwave you have to learn to cook by time and not sight. You should follow recipes exactly until you become accustomed to the differences from conventional cooking. You will learn that the size and shape of utensils is important, and that weighing food produces better results.

The announcement was sponsored by Young Families, the Minnesota Extension Service of the University of Minnesota: "Although microwaves heat food quickly, they are not recommended for heating a baby's bottle," the announcement said. The bottle may seem cool to the touch, but the liquid inside may become extremely hot and could burn the baby's mouth and throat. Also, the buildup of steam in a closed container such as a baby's bottle could cause it to explode. "Heating the bottle in a microwave can cause slight changes in the milk. In infant formulas, there may be a loss of some vitamins. In expressed breast milk, some protective properties may be destroyed." The report went on. "Warming a bottle by holding it under tap water or by setting it in a bowl of warm water, then testing it on your wrist before feeding, may take a few minutes longer, but it is much safer."

Of course, asking "Who Invented Microwaves?" is like asking who invented electricity. Microwave energy is a natural phenomenon that occurs when electric current flows through a conductor. Microwaves are a form of electromagnetic radiation that is very similar to sunlight and radio waves.
A Brief History of the Microwave Oven
Like many of today's great inventions, the microwave oven was a by-product of another technology. It was during a radar-related research project around 1946 that Dr. Percy Spencer, a self-taught engineer with the Raytheon Corporation, noticed something very unusual. He was testing a new vacuum tube called a magnetron (we are searching for a picture of an actual 1946 magnetron), when he discovered that the candy bar in his pocket had melted. This intrigued Dr. Spencer, so he tried another experiment. This time he placed some popcorn kernels near the tube and, perhaps standing a little farther away, he watched with an inventive sparkle in his eye as the popcorn sputtered, cracked and popped all over his lab. The next morning, Scientist Spencer decided to put the magnetron tube near an egg. Spencer was joined by a curious colleague, and they both watched as the egg began to tremor and quake. The rapid temperature rise within the egg was causing tremendous internal pressure. Evidently the curious colleague moved in for a closer look just as the egg exploded and splattered hot yolk all over his amazed face. The face of Spencer lit up with a logical scientific conclusion: the melted candy bar, the popcorn, and now the exploding egg, were all attributable to exposure to low-density microwave energy.
