Cooking Meat Safely
USE A MEAT THERMOMETER
One of the critical factors in controlling bacteria in food is controlling temperature. Pathogenic microorganisms grow very slowly at low temperatures multiply rapidly in mid-range temperatures, and are killed at high temperatures. For safety, food must be cooked thoroughly. It is essential to use a thermometer when cooking meat to take the guesswork out of cooking and to assure that a safe temperature has been reached to destroy harmful bacteria such as salmonella and E. coli Using a thermometer is the only reliable way to ensure safety and to determine the "doneness" of most foods. To be safe, a product must be cooked to an internal temperature high enough to destroy any harmful bacteria that may have been in the food. Recent research has shown that color and texture changes are not reliable indicators to ensure that all bacteria have been destroyed. For example, ground beef may turn brown before it has reached a temperature at which bacteria are destroyed. A consumer preparing hamburger patties and depending on visual signs to determine safety by using the brown color as an indicator is taking a chance that pathogenic microorganisms may survive. A hamburger cooked to 160 °F, regardless of color, is safe. The temperature at which different pathogenic bacteria are destroyed varies, as does the "doneness" temperature for different meat and poultry products. A roast or steak that has never been pierced in any way during slaughter, processing or preparation and has reached an internal temperature of 145 °F is safe to eat. A consumer looking for a visual sign of doneness might continue cooking it until it was overcooked and dry. A consumer using a thermometer can feel reassured the food has reached a safe temperature.

To help you weed through the confusion, About.com has created a site called Home Cooking. Home Cooking is set up to be a forum for food enthusiasts, from gourmet to home cooks. It features weekly focuses, a 24-hour chat room, and a bulletin board to post recipes and share comments. In addition to the weekly focuses, Home Cooking includes an extensive list of cooking-related subjects with past articles and related recipes organized together. Its main downside is the alphabetic organization rather than a topic-based hierarchy. The Cardboard Box Oven
A cardboard box will make an oven and it works just as well as your oven at home! There are different ways to make a cardboard box oven.
1. The open top Box Oven
Cut off the flaps so that the box has four straight sides and bottom. The bottom of the box will be the top of the oven. Cover the box inside COMPLETELY with foil, placing the shiny side out. To use the oven, place the pan with food to be baked on a footed grill over the lit charcoal briquets. The grill should be raised about ten inches above the charcoal. Set the cardboard oven over the food and charcoal. Prop up one end of the oven with a pebble to provide the air charcoal needs to burn - or cut air vents along the lower edge of the oven.
2. The copy paper Box Oven
The cardboard boxes that hold reems of paper, 10 reems of 8 1/2 by 11 inch paper, or 10 reems of 8 1/2 by 14 inch paper, will make very nice box ovens. Line the inside of the box and lid with aluminum foil. Use a sponge to dab some Elmer's glue around the inside and cover to hold the foil in place. Make a couple holes in the cover to let the combustion gases out, and make a few holes around the sides near the bottom, to let oxygen in. Make a tray to hold the charcoal using one or two metal pie plates. You can either make feet for a single pie plate using nuts and bolts, or bolt two pie plates together bottom to bottom. Cut a couple coat hangers to make a rack to hold up the cooking pan. Poke the straight pieces of coat hanger through once side, and into the other. Two pieces will usually do fine..
