Ingredients 1 cup sugar
1 extra large egg
12 tbsp unsalted butter in 12 pieces
2 cups flour
3 oz almonds lightly toasted and coarsely chopped
Anise Hyssop Drop Cookies
Ingredients 1/3 cup anise hyssop florets, removed from stem
3 eggs
1 cup sugar 2 cups flour 1 tsp baking powder Calendula Drop Cookies Ingredients 6 to 8 fresh calendula blossoms grated rind of 2 oranges 2 tbsp orange juice concentrate at room temp 1 tsp vanilla 2 eggs, lightly beaten 2 cups flour 1 cup almond halves Cardamom Cookies Ingredients 2 cups butter 1 tsp ground cardamom 1/8 tsp salt 1 cup chopped walnuts Chocolate-Mint/Chip Cookies Sift together: 1 tsp baking soda 1 tsp salt 1 tbsp powdered chocolate mint (use a coffee mill to grind dried mint) In a large bowl combine: 1 tsp vanilla Beat butter, shortening, sugars and vanilla till creamy. Beat in 2 eggs . Add flour mixture and mix well. Then stir in: 2 cups (12 oz) semi-sweet chocolate bits 1 cup chopped walnuts (optional) Double Chocolate variation: Using the above recipe, combine 6 tbsp of cocoa powder and 2 tbsp of vegetable oil in a small container. Blend thoroughly. When the eggs are beaten in, add the cocoa mixture and beat in thoroughly. Continue on with the recipe.

1 cup plus 1-1/2 Tbsp all-purpose flour
1/3 cup lavender sugar (recipe below)
Pinch of salt
4 Tbsp butter
2-1/2 Tbsp sweet white wine
12 leaves of fresh lavender , chopped finely
Instructions
Sift the flour, all but 1 tablespoon of the sugar, and the salt into a bowl.  Rub in the butter until the mixture resembles bread crumbs. Mix a well in the center and add the wine and the lavender leaves and stir in gently. Leave the mixture for 10 minutes, stirring now and again, by which time it will have bonded together, then gather together to make a soft dough. Roll out the dough on a floured board about 1/8 inch thick and use a serated pasta wheel to cut out small strips, about 2 inches by 1 inch. Place on a buttered baking tray, giving one half of each strip a twist, as you do so to make the cookies look just like little bows. Bake at 375 degrees F for about 6 to 8 minutes or until edges are just turning brown. Cool on a wire rack and sprinkle with the remaining sugar. Lavender Sugar
Mix 2 tablespoons of spikes of fresh lavender flowers or 1 tablespoon of dried lavender flowers with 1 cup of superfine sugar. Select a glass jar and make alternate layers of sugar and lavender flowers until the jar is full. Cover tightly and leave in a warm, dry room for 1 to 2 weeks. Shake the jar through a sieve before use. This method is similar to the conventional method you use to make vanilla sugar.

Forming a cookie dough into a round log means that your cookies
will all be the same size.
Place the dough on a large rectangular piece of waxed or parchment paper.
Spread it out in an even mound across the sheet, leaving space at both ends. Fold the paper over and place it on a baking sheet.
Grip the paper and use the long edge of the baking sheet to press the dough into a uniform log shape. Keep the pressure even and the dough will spread out beautifully.
When the dough reaches the desired shape, roll up the log and twist the ends of the paper like a piece of salt-water taffy. Refrigerate or freeze the log until ready to slice. If freezing for the long haul, don't forget to write the date on the paper. Instructor: Jill Novatt

Now, remember that chocolate-chip cookies are supposed to be a nice, relaxing kind of food, so the first thing you'll want to do to make them is to go somewhere where you can kick back and relax. How to make cookies
If you've spent all day programming, it's important to make sure that you have a break and some food. If you've been jibbling about with Java too much, you may find it hard to read normal cooking instructions, so here's something you may understand in order to whip up a quick tasty treat. This is version 3 of the recipe, tried and tested by many fellow jibblers :)

Buy the Ingredients
All good cookies need ingredients. This may require you to go outside in order to buy them. Cookies make ideal food for programmers, as they are full of unhealthy things like butter, sugar and chocolate. Note the ordering of the ingredients, as this will become important later on.
Preheat oven
Unlike computers, when you press the buttons on an oven, it may take a few minutes for it to actually do what you've told it to. This is commonly referred to as "preheating" and may take a bit longer than an AMD Athlon without a heatsink. If something interrupts this process, then you're a bit shafted, as the name "cookie" implies that it must be cooked.
Combine ingredients
I cheat and use a bread maker to mix it all up within 6 minutes :) The ingredients are no good on their own. We have to mix them up first. This is essential to ensure that one of the cookies doesn't look like a fried egg when it comes out of the oven. Try mixing everything up until you achieve a nice, consistent dough, but leave the egg and chocolate chips until last. Try not to eat too many, they'll be better in the cookies, trust me.

INGREDIENTS:
  • 2 1/2 (1 ounce) squares unsweetened chocolate 1/2 cup butter 2 cups all-purpose flour 1/2 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt 1 1/4 cups white sugar 2 eggs 1 teaspoon vanilla extract 2/3 cup sour cream 2 cups semisweet chocolate chips
DIRECTIONS:
  • Preheat oven to 375 degrees F (190 degrees C). In the microwave or over a double boiler, melt unsweetened chocolate and butter together, stirring occasionally until smooth. Sift together flour, baking soda, baking powder, and salt; set aside. In a medium bowl, beat sugar, eggs, and vanilla until light. Mix in the chocolate mixture until well blended. Stir in the sifted ingredients alternately with sour cream, then mix in chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.

If you have any favorite recipes you'd like to share, especially desserts, please send them to me. Thank you.) There are two things that bother me about virtually every cookbook I've read: they use the inaccurate method of volume measurement and the don't discuss the effects of varying ingredients. A cup of flour can weigh anywhere from 120 grams to 180 grams depending on the type of flour and how it was scooped. Use a combination yielding a 180-gram cup when you need a 120-gram cup and your recipe will come out too dry and probably fail. The answer is to get a good digital scale (one accurate to at least two grams they run about $50.00 but last forever) and measure your ingredients by weight. This eliminates the problem of compaction varying the amount of ingredient scooped. The one exception to this is when very small ingredients are involved such at salt, baking powder, or vanilla. Kitchen scales aren't accurate at small weights so it's best to use a good set of measuring spoons for them. Now consider a recipe you like but want to change it to suit your own taste preferences. What modifications produce what effects? Cookbooks never mention these sorts of things. They'll tell you how to change blueberry muffins into cranberry muffins by switching the can labeled "blueberries" for one labeled "cranberries" but that's about it. What people need to know is how changing the amounts and types of the fundamental ingredients effects the finished product. The following recipes try to address some of those questions. In so doing they give someone reading them a feel for what corrections to make to modify the recipes to achieve the desired result.

  • First, always preheat your oven and position oven racks (normally the top shelves, unless otherwise instructed) 10 to 15 minutes before you need to bake. To be sure of your oven's temperature accuracy, try keeping an oven thermometer in the oven at all times and make adjustments for the temperature accordingly.
  • Butter should always be used at room temperature or slightly. Cold, hard butter will not cream as easily when you incorporate it with the sugar resulting in flat, so-so cookies.

  • When making bar cookies, pay close attention to the size of the pan called for in each recipe. Variations can throw off baking times and could affect the texture too. For instance, if the pan is too large the dough may dry out and the bars will be too thin. While if the pan is too small the bars may become gummy in the center or more cakey than they should be.
  • With the exception of bar cookies made with a delicate shortbread base (like lemon bars) you can line the baking pan with heavy duty aluminum foil to insure easier removal later. For best results be sure to extend the foil several inches over the pan leaving enough overhang on the two opposing ends to use as handles. The easiest way to shape the foil is to turn the pan upside down, and then smooth the foil around its contours until the right shape is achieved.
