With the hectic holidays just around the corner, Ontario inns are opening up their kitchens to teach festive food preparation
By KARAN SMITH Saturday, November 6, 2004 Page TRAVEL EDITOR a3=true;aW=300;aH=250;sBoxAd=true; BAYFIELD, ONT. It's early on an October Saturday morning and I'm peeling veins out of a buttery duck's liver in the kitchen of Jean Jacques Chappuis, the chef at the Little Inn at Bayfield. He's teaching my husband and me how to prepare foie gras terrine as a simple yet impressive (not to mention fatty) Christmas treat. We're decked out in chefs' aprons and hats, and wearing plastic gloves lest the expensive fat melt away between our fingers. It's a long way from my last holiday season. My morning in the kitchen at this historic inn on the edge of Lake Huron is a sampling of what the Little Inn and other Ontario getaways in the Savour Ontario culinary alliance are offering as crash courses to pre-Christmas cuisine. Picton's Waring House Inn, Conference Centre and Cookery School for instance, is hosting a Singles Gourmet Kitchen Party to teach how to make festive dips and breads. (They also teach how to debone a turkey with the skin intact and how to stuff it.)
