SPAIN
"Feliz Navidad"
In Spain, the Christmas holiday season is full of the usual Christmas festivities, but there is one tradition, not at all common elsewhere. Named "Hogueras" (bonfires), this tradition originated long before Christmas itself. It is the observance of the winter solstice, the shortest day of the year and the beginning of winter. It is characterized by people jumping over fires as a symbolic protection against illness. This fire-jumping can be seen primarily in Granada and Jaen. The more common traditions include incredibly elaborate "Nacimiento" (nativity scenes), Christmas trees, and remarkable Christmas markets scattered among villages and cities with piles of fruits, flowers, marzipan and other sweets, candles, decorations and hand-made Christmas gifts. Often, as the Christmas Eve stars appear in the heavens, tiny oil lamps are lighted, warming village windows. The crowds at the Christmas market thin as shoppers return to prepare for the coming meal. The Christmas Eve gaiety is interrupted at midnight be the ringing of bells calling the families to "La Misa Del Gallo" (The Mass of the Rooster). The most beautiful of these candlelight services is held at the monastery of Montserrat, high in the mountain near Barcelona, which is highlighted by a boy's choir describes as performing the Mass in "one pure voice." Christmas dinner is never eaten until after midnight. It is a family feast, and often highlighted with "Pavo Trufado de Navidad" (Christmas turkey with truffles; truffles are a mushroom-like delicacy found underground). After the meal, family members gather around the Christmas tree and sing Christmas carols and hymns of Christendom. The rejoicing continues through the wee hours of the morning. An old Spanish verse says...

AUSTRIA
"Frohliche Weihnachton"
Christmas is undoubtedly the most important holiday in Austria. As in other European nations, December 6th is the day Saint Nicholas, the giver of gifts, makes his rounds. Arrayed in a glittering Bishops robe and accompanied by his devilish assistant, Knecht Rupnecht, he can occasionally be seen roaming the streets giving sweets and apples to good children while his companion playfully beckons "little sinners" to feel the string of his golden rod. On December 24th, when the city is frantic with last minute shoppers, the countryside is a refuge for quiet traditions. Farmers chalk the initials of the Three Wise Men on the archway of the stable door; C for Caspar, M for Melchoir, and B for Balthazar, to protect the heard from sickness in the coming year. Christmas trees are lit on this day and in many villages "shelter-seekers" plod through deep snow from farm to farm re-enacting the plight of Mary and Joseph as they sought shelter on the eve of Christ's birth. In the snow-covered Alps, families descend from their mountain homes to the valley below, illuminating the night with torches held high to light their way in the darkness. Carolers gather in church towers and village squares to guide the people to Christmas services with their melodies. All shops, theaters and concert halls close their doors for this is an evening spent with only with family.

Thanks for joining me online today. I've just come from judging a Christmas cookie contest so I'm all sugared up and ready to answer your questions. Fire away! moderatorsteve Here we go. nomoremarthastewart My soninlaw doesn't want me to make peanut butter cookies for them for christmas because they have a newborn and he says peanut butter is an allergy risk to infants. He's crazy, right? What other ingredients are unsafe for infants or toddlers? JanetKeeler Many doctors advise young children not to eat peanuts because of allergy concerns. So, no, he's not crazy. There are not cookies suitable for infants, mostly because they don't have a lot of teeth to chew them. Sugar cookies or even chocolate chip cookies would be great for toddlers.

The best memories come from the good times in life. One of my fondest memories was visits to Grandma's farm in the country at Christmas time. More specifically Grandma's cookie table, always piled high with at least a dozen different goodies. Once a year we were allowed to pick, and choose, and eat all we wanted. (at least that's what Grandma said...) Enjoy these time treasured recipes and share them with your family. Remember! Grandma said they can have all they want... It's Christmas!

Hanukkah Special "A Great Miracle Happened There" Airs Sunday, December 12 at 6PM on 93.9 FM In a conversation between Rabbi Ismar Schorsch and host Larry Josephson, Rabbi Schorsch explains that Hanukkah is really the story of a civil war between secular Jews, who identified with their Greek rulers, and a group of zealots, the Maccabees. The miracle of the oil (a day's supply burned for eight days) occurs at the end of the story. It is not the main story. Few secular Jews—and even fewer non-Jews—are aware that the real story of Hanukkah, was a minor holiday until Jews migrated to America in great numbers around the turn of the 20th century. After World War II, Hanukkah became "the Jewish Christmas." Frank's Place: The 34rd Annual Jonathan Schwartz Christmas Show Airs Sunday, December 19 at 12PM on 93.9 FM

The Web can be your recipe box, whether it's Christmas, Hanukkah or Kwanzaa. First, Holiday Cooking Links from World in Your Kitchen ( http://members.aol.com/Isis220/WorldKitch/holidays.html ) features a Holiday Cooking Forum- "a message board for exchanging and requesting recipes and ideas for holidays all over the world," a Holiday Recipe Exchange and a valuable All Things Turkey area with lots of links to pages that will help you use up those leftovers. The Christmas International section provides a virtual buffet to links to other Christmas traditions around the world. May 10, 2005 White Asparagus
My sister came to stay with me last week and as a surprise she brought me four pounds of white asparagus! It was the best thing she could have brought me and it made me realise how much I miss the asparagus season (early May until early June - of course this is weather dependant!) And what better occasion of having the asparagus with friends and neighbours at a big BBQ in our garden on the Bankholiday-Monday? We decided to have it as salad, so I peeled the asparagus, cooked it in boiling water (with salt, sugar and butter) and my sister made a simple vinaigrette (oil, vinegar, salt, sugar, pepper and chopped chives) for it. There is just no better way to enjoy white asparagus!

December 26, 2004 Gingerbread Stuffing
Oh, the saga of this stuffing. Christmas Eve day, Antoine headed to the shops to get what I needed to make various things for that evening's meal and Christmas Day. I was very keen to make Nigella's gingerbread stuffing , even though Antoine's mother was making chestnut stuffing, just because it sounded good. I was conscious of the fact that the loaf of gingerbread I needed - like a loaf of gingerbread cake, not like a stack of gingerbread men - might not be easy to come by, but I was hopeful. Very long story made somewhat shorter, I didn't get that gingerbread cake. When Antoine's mother called to talk about something else, I pouted to her on the phone about not being able to bring the anticipated gingerbread stuffing. She, of course, did not mind in the slightest. But, being the kind soul she is, immediately went and found a recipe for gingerbread cake - and made the cake for me, right that second, so that I could make the stuffing. "Found it's easy - making gb now" read the text message that arrived on my mobile phone. I at once felt ashamed for whinging and grateful for having such a star shining on me.
