In 600 A.D. the Mayans migrated into the northern regions of South America, establishing the earliest known cocoa plantations in the Yucatan. It has been argued that the Mayans had been familiar with cocoa several centuries prior to this date. They considered it a valuable commodity, used both as a means of payment and as units of calculation. Mayans and Aztecs took beans from the "cacao" tree and made a drink they called "xocoatl." Aztec Indian legend held that cacao seeds had been brought from Paradise and that wisdom and power came from eating the fruit of the cacao tree. The word "chocolate" is said to derive from the Mayan "xocoatl"; cocoa from the Aztec "cacahuatl." The Mexican Indian word "chocolate" comes from a combination of the terms choco ("foam") and atl ("water"); early chocolate was only consumed in beverage form. Christopher Columbus is said to have brought back cacao beans to King Ferdinand from his fourth visit to the New World, but they were overlooked in favor of the many other treasures he had found. Chocolate was first noted in 1519 when Spanish explorer Hernando Cortez visited the court of Emperor Montezuma of Mexico and took back three treasure chests of beans back to Spain.. American historian William Hickling's History of the Conquest of Mexico (1838) reports that Montezuma" took no other beverage than the chocolatl, a potation of chocolate, flavoured with vanilla and spices, and so prepared as to be reduced to a froth of the consistency of honey, which gradually dissolved in the mouth and was taken cold." The fact that Montezuma consumed his "chocolatl" in goblets before entering his harem led to the belief that it was an aphrodisiac.

INGREDIENTS:
  • 2 1/2 (1 ounce) squares unsweetened chocolate 1/2 cup butter 2 cups all-purpose flour 1/2 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt 1 1/4 cups white sugar 2 eggs 1 teaspoon vanilla extract 2/3 cup sour cream 2 cups semisweet chocolate chips
DIRECTIONS:
  • Preheat oven to 375 degrees F (190 degrees C). In the microwave or over a double boiler, melt unsweetened chocolate and butter together, stirring occasionally until smooth. Sift together flour, baking soda, baking powder, and salt; set aside. In a medium bowl, beat sugar, eggs, and vanilla until light. Mix in the chocolate mixture until well blended. Stir in the sifted ingredients alternately with sour cream, then mix in chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.

    Preparation In a large heavy stainless steel frying pan over medium heat, melt 1 cup of the sugar. Do not use a spoon, instead swirl the pan to melt the sugar uniformly. Cook until the sugar starts to turn golden brown or caramel color. Immediately remove from the heat and pour the mixture into a 9-inch round cake pan. Turn the pan to coat the bottom and sides. Set aside.
    Crack the eggs into a bowl. Add 3/4 cup sugar to the eggs and whisk.
    In the top of a double boiler, melt the chocolate. In a large saucepan, scald the milk and add the chocolate, whisking constantly.
    Add the chocolate and milk slowly to the egg and sugar mixture while whisking. This gradual process is called tempering which prevents the eggs from cooking.
    In a bowl, stir together the amaretti crumbs, almonds, and flour. Add to the chocolate mixture and whisk together until mixed.

    Mexican Hot Chocolate Recipe from www.foodnetwork.com 3 ounces (tablet or cone) Mexican chocolate or bittersweet chocolate 3 cups milk 2 tablespoons sugar Pinch salt Miniature marshmallows, for serving 6 cinnamon sticks (preferably Mexican canela), for serving USING a sharp knife, break up the chocolate into smaller pieces. In a saucepan, combine the chopped chocolate, milk, sugar, and salt over medium-low flame. Heat and stir until the chocolate is completely melted and milk is very hot, but not boiling, about 10 minutes. REMOVE from the heat and froth the chocolate milk with a mini whisk or molinillo. Sacher Sponge: Place 360g of butter, 360g of dark chocolate and 180g of sugar into a bowl and stir until creamy. Add 330g of egg yolks and stir. Combine mix with 510g of egg white and 420g of sugar. Add flour and mix before placing into 56 by 36cm frame and bake for 60 minutes at 180C. Bake another five minutes at 200C. 2. Feuilletine: Combine 350g of Praline paste, 350g of milk chocolate and 250g of crunchy almonds and mix. 3. Equatorial Mousse: Place 250g of milk with 100g of brown sugar and bring to a boil. Add 9g of gelatin. Put 400g of milk chocolate into a mixer and finely grind. Add this to 10g of brown rum and combine into mixture. Add 375g of whipped cream when batch reaches 30C. 4. Ivory Mousse: Place 500g of milk with 20g of vanilla sugar and one vanilla bean. Bring to a boil before adding 18g of gelatin. Put 800g of white chocolate into a mixer and finely grind. Add this to the mixture and allow it to reach 30C before adding 750g of whipped cream. 5. Finale: Place Sacher sponge into a frame and spread the Feuilletine on top. Let dry before pouring the mousse. Cool in deep freezer. Sprinkle with chocolate for decoration. - KIM HEE-SUN

    This is a very moist and delicious chocolate cake. The "secret ingredient" of beets is what makes this cake so moist. 1 can (15 oz.) whole beets, drained (save juice)
    1 1/4 cups granulated sugar
    1 cup oil
    1/2 cup juice from beets
    3 eggs
    1 teaspoon vanilla
    1/4 teaspoon salt
    1 1/2 teaspoon baking soda 1 3/4 cups all-purpose flour 3 squares (1 oz. each) unsweetened chocolate, melted Sift together salt, baking soda, and flour. Set aside. Place beets in blender jar and puree. Add sugar, oil, and beet juice to beets and blend. Add eggs and vanilla. Blend well. Pour the beet mixture into a mixing bowl and add the dry ingredients. Mix well on medium speed for approximately one minute. Stir in melted chocolate. Pour batter into two greased and floured 8- or 9-inch round cake pans. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted comes out clean. Let cool. Frost with your favorite chocolate frosting and decorate top with chocolate curls if desired. To make chocolate curls: Melt semi-sweet chocolate chips or semi-sweet baking squares in the microwave. Invert a baking sheet and spread the chocolate in a thin layer over the sheet. Let set in refrigerator until chocolate is set but not hard. Take a spatula and scrape the chocolate from the pan to create a curl. The curls will be as wide as the spatula used. If the chocolate breaks let it soften at room temperature. If it is too soft, return to the refrigerator for a few more minutes. When you have the right consistency you will be able to create beautiful chocolate curls. Place a pile of curls on the cake and lightly dust with powdered sugar.

    Cooking with Chocolate

    For a tasty treat at movie time, drizzle melted chocolate over plain popcorn. Stir the popcorn and let it cool for about 30 minutes.
    Field reporter Joe Lovitt visits with cooking expert Claudia Sutherland, who shares some ideas for cooking with chocolate.
    • White chocolate is more difficult to work with when making candies. Be careful to closely monitor the heat, as overheating white chocolate will cause it to seize up.
    • Always look for cocoa butter on the ingredient list when buying chocolate candies to cook with. Semi-sweet chocolate chips work best.
    • Begin by melting chocolate in a double boiler. Despite the name, do not heat the water in the bottom of the boiler to the boiling point. This will scorch the chocolate. Use hotbut not boilingwater.
    • Add a few tablespoons of vegetable oil to the chocolate to give it a nice shiny coat.
    • A microwave is another good way to melt chocolate, and it's easier than using a double boiler. Place chocolate chips in a glass dish and top with two or three tablespoons of vegetable oil. Set the microwave to defrost, or 30 percent power, and heat the chocolate for two minutes. Stir and heat until melted, stirring every two minutes and keeping a close watch on the chocolate.
