EASY CHOCOLATE ECLAIR DESSERT 2/3 box graham crackers 2 sm. boxes French vanilla pudding 4 c. milk 2 (8 oz.) Cool Whip 1 container Ready-to-Spread chocolate sour cream frosting Place a layer of graham crackers in a 9 x 13-inch pan. Make pudding following instructions on box using milk. Let stand for 5 minutes. Add Cool Whip fold in till completely mixed. Spread 1/2 the mixture on crackers. Place another layer of graham crackers on followed by the rest of the pudding mixture. Open frosting and heat in microwave on high for 25 seconds. Place on top of pudding, by dropping balls of it all over and then carefully spreading it out. CHOCOLATE PECAN PIE BARS

Couscous Bottom:
2-1/4 cups water
1-1/4 cup Sucanat
1/4 cup cocoa
1 cup couscous
1 Tbsp vanilla
Chocolate Cream Topping:
10 ounces (1-1/2 cup) dairy-free chocolate chips
2 boxes firm silken tofu 3 Tbsp maple syrup Instructions In a medium saucepan combine water, cocoa, sucanat and couscous. Bring to a simmer, stirring occasionally and cook until thickened (10 to 15 minutes). Add vanilla and stir. Spread mixture into a 9-inch springform pan (one that has a removable side). Melt chocolate chips in a double boiler. If unavailable, add water to a saucepan and place a metal bowl over the steam to create a homemade version. Melting chocolate directly over an electric stove will not work the chocolate will crystalize. Transfer chocolate to a blender, add tofu, and blend. Add maple syrup and blend again until smooth. Pour filling evenly over couscous. Refrigerate for at least 2 hours. Serve cold. Top with fresh fruit such as sliced strawberries or kiwi.

White chocolate originates from the cocoa (cacao) plant, but it is not 'chocolate.' According to the FDA, to be called 'chocolate' a product must contain chocolate liquor, which is what gives it the biter intense chocolate flavor (and color) to dark and milk chocolates. White chocolate contains cocoa butter, milk solids, sugar, lecithin and flavorings (usually including vanilla). Cocoa butter is the fat from cocoa beans, extracted from the cocoa beans during the process of making chocolate and cocoa powder. Cocoa butter has very little 'chocolate' flavor. Cocoa butter is one of the ingredients used to make real chocolate, it is gives chocolate the ability to remain solid at room temperature, yet melt easily in the mouth. Cocoa butter is one of the most stable fats known, containing natural antioxidants that prevent rancidity and give it a storage life of 2 to 5 years. It is used for its smooth texture in foods (including chocolate) and in cosmetics and soaps.

Cooking Gardening Holidays ... Search Sand Art Brownies This is a recipe for brownies to give as a Christmas gift....or whenever. Mix ingredients in a wide mouth quart size jar, just like sand art that kids make today. Add to wide mouth quart jar in this order
  • 3/4 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 + 1/8 cup flour
  • 1/3 cup cocoa
  • 1/2 cup flour
  • 2/3 cup brown sugar
  • 2/3 cup sugar
  • 1/2 cup Choc. Chips
  • 1/2 cup Vanilla Chips
  • 1/2 cup nuts
This should pack nicely into jar. Include a decorative tag with instructions for making the brownies: Combine contents of jar with:
  • 1tsp vanilla 2/3 cup vegetable oil 3 eggs
