Q: Can you explain the different types of chocolate used for baking? A: Not so long ago, the best way to ensure getting good chocolate was to buy a European brand with a high cocoa-butter content, but American makers have moved beyond milk chocolate into some world-class products. "First of all," says pastry chef Nick Malgieri, a guest host on Food Network and director of the Pastry and Baking Arts programs at the Institute of Culinary Education, "Use chocolate for the purpose for which it was intended. Don't try to make a truffle center with baking chocolate or to coat a mold with chocolate that isn't fluid enough." Here's a guide to help find the right chocolate for the job. Baking Chocolate : Unless the chocolate is from a specialty purveyor who specifies that it's for "baking and eating," this type is used for baking items such as brownies, cakes and cookies. Although baking chocolate has an intense flavor, it also may have a lower cocoa-butter content and a less smooth texture than other chocolates, so save it strictly for recipes where it will be combined with other ingredients. Cocoa Powder : If cocoa powder is treated with an alkali to smooth the flavor, it is called "Dutch process" cocoa. Many cooks prefer Dutch process cocoa for all cooking purposes, including baking, frostings and icings, sauces and chocolate beverages. You also can use cocoa powder in place of baking chocolate by melting one tablespoon unsalted butter with three tablespoons of cocoa for each ounce of baking chocolate required. If you only have nonalkalized cocoa, Nick Malgieri recommends adding a tiny pinch of baking soda to help smooth the flavor.

My specialty - cheesecakes. When I am asked to bring a dessert somewhere, chances are it will be a cheesecake. When my aunt sees a cheesecake recipe in a magazine she cuts it out for me. The classic cheesecake is a plain baked cheesecake, often served with a fruit topping, but it doesn't stop there. There are an endless variety of cheesecakes, and even unbaked chilled cheescake desserts. Cheesecakes are pretty easy to make, but are very elegant desserts. To keep the top from cracking after baking, run a knife around the outside of the crust to loosen it from the side of the pan. (If it cracks anyway, just top it with a nice garnish before serving, and no one will notice!) Try to make your cheesecake the day before serving - the flavours will have time to blend and mellow overnight. And cheesecakes keep well (if they have a chance) for two or three days at least. The baked variety can also be made a couple weeks in advance and frozen.

1/4 cup Water 1/2 cup Oil 2 Eggs 20 Caramels, unwrapped 3 Tbsp Milk 1/2 cup Semi-Sweet Chocolate Chips 1/2 cup Chopped Pecans Preheat oven to 350 degrees F. Grease bottom only of a 13x9x2 inch pan. In a large bowl, combine brownie mix, water, oil, and eggs; beat 50 strokes with a wooden spoon. Spread in greased pan. Bake in 350 degree oven for 31 to 33 minutes. Meanwhile, in small saucepan over medium-low heat, melt caramels with milk, stirring occasionally until smooth. Keep warm.

To do this, add 1-2 tb of vegetable shortening (never use butter as it contains moisture which will cause the chocolate stiffen even more!) to the chocolate and stir vigorously. You can also melt chocolate directly over very low heat in a heavy gauge saucepan, but you must watch the mixture carefully. HOW TO MAKE CHOCOLATE CURLS Use a vegetable peeler with a long narrow blade and a chunk or bar of chocolate. Warm chocolate and blade slightly. Be sure your peeler is absolutely dry. Draw the peeler along the smooth surface of the chocolate.

Could any one ingredient be more glorious? Doubtful. Chocolate inspires nearly everyone, from the youngest child to the oldest grandfather. You'll undoubtedly be using this most Fabulous Food often in your cooking. Here's what you need to know to get the most from the chocolate experience. Chocolate comes in many forms: unsweetened, semi-sweet, bittersweet, milk chocolate and white chocolate (which technically isn't chocolate at all, but does have similarities so we'll include it here as well). Chocolate is unique among vegetables in that its fat (cocoa butter) is solid at room temperature. Since this fat melts at mouth temperature, chocolate is an excellent flavor conductor. Cocoa powder is made by separating most of the cocoa butter out of the liquor. Similar to coffee, cacao beans are dried and roasted before being hulled. "Chocolate liquor", made from the roasted, ground cocoa bean nibs (the meat of the cacao bean) is what makes chocolate chocolate. Thus, unsweetened chocolate is pure chocolate liquor and about 50% cocoa butter. Bittersweet chocolate blends at least 35% liquor with as much as 50% with cocoa butter, sugar and vanilla. Semisweet chocolate has the same ingredients as bittersweet with the addition of more sugar. Milk chocolate, which contains about 10% chocolate liquor, takes the process a step further by adding about 12% milk solids.
